We're staying at the Shibuya Excel and I believe there's buses going from the Mark City there to the Gotemba Mall but the timings don't work for us.
Can we take the bus one way and take a taxi back? Is it possible to catch a taxi at the Mall itself? Around how much would that cost?
It's very unlikely that you'd save enough on your outlet mall purchases to cover the cost of a taxi between Gotemba and Tokyo.

What mode of transport is possible to take that does not require advance booking (incase we take longer at the outlet)? From Gotemba to Tokyo.
Check the highway bus back to Shinjuku.

Unless you are going to Gotemba for the view of Mt. Fuji from its parking lot, you might consider outlet malls that are closer to Tokyo. Check each mall's website for the number of stores and the store list before you make your choice.

I saw theres a Highwaybus bus that goes from Shibuya Mark City to Gotemba twice a day. Is that a reliable service? Says itll take around 2 hours.
There are many departures going to Shinjuku and Tokyo station, in addition to the 2 departures to Shibuya.
A taxi from Shinjuku or Tokyo station to Shibuya Mark City is a lot cheaper.
If you are going to Gotemba just for the outlet, it's not a great choice. Shops are located on a hilly area and spread out over different wings so you are wasted a lot of time walking between places. Kisarazu (about 1 hour by bus) is the better outlet to visit.
Gotemba does have a good Mt. Fuji view on clear days.
