I lived on Thompson Street in New York City where the original Carbone restaurant was built. I would walk by it night after night returning home from work to see it completely packed and oh that intoxicating smell of garlic seeping out from the front door would warm my heart even on the snowiest of winter nights. But I left New York and my opportunity to visit this location. I'm happy to say that I got the chance to visit Carbone in Las Vegas with my girlfriend and it exceeded expectations. I think what people don't understand about this concept is that, yes it is Italian, yes it is a more upscale menu, but it's meant to evoke the feeling of 1950s (mid century) East Coast Italian Restaurants. You know, like the ones in Goodfellas. The ambience matches that attitude, but with major Vegas flair. Growing up in the 80's in Pennsylvania, I quickly noticed commonalities from nicer Italian places of my childhood, from the desert and rum carts, to the wicker table pads they serve hot dishes on...and YES the music. I felt transported back in time and distance to those sweet memories, only turned up a few notches by the impressive menu and quality of service. I have yet to visit the one in Manhattan, but Vegas will be a tough act to follow. Gotta give it up to Chef Carbone, he's made my tummy happy and my heart full <3

Always a phenomenal dining experience but special shout-out to Brad. Give this man a maroon jacket for his tremendous service and social skills!!

Our friends and I were very excited to score these reservations. We expect a more of an upscale experience and that is not what we received. Party of 5 was seated at in the bar area, not the dining room and the music was so so loud. They blared 50s sock hop music. The music finally quieted down about 45 min into our meal when it randomly changed to early 90s hip hop. We could not hear anything our waiters were saying. They had to come around and speak to us individually. Cocktail menu was extremely boring with nothing exciting at all. Bar was heavily stocked and wine list was extensive. However they left the iPad at our table for less than 5 min before taking it and walking away so most of us opted out of any alcohol. We also had no idea if there were other drinks or mocktails. Had to ask. Our initial waiter brought a series of accouterments such as fresh Parmesan cheese chunks, salami, breads and pickled cauliflower. His behavior was very odd and standoffish. Our main waiter was very informative and polite. However he recommended 4-5 meat options for the table to share as family style which would have been an absurd amount of meat to share. We ended up getting 2 meats and multiple pastas and took so much food back to our room. The food quality made up for the terrible atmosphere and lack of context t I the menu. I’d eat here again only for takeout. .

Watched the u tube videos before we went and ordered based on them. Caesar Salad tableside. Spicy Rigatoni , Lobster Ravioli and a chicken dish. The wine list is expensive We found a nice one for $82.00. Too full to order dessert. Must make reservation one month in advance.,

Unfortunately this was one of the worst dining experiences ive ever had in my 41 years of life. a recap: we arrived 15 minutes early for our reservation only to be told we have to wait for our table for roughly 10 minutes (which was acceptable). Time went by and we ended up waiting 35 minutes past our reservation time. Now sitting, the dining experience was extremely drawn out with our total time being 3.5 hours of sitting there. This unfortunately was not because we ordered a lot of food and courses etc, we waited roughly 30 minutes between each - apps, pasta, and entree, just sitting there, damn near twiddlin' our thumbs. We were confused. The table next to us had the SAME issues. The guy was swearing up a storm. We did not, we kept our cool and just took it on the chin. We paid immediately. We left sad. I went to extremes to get this reservation, pulling out connections to get it, to bring out customers to impress them and we ended up embarrassing ourselves at the hands of your staff. My fish was delicious. The spicey rigatoni was great. But unfortunately the service (being the worst in the history of mankind) overshadowed the two good dishes. We will never be coming back. Its sad. Ive been waiting years to come.

Save yourself the wait time and expense. There are plenty of other options that offer better food and service. This has to be by far the worst service in Vegas. Just plain RUDE. Forgot the waiters name but he claimed to be for Mexico City.

Food is good quality. Vodka penne overhyped, but good, ravoli really good. NIce decor, good wine list, service could be a bit more attentive or friendly. Sometimes felt rushed, sometimes they disappeared - just couldn't get timing/vibe right. Nice starters provided, but never offered cheese wheel, then we had to ask. Water not always refilled. Enjoyed octopus. Dover sole nice, not great - but that may have been the fish, as it was prepared well. Desserts eh. Fun vibe in place. Would go back, but probably try other Italian Vegas places first.

