Arrogant, ridiculous place - will never visit again

This was a shockingly awful experience. On the website it says limited reservations available so turned up at 4.30pm for the 5pm opening. The door opened on time. The so called manager said "how many of you?" We were 5 at that point with two joining later so said 7. The "manager" then extraordinarily said "well, sorry I can't help you". We enquired why that was and he informed us they can only allow 4 person parties. So we said ok fine, we'll come in as a 3 and a 2 or a 4 and a 1. He refused. We pointed out the illogicality of this. He admitted that had we announced ourselves as a couple first with two joining shortly and then our three other friends had come in as a 'three' he would have let us in but he wasn't going to let us in having revealed we may 7 in the end. He claimed he had reservations that made this impossible. Remember we were front of the queue at 5pm with no more than 8-10 people also in the queue and only wanted to stay for an hour. Utterly infuriating and clearly impossible to argue with someone whose argument for refusing entry has no logic to it. This place clearly believes its own hype and has forgotten that actually all they do is provide a service by mixing different alcohols together in a glass - the customer experience in this equation is more important than the ego of someone who calls himself 'manager' but clearly has not the first clue how to do that job. I politely suggested he might like to consider firing himself. I urge you to please not indulge this arrogant egotistical shop manager with your hard earned dollars and go somewhere like Lark instead, where the service is charming, the drinks very reasonable and the oysters spectacular.

Any wait is worth it!

The wait was said to be 45 minutes, but was actually less than 30. Besides over estimating, I think that time was quoted to weed out those who don't know what Canon is, which is a place for hand-crafted, legit cocktails. DRINKS I had the Liberal Cocktail which is basically an aged (for at least 3 years) Manhattan. It's served in their own labeled mini flask bottle, and it's really good. Next I had a Vesper. I know that they are more popular these days, but if it's not on the menu it's rare that a bartender knows what a Vesper is. Canon's bartender not only knew the drink, but made it great. My companions had some drinks off the menu, which were expertly crafted as well. FOOD I wish I had come here for dinner to try more of the food, because the menu looks great. What I did have though was the baguette with the smoked butter. I will definitely order that again. ATMOSPHERE Very cool. I would be surprised if this location wasn't an old prohibition-era bar. It definitely has an older feel to it. The bottles and shelving go all the way up the tall ceilings and across two walls. Even in the bathrooms there are bottles behind the screens. Speaking of the bathrooms, they have old-looking radios playing old timey radio shows. SERVICE The staff is friendly and the bartenders are very accommodating. I was worried that Canon would be stuffy and a little uppity, but it's not the case at all.

It is a small bar with an Amazing cocktail offer. There are some "vintage" cocktails that can be very exoensive but there are also regular cocktails with regular prices, but all. Of them are presented in a fun way.

Terrible service

We had more fun waiting outside this bar as the bouncer was so entertaining! When we went inside 45 mins later, we ordered 4 drinks and a cheese/meat board immediately. The waitress came to our table twice to shush our group, as apparently we were too loud in a bar! That is ridiculous! We just had one drink and left immediately. Honestly, never had such terrible service, as who shushes anyone at a bar? Never going back and will ensure no one that we know will go back! Please get a grip on reality. Thanks.

Unique Bar with Great Drinks

My son and I walked into this bar on a Sunday evening with no reservation; however, I would definitely recommend a reservation as it is small and quickly had a line out the door. The ambiance is great and the unique drinks were delicious. Try the Lawnboy or the Cannon, both were phenomenal! Expect to pay approximately $20 a drink. You'll never forget your trip to this tiny bar with tons of energy.

The best cocktail experience I've ever had

What an amazing place. They're obviously highly touted for their drink section (117 pages of libations, not counting specialty cocktails), but it's their cocktails that truly set them apart. Each drink is exceptionally crafted and often a work of art. I was pleasantly surprised by the Beer Nuts (a nice appetizer) and while I had no idea what their [Bone] Marrow was I had read reviews it was great so I decided to try it. More of an appetizer than a meal, but still a tasty, unique eating experience that pairs well with the drinking experience. The attention to detail in this place is the best I've ever seen, and I love visiting cocktail bars. From the ice cubes and the sprayed bitters in the shape of a canon on top of their signature drink to their bar instruments and liquor flights, no detail is spared. Their liquor flights come with instructions, a chart on the back, plus the order of the cocktails inside. Such a fun experience and a great way to try new spirits. A must-go if you're in Seattle. But be sure to get there early and be prepared to wait. It's not a huge place, and I'd recommend sitting at the bar if seating is available to watch them make the drinks. The best place I've been in Seattle.

A party on your palate!

We enjoyed a fun evening at Canon after it was recommended by a friend. They have a new patio in the patio with a cozy environment. We experienced great service with helpful advice. Our cocktails were good, but the food was really the special part. We ordered the cheese plate and pork belly sandwiches. The cheese plate was out of this world, and so fun! It included great cheese, but more interestingly, a lavender ice cream spread. Incredible.

The Whisk(e)y selection is simply stellar.

If you are in the mood for a cool cocktail or an incredible whisk(e)y list, you have come to the right place. I have been to a lot of great whisk(e)y bars. This was one of my favorites. In particular, they have the largest collection of American Whiskeys (bourbon, rye, single malt, etc.) that I have ever seen. We loved it so much, we went here twice during our stay!

Canon is small and intimate. They have an encyclopedic list of whiskies, both American and Scotch. The staff is attentive and expert at making and presenting a variety of excellent drinks. I tend to start with what Canon calls roulette , which is a way of saying you pick the booze and let the bartender whip something up. Our bartender asked if I had any flavor preference and proceeded to make me a delightful spicy/sweet bourbon drink with house made bitters, an orange infusion and few other ingredients I can't remember. Also had the Skull and Blackberries, a drink worth it for the presentation as much as the taste. the drink is mixed and poured and then served on a plate, under a dome filled with smoke. it smells like your grandfather's pipe tobacco and was obviously very popular. The food was nothing special, but the oysters were nice and the truffle butter was wonderful. If you appreciate good bartending, novel cocktails and a nice atmosphere Canon is the place.

A massive selection of alcohol with an excellent selection of craft beer. The bar looks awesome in its style and service is great. It's a small place so you'll need to get there early if you want a table and it has a small capacity. Deffo worth the trip for a couple of drinks.

