I will be flying from Kochi (COK) to arrive at Delhi airport (DEL) at 2.25 a.m. on January 1. I have a flight from DEL to Amsterdam leaving at 3.20 a.m. Will I be able to make the Amsterdam flight ok? Thank you.

A 55 minute window is simply unrealistic when you factor in the size of the airport, having to do exit through immigration and the fact your Amsterdam flight is likely to be boarding as you wait in the queue.
Change flights.
No possible ,even if airline sold ticket and then rescheduled the flight and got this layover ,minimum connection time for AirIndia for domestic to international is 90 min. For separate booking even before lading at Delhi you would missed the flight as check in counter closes 75 min before departure.