First off this is an expensive restaurant. Expect to spend $100 or more a person. Having said that, you will leave full and satisifed. The waiters were incredible, probably didn't go 3-4 mins all night without someone making sure we were okay. Water glass was empty for a total of 10 seconds all night. Exceptional service. We ate family style which I enjoyed because it gave us a couple more options to try. The bread and salami they bring out first was soo good and fresh. All in all, great service, great food, perfect for special occasions. Atmosphere was great, and I enjoyed the italian music. Make a reservation, if you look for 545 or 600 you will have more luck as the later it gets the busier it will be, basically sold out nightly.

You must book a reservation ahead of time. The wait is well worth it. The ambiance is perfect: velvet upholstery, Frank Sinatra music, and amazing service and food. We ordered the spicy rigatoni, Caesar salad and the chocolate dessert.

On my last few visits to Carbone I have been a bit disappointed in the food quality and level of service. I decided to try it one more time, and I found that the food portions are smaller, prices are higher, and service still is lacking for this restaurant. We tried several dishes and all were lacking. I realize that Carbone gets a lot of "press" for their restaurants, and if you want to eat there for that reason, you may as well. However, if you truly want a good Italian dinner at a fair price, there are so many better places to go in Las Vegas. Personally I would go to Sinatra at Encore, or off strip to Pietro's.

Heard great reviews, booked dinner for July 9th for 20th anniversary dinner with 2 other couples. Food was great, ambiance and service terrible. Put us on a table in middle of floor, there was a private NBA party going on so they took priority over everyone. Restaurant was playing loud music, we could not hear our friends when speaking. NBA must have gotten good plates as we got the broken ones see pics. Overall a bad experience, spend your well earned money somewhere else.

We really wanted to love Carbone as it came so highly recommended. I can only say that our experience was very hit or miss, with more misses than hits. Since it's a rather expensive place for Italian, just wanted to share some insights. The hits: - Really lovely, charming environment that is impeccably clean and tastefully designed - Our servers/waitstaff were attentive, polite, and true professionals. - The veal marsala was definitely the best dish on our table, followed closely by the lamb chops. - When I posted this similar review to the restaurant's booking engine (Seven Rooms), I was immediately contacted by the GM, Jonathan, who was authentic in his apology and offer to make things right on a future visit. The misses: (Sigh) - just about everything else was "meh" at best. 1. The music in the private dining room was LOUD - like to the point you can't hear the server give specials or have conversation across the table. We did ask if it could be lowered, and were told that it's the same as the rest of the restaurant and only a small adjustment could be made. This was a real challenge for a party of 9 people. So, if you're with a large group - perhaps skip the private dining room. I cannot say if the main dining area would have been better. 2. The menu is not designed to give you even the slightest hint of what you're about to order. You either know, or you don't. Not a big deal on things like Veal Marsala or Eggplant Parmesan... but not great when you have other listings like "Branzino" (cooked how?) or Orechiette Vito (a signature Carbone item apparently, featuring Broccoli Rabe and Wild Boar sausage) - but you'll only know that if you ask your server (assuming you can hear them). Some simple ingredients listings would not be out of the question. 3. Value Being from Miami, we're not unfamiliar with "resort" pricing. What we do expect in return is a level of quality/execution that reflects that price. -- My niece's Linguine Vongole had about 3-4 total clams (which were small)... doesn't seem like a $41 dish. By comparison, the Fisherman's Stew at Nomad Library is LOADED with big pieces of seafood for $55... a much better/more satisfying choice. -- Lobster Ravioli is really more like a $52 ravioli served in a chunky lobster sauce as opposed to a nice succulent lobster filling. For about $55 you can go to Lago at The Bellagio and get either their Lobster Scampi or when it's offered on special, the Lobster Ravioli and get a lot more out of the dish. But let me be clear - this isn't just about portion sizes, it's about execution. I'll happily take a small dish that's inventive and flawlessly prepared and be willing to pay a premium for that. The Day Boat Scallops or Fois Gras Ravioli at Scarpetta are not a huge dish, but each one of those scallops and raviolis absolutely sings. At Carbone, I had Chicken Scarpariello (a spin on cacciatore) and my giant half-chicken dish drenched in sauce and sausage gave me only a hint of flavor and dry chicken. I'd have preferred a dish a third that size executed with precision. By the time we got to dessert, we really weren't interested in more disappointment. Maybe the original NYC version is better. Maybe you have this place on your bucket list for some reason. Maybe you don't want something that approaches "upscale" Italian. Those are all valid considerations to drop some serious $$$ on Carbone. My advice: Go 20 steps across the hall to Bardot, or any of the other establishments mentioned above. I'd venture to say you'll be a lot more pleased with the result.