It was our last night in Seattle and we ventured slightly further out from Belltown to a great bar called Canon, a whiskey and bitters emporium. This was obviously a spot Laurence had picked out - he loves a good whisky, also constantly having his work head on wanting inspiration and ideas for new bar designs this was the perfect place for him. This place has over 100 unique cocktails and 3000+ labels! You won’t be struggling to find a drink to quench your thirst here. Combined with antique glass wear, a stunning food menu this place is a marvellous pinnacle of Seattle cocktail culture. We also had some oysters there which were just amazing, quite expensive but worth it. This place is reminiscent of a speakeasy but instead offers the ambiance of a library drinking room. Do yourself a favor and order the Lion's Tail and order something special off a top shelf. It's the perfect place to learn about new spirits and savor the ones you already love.

Stopped in for a flight of whisky and an app before heading to dinner up the road. We made a reservation for 5:30pm and the place was already almost packed. Awesome service, unbelievable selection of drinks and very tasty food! Watching the bartenders do their stuff is just like going to a show. Highly recommended...but make a reservation first!!

One of the best cocktail bars in the world

Redonkulous booze selection, especially whiskey and bourbon. Even has a pretty deep mezcal selection. Like a library of booze. not sure how it is on weekend nights, we just walked in on a sunday afternoon, no problems. Low key atmosphere, though slightly fancy digs. A must for cocktail lovers.

I've never seen a bar that stocks Scotch, Bourbon - Whiskey. Vintage, rare, so many it was hard to count. If you're looking for a great place to have a cocktail on Capitol Hill this is a good choice. Depending on when you go there may be a wait.

One of the best bars in the country

Canon is by far my favorite place to drink in the city. The ambience of the wood paneled interior is impossible to beat, as is the inventiveness of the cocktails. A recent visit had us served "Milk and Cookies" - a milk, angostura, and scotch mixture - in a lunchbox complete with cookies and an Archie comic. Other drinks are equally amazing, like the Campfire in Georgia that does indeed include its own smoky fire. Canon is dedicated to alcohol - the bar is stained with Angostura bitters, and the menu covers are made from spent beer mash. Few other places in the country are able to be mentioned in the same breath as this place.

So many good bars in the world. Canon though has to be one of the best. I generally strive to not write negative reviews. This does not mean that I am a background singer in the Lego Movie going "everything is awesome!" all the time. Nor that I am not at all critical of the places that I come across. Quite the opposite actually. As I work in the service industry, I am acutely aware of what it takes to run a bar or a restaurant or a hotel or a b'n'b, and to do so well. I simply have chosen not to waste my efforts on negativity, and decided to only write good reviews, and limit myself to writing about places that I truly feel have earned my respect and recognition. Canons' staff have a unique flair for making you feel welcome, creating a comfortable vibe in a room that is awe inspiring to say the least. The towering booze-loaded shelves from floor to the rafters says a lot about the love of good spirits that is the base upon which this place is built. Luckily we were seated in the bar, so we had some excellent one-on-one time with a humorous, knowledgeable, mustachioed and very skilled bartender, who always found time to joke around, smaltalk or advise us in our cocktail selection. All our cocktails were crazy, out-of-this-world good! No wonder it has been on the "50th best bar in the world" three years running. Picking a favourite is tricky, but is I must: The "Campfire in Georgia" Was absolutely insane to put it modestly, also the presentation was kinda sweet, but the composition of the cocktail was some of the best balanced I have ever had (and that's saying an awful lot son) while utilizing some of the boldest and trickiest-to-get-right flavors there is. The grub is also ludicrously tasty. So: if you are in Seattle, or even the general vicinity and you are a barfly, cocktail snob, or simply a aficionado of the delicious things in life: you must visit Canon! The sooner the better! Seriously go! Now!

Leftist politicking but fabulous cocktails

The owners likely don't want your business if you're conservative (even as a liberal, I find their overt leftist politicking to be offensive), and they're pretty aggressive and lacking in humility and self-awareness when customers complain (you can get a small sense of this by looking at their responses to negative reviews on this and other platforms). But that having been said, they have without a doubt one of the best whiskey and cocktail bars in the city. So reviewing Canon is difficult and raises questions similar to whether to "like" Michael Jackson or R.Kelly music despite their being gross people. Can you separate the person from the art? I've been a customer of Canon for years. I've probably spent a few thousand dollars there over many visits, and I even own their cocktail book. The design of the bar is exquisite, with lovely dark wood, great lighting, and fantastically creative and lovely glassware and other bar trinkets. I can't express enough how lovely it is to sit in this bar (the front is better than the now expanded backroom, although it's great that it's now much easier to get a seat). Their whiskey catalog is literally worldclass, as is their range of available cocktails (they have a regular cocktail menu but you can order off menu, including ones from their book). Their food menu is also quite nice and similarly upscale. Their bartender quality slipped for a while but I think it's back on the upswing. I've heard (secondhand from other bartenders in the city, so possibly wrong) that they don't treat their staff that great, and they have had a bit of turnover. A few visits ago one of their waitresses tried to tell me their 12 yr old bottle of Redbreast was like a 15 yr old bottle because they'd owned it for 3 years (no - whiskey doesn't age like wine). My favorite bartender in the city used to work at Canon. I remember one fabulous night he was playing Fugazi over the sound system, which when juxtaposed with top notch cocktails was pretty much heaven for me. My last few visits the bartenders have been better. Their online postings can be obsessed with the latest far left causes. Again, I'm liberal, but if I was conservative I'd definitely not feel welcome. They're upfront in saying on social media that they want to use their business as a megaphone for their personal politics, which of course insults a good portion of their clientele. They said they were leaving Twitter (due to new free speech allowances by Elon that upsets their echo chamber), but they didn't follow through. I think the owner's wife was previously in control of their social media, a know-nothing riding the coattails of her husband, but I get a sense that someone else is now in control of the social media as its been dramatically better with the focus back on lovely pictures of new menu items and cocktails. Ultimately, I put the cocktail experience above all else and ignore the personal issues with Canon's ownership. The cocktail experience there is simply wonderful. A great place to treat yourself, or to show off to out of town guests.

I had the manhattan here and it was STRONG but good! I drink water like a fish and they left a pitcher of water (flavored with cucumber) on out table that they constantly replaced before we ran out. We went during the week but I've heard it's packed on the weekend. Their liquor collection is quite impressive!

Most unique cocktail bar ever

I have never been to a cocktail bar where you needed reservations! It took the three of us forever to decide what we wanted to try. I first tried the Aged La Bicyclette, which is served in its own old-fashioned little bottle. Then I tried a Ginger Grapefruit Rickey. It was top notch. We also split some appetizers. It was a fun time in a place unlike any I have ever been in.

