"Melmi-guksu" (냉모밀국수) is a noodle dish that evokes both Japanese soba and Korean cold noodles. It is made from buckwheat flour, a grain.
The noodles are softer and less chewy than soba, and are served in a crunchy soup flavored with dried sardine stock, similar to what is called "bukkake" soba in Japan. The soup has a sweet and gentle flavor.
It is topped with deep-fried chicken similar to toriten or karaage, grated daikon radish, and green onions. A slice of lemon adds a refreshing flavor to the soup.
These noodles have a refreshing taste that is perfect for summer, and you can also enjoy the flavor of the soup. It was just right for filling your stomach before boarding, not too heavy.