We have dined at Carbone in NYC many times and have always had an amazing meal with impeccable service- this Carbone in Las Vegas was definately not the same! Don’t waste your money or your time! Every single person who ordered pasta at our table of 11 was cold. We asked why it was cold and what they could do. They said there was nothing they could do because we were a large party it makes it difficult to bring them all hot. Whaaat?!!! Then we thought it couldn’t get worse- but it did. After the complaint, we didn’t see our server for 20 more minutes . We still hadn’t been poured our wine, we inquired and he said it was coming. Then our main courses came- cold veal, cold chicken, cold everything. We are what we could and guess what? The wine came! We were already finished and had to complain again. So the server ( didn’t apologize) said he would bring it up to management for the next time! Well for us there wasn’t going to be a next time! No compensation of any kind, but they brought 1 dessert for us all to share :-/ We sort of felt like we were in the twilight zone!!

Carbone is delightfully delicious and fun! We had the 2 best servers with so much energy and charm! My husband and I split the Lobster Ravioli as an antipasta. Wow!! So good. The tail cut up in the middle was the best part! Then we shared the Veal Parmesan and it was so crispy, cheesy and perfectly cooked! It was hard to eat because the music was so good and such a throwback that we had to Sing every song! Carbone is now one our favorite restaurants in Vegas!

Reservations were made four months in advance and we were seated in the middle of bar area. The captain seemed to have attitude from the start we ordered pastas dish and entrees. We absolutely asked to space out our order which the captain said he would take care of everything….NOT….. At one point I asked the waiter about our food because everyone around us were eating his response was it’s coming. Shortly after the entrees came out with pasta I complained to the waiter the captain never came back to check in. Prices for drinks and food to high for what you get. Two desserts given complementary for four people so nice…NOT….

Service was terrible, our waitress changed our tip amount on the bill for herself. Don't trust this place. Our food was ok. We liked the bread, but nothing else was stand out in any way. I would never return here because of our experience. We didn't realize it until we returned home and I looked over our statement from the hotel, because we charged the meal to our room.

Good menu, great service, very good food that is tasty and well seasoned. The freshness is evident and the flavors melted in your mouth. Worth the price.

Went on 9/10 with three friends. The bread and meat servings were excellent but it went down hill fast. The two servers were nearly non-existent. We had drinks and two bottles of wine (wine list is long but nothing really under $150/bottle and most over $200. We split the spicy pasta dish everyone recommends, four lamb chops, and veal parm. The pasta was nothing to write home about either. I can make something similar with Franks Red Hot sauce and Kraft mac n cheese. Not kidding. Lamb serving was tiny and way under cooked. I understand medium rare and this wasn't even rare. Veal parm was dry and below average. I asked twice for more water and never got it. They half filled one of the glasses at the table to the remains of two bottles of water that they had walking by. It took 20 minutes to get a check. Waiters were terrible. For all the good things written about it, I would never recommend the place.

We had kind of a weird experience here, but the food was SO GOOD. This restaurant looks quite upscale and has the typical upscale Vegas prices. Think $30 salads, $40 Pastas and $70 Steaks. I have no problem paying a premium price if it was a premium experience. Thank goodness the food was outstanding. You expect a professional & polished service experience here, however it was really awkward. I felt like I almost had to coach these guys. 1st of all the hostesses have a real attitude, but I find that to be typical in many Vegas restaurants so whatever. We were seated soon after we checked in for our reservation. Once seated we were treated to SUPER loud 60’s music blasting into the dining space. It was really odd as it didn’t seem to mesh with the vibe at all. I expect LOUD Music at Best Friend or Beauty & Essex, but it seemed out of step for this restaurant. Also the choice was weird-it’s like someone who knew nothing about the era they were supposed to be highlighting. It seemed as though they choose an “oldies” Spotify Station and thought that would suffice. Stevie Wonder, Ritchie Valens & The Supremes are NOT The Vibe they would mesh with. Carbone is supposed to evoke mid-century glamour and sophistication. Quality and flavor of dinner was awesome though.