I am giving this place 5 stars based on the drinks alone. We went to Canon after a great dinner and we're pleasantly surprised with the great atmosphere. We were seated right at the bar about 10 min after our arrival. They have the best little aged cocktails that come in a small keepsake bottle. The presentation in this place is flawless. Can't wait to try the food!

Tasty drinks, amazing whiskey selection

Went here with a coworker for drinks and decided to eat food as well. We had a few plates throughout the night that were delicious. The highlight though was the drinks and the bartender. We picked our first drink and the bartender then took us on a journey building on the first one. Each drink was different and better than the last. The selection of booze was very impressive. Would definitely go back.

The only reason I wouldn’t give this 5 stars is because I want it all to myself! Wisest range of whiskeys in the Western Hemisphere. Great cocktails (including non whiskeys) Get the Georgia campfire and watch the team make it at the bar! Food is good too But go there for the drinks I am Scottish and I ah e yet to stump the bar man Enjoy Slanthe

It's not the worse

Ok so it's not too bad but, if you've actually been to a bar in any other major city, this is just minimum requirement. To be fair, the doorman described it as a 'booze focused restaurant' which besides the initial laughs, was a little bit sad. Not to mention that he looked pretty cold which I thought was rather cruel from.the management. All in all, go in a for a standard cocktail but don't expect too much.

Lives up to the hype

Canon has been receiving a lot of national and even international accolades and I hope that they never change. The attention to detail, friendly staff, and great atmosphere make this tiny spot worth visiting. Try going early/late and avoid Fridays/Saturdays to get a more intimate experience and avoid lines.

Awesome whisky bar!!

You have to see the list of liquor to believe it. Fifty years old and older and some 4 digit prices for a drink. All cocktails are made with skill and precision. We were going to dinner elsewhere but we decided to have something to eat at Canon. Even the $4 appetizers are excellent. I would pay several dollars more for the Angostura Bourbon nuts and will order them the minute I sit down next time we go there. Sit at the bar and hope (or order it yourself) that you get to see the Campfire in Georgia cocktail made. It is $18 but looked to be worth it.

This is a trip. It's a good thing I'm not a local; I would be here weekly at a minimum. I read it was an amazing bar and it was very much so a bar where drinks become more than drinks. A journey, cuisine, palette party, pick it. The visit was completely beyond my expectations as I got talking with the bartender and it became a conversation about whiskey in general and a plain appreciation of the dram. Chris made the visit beyond excellent. Next time in Seattle this is a sure place to go. For everyone else, put it on a bucket list or go there weekly.

Never disappoints

I just want to state that this place is always consistent. We always go in with high standards (as it's not the first time at this place) and they always hit the mark. We were seated at the bar (love watching the bartenders). My significant other loves their Campfire Georgia drink (I admit it smells amazing, like you're camping) and then he got Infinite Jest (not my cup of tea, but definitely his). But I got Gnome Chomsky and Bitter Petals (it was beautiful). Next time I want to try Birds and Bees (it's an awesome purple color and gin). We ordered charcuterie to go with the drinks. Time well spent.

My friend and I spent 72 hours in Seattle. On a travel blog I found this place. I was so interested. It was really fun. Most drinks are served in some sort of presentation. You likely are going to have to wait & cant wait inside. So we chanced our place in line, went to a bar down the road, grabbed a drink and came back before they called our name. Your name is scratched if your not there. It’s fun, worth the little trip away from down town.

Best Sazerac I've ever had and it was for a decent price. Small bar. Had one drink off the menu and it was outstanding. A little expensive but it was worth it. Classy.

A very popular place, so it is best to book a place. We had to wait in line for twenty minutes until we were seated at the bar. The bartenders are highly professional and experienced. There is a very large selection of alcoholic beverages and a large selection of beers. We had some small dishes - all were very good. The highlight was a great pork chop we shared.

A cornucopia of bottles!!

My girlfriend and I spent a couple of days eating, drinking and sightseeing in Seattle! This bar was tops on my list. The VAST selection of bourbon, scotch and whisk(e)y was awesome! We each ordered cocktails, and were impressed from the first sip! The food was excellent, as well!! Escaping the rain and the bustle of the main road on Capital Hill was worth it!

Ordered Nuts, never showed up! Really ??? never showed up. Excuse.... We only have one cook?????. Did they need to roast on the spot? Pours adequate BUT if you are pouring a $50 glass BRING THE BOTTLE TO THE TABLE AND POUR IT FOR THE GUEST. Waiter should not say "Sorry, the bartender threw the bottle away and it cracked!"

Might be very good mixology place according to the critics... Great design... but shall accept people over 30 to enter... And avoid being so arrogant !!! At the end it's just a bar so little bit of humility would be agreeable... Next time maybe...

Unbelievably overpriced drinks, snooty waitress

While visiting Seattle we stopped in here for drinks after dinner. The cocktails were interesting, including some creative glassware, but nothing more than a good cocktail that you could get in New York or San Francisco or London. At nearly $20 a pop for cocktails that's just too steep for what you get. Yes, the atmosphere is moody and stylized, but I don't think that justifies the prices. Pair that with a very cold, snooty, arrogant waitress who seemed like we were just too much of a bother, and who couldn't manage to crack a smile at all (but then seemingly disappeared partway through our stay, replaced by a slightly warmer version) and it was overall just an average stay. It was an experience, that's for sure, but having done it once I'm set and don't have a need to go back.

You come for the cocktails...

Be prepared to come early or wait for a seat. Some of best and most elaborate drinks you can find anywhere. Pricey and often over the top theatrical (order the milk and cookies to see what I mean), but drinks are excellent and the presentation seems to be making a bit of fun of itself. The plates are small, but very good. As for service, this is Seattle so don't expect the butt kissing you'd expect in the Northeast.

A Friend of ours set up the reservation, 5:30pm, we stayed almost 2 hours having drinks and appetizers. The drinks are CRAZY good AND CRAZY different. My friend's drink came in a very small (doll size) shopping cart...I am NOT kidding. The food was great and lots of choices. We can't wait to go back with more friends to spread the word of having FUN with your cocktails.

Canon Whiskey and Bitters Emporium

Next time we visit Seattle, more time will be allocated for this wonderful place. We came here for 'happy hour,' but wish we had been able to stay longer to sample the food. Just reading the menu is an experience in itself. The setting is cozy and intimate. Don't miss the patio in the back. Making a decision on what to drink will not be an easy one. And, if you're not able to find exactly what you want, just name your favorite liquor base and possibly any other ingredients to your waiter, and the mixologist will concoct 'heaven in a glass.' We did order a snack that was a combination of hot pretzels, nuts, and other tasty treats. This was more than just 'happy hour.' It was a memorable experience, especially for our taste buds. And be sure to visit one of the bathrooms. It's my understanding that Canon's bathroom won a contest over another extraordinary Seattle restaurant, Canlis.

I met a Seattle-resident friend here for drinks while in town. This place could afford to be pretentious and stuffy: they have amazingly well-prepared drinks and food, an enjoyable and roguish atmosphere and customers waiting on the sidewalk to get in; however, service was so friendly that I felt like a valued regular. The menu has dozens of signature cocktails (including a surprise, grab-bag selection based on your favorite spirit) mixed by bartenders who must have chemistry PhDs. Additionally, you can request virtually any cocktail not on the menu and get a perfect result in five minutes. The Cannon Cocktail is the least-expensive one on the menu but also the best-- they also make an incredible Sazerac. The "booze library" behind the bar is one of the most extensive I've ever seen. We ordered a pizza and a bowl of Angostura-bourbon nuts-- both were the best snacks I've ever had. In the world of places to go get a drink, I can't recommend Cannon highly enough.

Neighborhood Nook

Fantastic food, great service, creative drinks and atmosphere. For those who like the bar scene and appreciate great food this is a must visit neighborhood nook. The best seats in the house are at the bar as it's a treat to watch the bartenders do their thing and provide history and "local color" when they have a moment. Reservations are recommended as when we showed up 15-minutes prior to opening there were already another half-dozen people in line.

This was my second time here! I had to bring my boyfriend after coming here with friends the last time I was in Seattle. This place is so cool. Got to see the bathroom this time and I was blown away. Seriously, go look at the bathrooms. Yes, the drinks are kind of pricey but if you watch the bartenders make them you will see why. A lot of detail goes into each drink. We had a great time.

Came here based on recommendations and its a place where dreams come true. To die for cocktails and food. Everything was above and beyond my expectations and a little quirky to top it off. If your looking for an experience this is the place. Had the oysters, octopus and pork belly bun and while all were incredible the octopus was the real winner. Excellent cocktails

This is my second time at Canon and it is as good as I remember. My favorite this time around is the Hanky Panky. It has gin, sweet vermouth, fernet and orange zest. Really yummy. I did notice that Canon is trying to have a little more "show" in their cocktails, serving drinks in skulls, etc. I liked it better when they didn't do that and hope next time I come they have returned to just making great drinks and ignoring some of the showy stuff.

Was recommended Canon by a good friend who shares a love of Sazerac cocktails and the place didn't disappoint. The bar has amazing ambieance, with low vintage lighting, tin ceilings, and so many candles I lost track. The entire bar walls are packed with every type of liqour imaginable and so very expensive top-shelf/reserved stuff. I had the Sazerac Experiement, which is a triple-flight of "old style" with Cognac, "new style" with Rye, and a combo of both for a great sampling of this old school New Orleans libation. The menu looked amazing with drinks from all walks of life with many play on words and innuendo, making your drinking experience even more delicious! I think the fine-print in their menu sums it up quite nicely: "Alcohol, eggs, sex, undercooked foods, and most enjoyable things in life can and will kill you if you give them enough time. Live life to the fullest until then!"

This is a small bar on Cap Hill near Seattle U. Come for the drinks And don't order a beer or simple mixer...these folks know their stuff so trust the bar tenders and order one of their specialties. You won't be disappointed. The service is great, but based on some of the comments below I urge you to leave your snooty attitudes at the door and just enjoy a darn good drink!

An excellent experience with fun, but delicious cocktails..worth the wait

I had an excellent experience at Canon. The cocktails were a bit expensive but still unique and delicious so I felt it was worth it. They had a unique touch in the way they were presented. We had a Daft Punk served in a globe, which actually ended up being closer to 3 cocktails for the price of one. I also had a milk and cookies which was served in a Bob Ross lunchbox. They were so creative and had the perfect touch to fit the theme. The service was a bit slow and there was a wait to get in, but it was a busy Saturday night so it was understandable. The doorman was super fun and easy going and made the wait more enjoyable. Overall it was a great experience and I can't wait to go there again.

Wow! We headed to Canon on a Monday evening after a relatively early dinner. We did not have a reservation, but tables were available. The restaurant checked vaccination status upon entry, which we appreciated. What a cool spot—the decor is awesome, with liquor stored everywhere, a long bar, and a few tables. Very casual atmosphere and a nice mix of people. The place was hopping, even on a Monday night. Music was good and not too loud. Service was outstanding. Our server was funny and kind and more than happy to help make a recommendation as to what to drink. This is a whiskey lover’s paradise—the whiskey menu has dozens of pages! Beyond that, they have a variety of house-made cocktails that feature really cool combinations and are served in unique, and often humorous, glassware. Definitely some unique flavors. A blast to try new things. Our cocktails were elegantly served, arrived quickly, and were delicious. Highly recommended—we can’t wait to return.

I wanted to share my experience because I believe sometimes word of mouth is so important. This Bar/Restaurant was voted #6 bar in the world (primarily for their vast liquor selection, it is very impressive), so being a bar connoisseur I had to check it out! It is a bit of a hassle to get into (small venue) and you have to prepay $25 per seat up to 4 only for a reservation (Zero flexibility on reservations for 6 despite the prepay on reservations) otherwise it is a walk in venue . The vibe is a bit uptight but somewhat understandable with the popularity of the place but overall the staff was cool. The cocktail menu is vast, the mixology of cocktails very fun to choose from and lots of tasty looking food to order. Loved my drinks and enjoyed the food, have to say though the prices were well over priced (I can't blame them though as they are plenty busy). Plates are $15-20 and portions are pretty small and the mixed drinks were $12-20 depending on what you ordered. The selection of bourbon.whiskey and even tequila was spectacular ( special vintages as much as $1200) but again you paid a lot for an ounce (measured to the last drop). Glad I went, but no need to return.

World class without the 'tude

Beautifully, obviously thoughtfully crafted and executed from beginning to end. Everything from the $25/person to make a rez is designed for a flawless, adult (in attitude, not just age) experience. The staff are professional, capable, skilled and personable. The ambience is finely tuned, down to the old time radio playing in the restroom. And now let's talk food and drink: scrumptious, inventive, clever with a knowledge of flavor combinations and subtleties, and perfect in portion and presentation. We stuck to the Shrouded Roulette (name your base liquor and let the bartender get creative) and they delivered round after round of brilliant cocktails. When they brought out the smoking skull and the dry ice, it was clear: these people are not joking around. And yet, Canon's staff and menu clearly have a sense of humor, wit and joy in their work. As SF Bay Area folks, it was refreshing to experience this level of craft without the usual preciousness and posture that would accompany it in SF.

My husband and I visited Canon with another couple on a weeknight in February. It was pretty quiet so we were able to get 4 seats at the bar. The bar is the best place to sit here, so you can watch the bartenders work their magic. They really are talented and well informed at Canon, without being stuck up. I enjoyed the experience, and my truffle old fashion. If I went again I think I would get the camp fire. The preparation of it was just so cool.

Exceptional!!! I’m not sure if words can describe how fond I am of this bar but I’m going to try my best. This bar is easily my first, second, and third favourite experience in my life! The bar staff is extremely well educated and super friendly even when there were serving a packed house! Myself and my date had the chance to enjoy a couple of their cocktails and were blown away by both the flavour profiles as well as the presentation. The same can be said for their tapas style food. The atmosphere and energy were amazing. I honestly can’t say enough good about this location so do yourself a favour and go experience it for yourself, you won’t be disappointed!!!

Excellent, inventive cocktails (we didn't try the bar food, but its reputation is good), wonderful atmosphere -- liquor bottles on shelves to the ceiling and library ladders to get to rare bottles on top. Beyond-rare bottles are on the captain's list, thicker than a phone book (remember those?) and displayed under lock and key. The cocktails are heavy on the gin, rye, and bourbon, as those are hot right now, so if that isn't your thing, ask the bartenders to make you something based on what you like and they will oblige. Standard city designer cocktail prices, which is to say expensive. Terrible parking -- use car2go, public transportation, take a cab, or walk if at all possible. Nice Prohibition-ear design touches. Crowded, and you won't be let in if there isn't a designated place for you to sit or stand, as it is small.

My husband and I love to try different cocktails and we absolutely loved Canon. So much so, we went there twice on my 4 day Seattle visit. We arrived at 6 pm on a Sunday and had to wait a little bit for a seat, but it wasn't too bad. The second time we made a reservation for Tuesday. You have to make a deposit ($25/person), which is later deducted from the check. With each cocktail between $12 to $15, it's not hard to meet. The service was fantastic, the cocktails were good and they have a great whiskey collection! If you have time (and love cocktails and whiskey) I would recommend stopping by.

Make a reservation. Canon has the worlds (they don't like to say that) largest collection of liquor, liqueurs, bitters, etc. Every square inch of space is devoted to storing their amazing collection.The place is small, and gets busy, so make a reservation to guarantee seating when you want it. Inside, it's dark. Lots of dark wood shelves filled with bottles on bottle on bottles, and candles. It's what every adult really wants their personal library to be. There's a few small tables up front, a booth or two, and a decent sized bar top. I believe there's also patio seating out back. Food - smaller plates, since it's a bar, but delicious none the less. The pork buns are the fluffiest squishiest things you can even imagine. We sampled a few things and loved it all. Great quality and quantity for the dollar. Service - Arguably the best craft cocktail service I think i've experienced outside of being best friends with the bartender. Water's stayed full, and any chance I wanted to ask questions, there was a bartender to listen. They were friendly and extremely knowledgeable, and looked like they were having a good time behind the stick. They treated us with respect and were willing and happy to engage in conversation. Drinks - where to even begin? This bar... is heaven on earth for cocktail enthusiasts, spirit enthusiasts, and everyone in between. They have a ridiculous list of spirits you can order from if you want straight spirit. Chartreuse Yellow VEP from 2004? No problem. How about some Rum Agricole from the 80's? Done deal. They have it all. The cocktails are perfection. Balanced, nuanced, delicious, and beautiful. They serve a hand full of bottled cocktails with stellar labels. They have a few oak aged cocktails to choose from as well, with varying oaks/barrels. The rest of the cocktail list is beautiful. Classics with what I can only imagine is the most accurate representation of their original form. Modern cocktails that utilize foams and infusions and anything you've never even imagined to create the literal perfect drink. They even have a Captain's List of cocktails made with some of the less common ingredients. Don't go here if you can't fathom spending $15 on a cocktail. I would say don't order a vodka and tonic, but You'll get the best vodka tonic of your boring life. So you do you. Do go here if you want to experience what the whole craft cocktail movement is all about. If you like to geek out over interesting combinations of flavors and immaculate presentations, this is your place. If you want to talk shop, learn something about the history of what you're drinking, or just enjoy an incredible drink in an incredible place, this is for you. I will warn you though, after visiting this bar (I feel like calling it a bar is demeaning), you will look at your neighborhood spot as the plebeian watering hole that it is. This bar will spoil you, and you will be hard pressed to experience anything else like it. If Hemmingway was still kicking around, he would call Canon home.

Worth the wait

A friend of ours suggested a visit to Canon and I am so glad he did. When we arrived we were told it was a 30 minute wait for standing room only and an hour for a table. Though we were skeptical, we decided to stick it out. Luckily, most everyone ahead of us bowed out and we had a standing spot in about ten minutes and a table within another few minutes. What a marvelous place! First of all, the bar is quite small, and they really take their time to regulate the number of people allowed in so you are never smushed. The ambiance is fantastic. Hundreds and hundreds of bottles, and after watching the bartenders for five minutes you will realize they are not just for show. Up and down the ladders they fly mixing amazing creations - unique drinks that aren't overly packed with sugar and syrups. And so delicious! Not only are the drinks wonderful but the food is fantastic. We had lots of plates of small bites and devoured them all. Even the restrooms are fun - old time radio shows playing and lots of candles to keep the vibe going. You really get the feeling that you're visiting another era. I would do it again in a heartbeat.

My boyfriend, who is a cocktail aficionado, was gleeful like a kid over the Magic: The Gathering drink and I adored the Daisy Royalle. I definitely recommended trying the Shrouded Roulette—you pick your spirit of choice and the bartenders make up a secret drink from there. You won't be disappointed. Wildly popular small intimate craft cocktail parlor, so there is often a wait to get in. Slightly easier to get into during the summer season while the back patio is open. Go early, or prepare to wait. While waiting try Cafe Presse across the street, they have a creative cocktail list too, but Cannon is the pinnacle of the cocktail concoction. Canon was recently rated in the top 10 bars in the world by Conde Naste- and certainly lives up to that honor. Canon is first and foremost a bar. Reviews below stating that the food was poor or food service was poor should know you do not come here for food. You go to Canon to drink- mainly whiskeys, ryes and bourbons. The servers expect that you are there to drink, not just one or even two drinks. It is know for it's world class selection of exceedingly rare, hard to find and expensive whiskeys. They also have a great list of uniquely concocted cocktails. This is not a bar for novices or those who are afraid to try new things. We made reservations a month in advance and put down a minimum payment to secure a table and I am glad we did. The seating is limited and the bar does not get packed- primarily because the owners do not want it to be. The bar was full, but you could easily walk around and it wasn't too loud. You can find people waiting in long lines out the door to get in for over hour. A reservation is a must. This is also not a bar where you can be thrifty. Expect to spend a good amount of money on drinks. If you know your whiskeys you will gain much more interest from the bartenders and servers. The atmosphere is reminiscent of a speakeasy with floor to ceiling shelves full of rare brown liquors that extend all the way to the back of the bar. We did order late night snacks- cheese plates and charcuterie and had no problem with service and the food was excellent and fresh. The best food we had was, and I am not kidding, the homemade fresh bread and smokey butter.

I have been to Canon numerous times. I've made casual conversations with a couple of the bartenders and bring in my friends that have never been to Canon because I LOVE the service and the atmosphere. After visiting Canon for over two years, tonight was the WORSE service I have ever received. I brought in an investor to show him the type of service I have been raving about over the last two years. He was floored and disgusted with the service we received. The floor manager made sure to make it clear to us that she was "the Floor Manager!" and our server kept talking over us and correcting everything we discussed. I was complimenting the Bar Manager, Charles to the Floor Manager b/c of the delicious drinks he made for us. When I asked about Charles, she said, "I'm the Floor Manager." We never asked for her Title NOR appreciated her service as well as our Server. She did not bother to introduce herself to us and we didn't bother to ask for name. Our server rolled her eyes at us several times when inquiring about drinks and food. She informed us that she has been there longer than Charles and knew more about the menu and drinks than he did. The service we get at Ihop was far BETTER than what we received tonight. I was EMBARRASSED to bring my friend/investor to this awesome bar. The zero tip our server received was warranted. Tips are based on service! Canon, do your bar a service and inform your servers they are here to serve and their attitudes and eye rolling is the service people would expect to receive at McDonald's and not at an establishment that's rated, "6th Best Bar in the World." Charles, thank you for your wonderful service and awesome drinks. Well done! 🍻

Creative cocktails beyond expectations

More bottles of rare whiskey in one place than I have ever seen. We did not make reservations because we couldn't imagine a place being full up at 5:20 p.m. on a Wednesday when they open at 5 p.m. We were wrong...so we had to wait in standing room. The wait wasn't too long before we were seated at the bar. But lesson learned here - make a reservation. The atmosphere somewhat dark with dark woodwork but inviting. Your whiskey menu is presented on an iPad and it covers a lot of pages. Anyway, it's not only whiskey, it's wonderful hand crafted cocktails. These guys know their stuff. Don't hesitate to simply name your spirit and let them surprise you with their craft. And, did I mention the food? Very well presented small plates priced on the high end ($18 per) but excellent and fair proportions. The meat and cheese plate stands out in my mind. But, we also had salmon and mussels. All superb. This wasn't a cheap occasion but go ahead and splurge. This one is worth it.

Amazing Selection which makes for an experience

While on tour with work the owner Jamie took us to his establishment Canon. Wow! That's what you will say when you walk into this place. It's a library of booze that keeps going and going. You could honestly read the menu for an hour and not even scratch the surface. This is the place you would take people to show them something different and have an experience. They have a cute patio out back which is very nice and since we happened to have been invited by the owner Jamie, he took us down into the basement which was an equally cool experience. He took us into the back room where he has a locked "prohibition style" room set up with rare and exclusive whiskeys. He was nice enough to offer us a whiskey tasting from the early 1900's and I was honored to be part of the tasting. If you have money to spend and want to experience something exclusive then ask to go down to the secret room.

This place is beyond words. The bottles on the wall tell you everything you need to know -- you are going to leave happy. My wife and I were trying to calculate how much everything would be worth. The normal menu will give you a great range of cocktails. We both chose to go the Roulette route, which is where you choose your spirit and they will make something special. If you so desire, ask for the Captain's list and you can page through all the wonders of the universe they have to offer. Brian treated us very well and we had a great time. We will absolutely be back.

For any bourbon/whisky drinker this is the mecca. A menu spanning 178 pages means you're hard pushed to find a whisky on the planet they don't stock. The cocktails are superb and if you're feeling adventurous, let the bartenders knock you up something unique, based on your tastes. Wish I could write about the actual drinks or food but my party was turned away rudely as possible. We went before the place opened and were the first ones in line. When they opened the doors we tried to be seated and were informed they cant seat parties of 5. Normally I would totally accept that, it was initially our mistake not realizing that but we were with a group that had been there before with a party of 6. We were also staring at an empty bar as the first ones in there and trying to see if they could make any accommodations for us, we offered to separate our party, we asked to sit at the bar, everything was shut down rudely and it was very clear they were not willing to accommodate in any way. Honestly have never seen anything like it, would never go back.

Been there twice, the first time we have asked for what we usually drink elsewhere and got more or less the same drink level. On our next visit we have asked to get a recommendation for a cocktail, and this time was supper. The canon cocktail is something to remember and so where other cocktails on the menu. Amazing ambience - the walls are covered in a staggering variety of liquor bottles, and the restaurant is warm, cozy, dark and comfortable. We only had a few appetizers, but they tasted incredible. We went on a Friday night and had to wait around 30 minutes outside in the freezing cold. They were so friendly though and even served us hot chocolate while we waited. Two people out of the four in our party had been before (and were actually considered regulars), so we knew the wait would be worth it since they loved it so much. Once inside, we were not disappointed. The atmosphere was incredible and the specialty drinks were creative and served in such cool ways! You will have to go for yourself to see what I mean. The staff was friendly and attentive and we really enjoyed our time here. A local gem that I would have never visited or known I should visit if I hadn't been taken by Seattle locals.

We were at Zig Zag's and split a burger and someone recommended Canon's. We ubered and got there and put our name in. Weather turned cold. The person that took our name told us to go outside and wait. Windy and cold! It was extremely rude and calloused of him. We were shocked and taken back. My first thought was to ask for the owner because as owner of businesses I think important that they know how rude his employee was. We ended up leaving and going down the street. Just sad that 1 person can change an entire fun evening........

I came to Seattle to go to PAX Prime, and ended up stopping by here twice. Both times my bartender was Chris, who was super informative and chill. The food and drinks here were all great - over the two trips I ended up getting the oysters, marrow, Corpse Reviver #CO, Campfire In Georgia, Chartreuse 90 & Cava, and a Manhattan. These are all displayed magnificantly on the wall from floor to ceiling behind the bar. Their cocktail menu is glorious in its inventfulness and character. Not knowing where to begin with such a menu, I ordered an old fashioned and it was without a doubt the nicest I had ever had. The atmosphere was fun, if a little noisy (typical for most bars), and the service was excellent. We had some small plates of food there, all of which were quick to come out and enjoyable. It is a bar I would love to visit again, and bring friends to.

The Disneyland of Drinks

Canon is tiny, but it is out of this world. You can play whiskey or vodka or tequila (etc.) "roulette." The bartender will take your favorite spirit request, and send back something incredible. It's fun not knowing what's coming! But if you want something super-showy and super tasty, order the whisky drink (I can't remember what it's called) that comes in a glass cone of smoke. They have food there, it's really good, but I can never remember what I ate because I'm just so in love with the drinks. :)

While the front area is great, sneak back to the garden and feel you've escaped Seattle. It's just so pretty and private. Now, don't order your usual. Go to their bar menu and check it out - you'll be amazed at what they can do. Tell the bartender the kinds of things you like - they even have a Roulette, where he crafts something for you. Everything was great. They even have a absinthe selection (I prefer it straight, but they offer loads of options). One drink even came in a glass cover so the smoke would infuse it - fresh applewood chips - amazing!

We had a recommendation from a friend to visit Canon.. ubered over to a very RUDE, RIGID UNFRIENDLY WELCOME👎🏻 We were a party of two that had only been out for one drink so no drunken attitude involved... Male Hostess was one of the rudest people we have met during our travels around the world. Visiting from Florida and being ordered outside on a cold night with a North Wind didn't make for a good impression. Thanks Canon BUT NO THANKS.. no bar is worth being treated so poorly .. There was 3 seats open at bar and we understood you have a PROCESS... yet very abrupt and poorly handled👎🏻 #rudestmaninseattle

Canon is a small space with a cool hole-in-the wall throwback vibe. We read that it can get busy, so we went right at 5pm on a Monday, there were a few people already waiting but we got right in with a place at the bar. There are a few tables, but the bar was the place to sit, the bartender was friendly and got our whole side of the bar chatting with each other. Although the drinks were pricey, they were well made and the fun glasses they came in seemed to be a wink and nod that they don’t take themselves too seriously. We ordered several appetizers to share and all were delicious. The only problem was they write the drinks down by hand and we didn’t realize until after we left that we had been charged for an extra drink, I think it was a honest mistake, but still disappointing. By the time we left, the bar was almost full, so it does pay to get there early.

We came to this place at the recommendation of a local. There was a bit of a wait but on a summer night, I did not mind. Our waitress took our drink order and swiftly left before we were done saying the last word on our drink names leaving us no time to order food which we were ready for. Then she comes out with the drinks that were served in novelty glasses, mine came in a beautiful bee shaped glass and my husband’s came in a little canon. Cool, right? Naturally we wanted a picture and since the place is so dark, we used the flash a total of 1 time. The host then came over to out table and rudely asked us to put out cameras away or take pictures without flash. I understand that in a very dark place a flash can be annoying but it’s not like we were taking a ton of pictures. There’s a thousand ways I could have handled this better. Disappointed in the service. I hate places that have this bougie vibe like it’s so exclusive. It’s honestly ridiculous and shows that you’re trying too hard to be hip.

My wife and I loved this spot. Recommended by a local, it was somewhat difficult to find as the signs were hidden behind a tree. Had made reservations and scored two places at the bar, where Tommy took care of us. If you have difficulty dealing with too may choices ... do not go here. At least three hundred bottles on the back walls. Tommy handed me the drink menu... if I recall correctly it ran 191 pages on an electronic tablet. Lots and lots of scotches, including some that I know are not imported. Excellent Perfect Manhattan. We had dinner reservations that night, otherwise we may still be there.

The cocktails were excellent and served in a very unique way which was a lot of fun. That being said, the prices were extremely high and given that we were paying so much I was very surprised that the waitress would not give the five of us 3 separate bills. The music also was not the best and also because of the volume made it difficult to have a conversation. The food was tasty but again was to expensive for what you get. Also the dirty plates were on our table for a long time after we had finished eating. Definitely worth visiting once but not sure if I would return for the above reasons.

My husband found Canon online so we decided to give it a try while visiting Seattle for the first time. Wow, where do I start?! This place is really cool. Staff is welcoming and incredibly knowledgeable. The atmosphere is dark but cozy. You will feel like you stepped through the twilight zone and into another era! We tried absinthe for the first time, I also had the milk and cookies:) Drinks were unusual but amazing. Definitely a unique gem, I can't wait to visit again.

HIGHLY recommend the seared halibut. I'm not a halibut lover at all but this was fantastic. Braised beef short ribs are great too. Must have a great chef in the kitchen. Hotel Georgia drink is worth trying too.

Just when you think all cocktails are the same, Canon is in a class by itself. The cocktails are so well done, unique and terrific. Each one is an experience and character all to itself and you do yourself a disservice if you order the same one. You'll be easily tempted to try spirits that you'd never thought to try only to see how Canon does it. TIP: Go during the week if you can because this place gets busy on the weekends.

As a cocktail bar - this place is outstanding! I'm not sure of the number of different types of alcohol bottles they have but it has to be in excess of 3,000. The bartenders are very knowledgeable. A good choice is the Roulette cocktail - tell them your base liquor and they will design a cocktail for you. The bar snacks are very good. The best is the caramel popcorn. Trust me! Prices reflect the quality and service. This should be on your list when in Seattle.

Since moving here a couple years ago, canon became and has remained my cocktail bar of choice. Obviously you can not beat the selection (best I've seen anywhere). Bartenders and servers know their stuff, either stay on the menu or name a flavour profile or ask to be surprised and you will not be disappointed. Yes, some things may seem overly hipster (aging cocktails and then served in tiny plastic bottles) but even those things you'll find yourself thoroughly enjoying. Food (minus dessert) holds up extremely well. Recommended for small groups (2-4), and SIT AT THE BAR if you can. See what awesome things are conjured up back there and chat up the bartender.

So...... This has been my fav 5* bar. I still.love it. I wil still return. The new menu focuses on the vessels and playfulness of the drinks more than the beverage. I feel they could do both. Look at reviews of Anonymous Bar in Prague. Awesome. I would suggest a page for whimsical drinks....and a page for rotating canon originals. I will keep coming back but please don't loose too much of your spirit forward cutting edge craft cocktail concoctions.

Our visit got off to a rocky start but our waitress really redeemed herself. You must know, the place is small and the seating is tight. This was fine as the people setting right next to us were friendly and nice. We ordered the 'surprise' cocktail which were delicious! You name your favorite base liquor and they take it from there! We had the scallop appetizer and wow, it was delicious. We will go again, for sure!

The Canon Bar is a high caliber place to get a cocktail, everything is hand crafted. To me it looked like just about any drink you ordered came in a unique container. The drinks are made right in front of you if you are sitting at the bar. A massive selection to choose from. Very clean, including the bathrooms. Excellent service, top notch. We didn't order food, but everything we seen go by looked amazing as the drinks. Highly recommend this bar, amazing!

I'm pretty serious about cocktails and I've been to some darn fine cocktail bars in various parts of the country. Every time anyone "highly recommends" a place to me I'm skeptical but hopeful. Canon was recommended to me by a Seattle native who is well aware of my love of cocktails so I made a reservation in advance of our recent visit to the Emerald City. I checked out the menu and the "Captain's List" prior to arrival and was ready to be impressed. We were greeted warmly when we arrived and seated immediately thanks to our reservation. Right away I was impressed by the atmosphere and the liquor selection. The place was packed but service was friendly and efficient. We enjoyed some small food bites and a few cocktails from the menu. Everything was top notch, especially the Sazerac which I will NOT tolerate if made improperly. I literally loved everything about Canon, I highly recommend it to anyone who's serious about cocktails and I will definitely be back.

I will say that more than a bar is an experience. Canon is the kind of place that provides the perfect setting for the star of the show which are the very elaborate drinks that you get. The cocktails are not cheap but they are well worth it and provide you with the opportunity to explore new flavor profiles and combinations. My advise is to arrive early, later you will have to wait 30 min to an hour to get in.

We were lucky and hit it between hours so had no wait. Tiny place with limited seats at the bar and only a few tables. Get a seat at the bar if possible to watch the show. Must do when in Seattle. Feels like a step back in time to classy woody dark bars.

Not so welcome to Seattle. I have never been treated so rudely at a bar or restaurant in my life. We came in and tried to seat our group in two parties. The man rudely told us to leave. I sat there with 4 women (one who owns a restaurant) and we asked him why he would not seat us. Pointing to two tables. Our other friends were right behind us. I have never experienced such rudeness or stupidity in my life. I will review further on yelp and google next. Do not go here. Overpriced drinks and arrogant (and stupid) host.

We came here on a Monday night before New Year's Eve. We were here around 10 pm, and was quoted 10 minutes wait, which it was. By the end of the 10 minutes, to her people were being quoted an hour. Other people made a reservation to come back in an hour. We knew ahead of time it might be standing at first, but we got a high table. Great service, drink selection, and experience. We had food as well as drinks, and the food was very tasty. We will come back.

Arrived 13 minutes after opening and were met at the door by this female employee who blocked the entrance. She told us there was no seating, but we could come in and stand if we wanted... She then said "2 hrs for a table, your choice... Discuss!", and closed the door! Never been treated so rudely.

Dare you to find a whiskey bar with a larger selection! Took my husband here for Father's Day with some friends. I prefer gin, and was pleasantly surprised to find an extensive and unique cocktail menu. "Not too sweet" is a refrain that the waitstaff and bartenders are tired of hearing. You won't be disappointed here. Our group was on friendly terms, so I was able to sip every drink brought to the table. No complaints.

My girlfriends and I came here because we saw a photo on Pinterest of the drink in the lightbulb and it looked pretty interesting so we thought we'd come have a taste for ourselves. Neither of us ending ordering the lightbulb drink ( we couldn't decide from there endless delicious options)We will be back again to order that delicious lightbulb drink and many more. We were so delighted and charmed by the atmosphere and decor that there's no way we can stay away from such an awesome place. If you would like to be treated with arrogance and contempt in front of your guests - Canon is for you. I brought a couple -COO of a large international company and his wife (not that that should matter) but we were appropriate in every regard, had not been drinking etc. He actually waited outside, first in line, for 20 minutes before they opened at 5pm. At the entrance my friend mentioned that there were six of us. We were told we could not enter, the written policy being no more than four in a party. We offered to split into two tables, to have two of us at the bar, even to send two away, but the man who purported to be the manager (?) would not budge. He would not listen, was unmoved by logic, emotion (our party was a mix of locals and guests from London), or business (there were only 8 or 9 potential clients at that time. Perhaps he was after a bribe? That only occurred to me afterwards. Perhaps they have a customer type they would like to see in their place (younger, maybe). More likely the success of the establishment has gone to their heads, and individual customers, loyal ones up to yesterday, just do not count. So sad. (BTW, I hope the owners are up to responding to this review, unless they are just going to repeat the mantra 'we have a policy against parties of more than four').

Great whisky list and curated cocktails

This place was smaller than I expected and hence the ask for reservations which I did not realize. They ended up accomodating my party of 5 once we were all there. They were fairly firm on this point so not a place to randomly drop by in a large group. The whisky list is so substantial it is on an iPad and alot to choose from. While I can see why some might see this place as arrogant, I did not have that experience. Once you got in the wait staff was nothing but helpful and attentive.

Open at 5- limited reservation- we got there at 450 and the line was forming. It was filled by 520. Pricey but very nice. Good food and fast. Fun to watch the bar tenders work.

We have been here on a number of occasions and it has been great. the bartenders here are very well trained and obviously love what they do.On a busy night you will wait in line outside, but it is definitely worth it. Try to get a seat at the bar and order an amazing cocktail. Great fun to watch a professional at work.

My boyfriend and I visited Canon on a weekend trip to Seattle after reading about it online. The article said it was small so we arrived early at 5:30pm (it opens at 5) and already all seats had been taken. We were led to an area by the bar where we could stand and drink, and two seats at the bar opened up after about 20 minutes. This is the kind of bar where you really want to sit at the bar, not a table, to get the best view of the bartenders mixing cocktails. The cocktails were delicious and the bartenders were happy to mix some custom drinks for us too. I loved the atmosphere and will definitely return next time I'm in Seattle.