Our party of six had a business meeting at this restaurant. The service was exceptional and made sure they came over to the table only when we were ready for the next course. The seafood appetizers were top notch, the entrees of seafood and steaks were perfect and the desert was a great end to the evening. Would highly recommend.

I cannot understand how anyone would rate Carbone less than a 5. I have been here 3 times and always had an over the top experience. Recently, my son and I had dinner. We started off at bar. A couple of superb Manhattan cocktails. We requested a table with ERIC from our previous experience. He was the captain of our wait staff. Absolutely the best waiter we have ever known. IF, you have no idea what you want to eat, Eric will suggest a perfect meal. In our case, we both knew our game plan. I ordered Veal Parmigiano- best I've ever had. Son ordered rigatoni- tremendous. And Lobster ravioli. We both shared. We also ordered the table side Ceasar- once again- best I've ever had. Since we were a late table- Eric had time to sit down with us- he insisted on a slice of cheesecake to the point that he BOUGHT. I was stuffed, but still managed to declare it the finest cheesecake known to man. We chatted for some time, and when we left, we left as Eric's FRIENDS. I will NEVER go to Vegas again, without going to Carbone. It was the highlight of a wonderful trip. Please!!!! Do yourself and your family a favor and book Carbone for an evening in Vegas. And do so well in advance.

1 out of 5 is too generous. This restaurant was horrible and a big disappointment. The food was awful. I ordered minestrone soup and sent it back. The waiter said he knew it was awful but didn’t want to tell me. The waiter was not nice. He was very pushy. He tried to make us order tomatoes and no one wanted them. He said we were missing out. Carbone in New York is very good, but Las Vegas is not. There are too many other good restaurants in Las Vegas and this was a waste of time and very expensive.

We were able to score a reservation and were so excited! We got there right as they opened and seated in a little two person booth. It was so nice and cozy. Our server came over right away to welcome us, and explained some must try dishes. We had the spicy rigatoni vodka and veal parmigiana. Both were absolutely so delicious and we ate all. Next was the dessert cart and we chose the chocolate hazelnut cake. It was good, not outstanding like I would have thought given how great the meal was. For two drinks and the food it came to just over $200 before tax/tip. So it is more expensive but in my opinion it was the most delicious meal I’ve had.

In a week of eating and drinking highlights, Carbone was the highest. Everything about the meal was extraordinary, from the lighting, to the table, to the multi-course design, to the drinks, to the exceptional quality of the food. But even beyond all of that, the service here is likely the best we have experienced in 9(?) visits to Las Vegas (as well as several other destinations). Salomon (I hope I spelled his name correctly) and those who work directly with his tables are some of the nicest, most committed, most polite, funniest, and dancing-est servers we have ever had the pleasure of meeting -- we would go back here (or really anywhere) for no reason other than to hang out with them again.

We went last minute, got there when it opened and asked to be seated at the bar and had no problem getting a spot. We were warmly greeted by Bernard the bartender. He helped us narrow down our selection to the veal Parmesan and the spicy rigatoni. We had Cesar salad and calamari to start. The Cesar salad had quite a kick to it that I wasn’t expecting. The bread was delicious. Everything was paced well and came out just as we were ready. We were very pleased with our dinner. It is pricy, but with splitting everything between the two of us we were more than stuffed and helped keep the cost down. We sat next to two strangers and enjoyed talking with them as well. The one was a semi regular customer who has dined there many times before and also shared recommendations. I will say the individual next to us did not enjoy their experience and said they would never return- however not really sure why bc while we were all dining we spoke about how we enjoyed it 🤷🏻♀️

TERRIBLE Service! Soooo slow and sooooo rude. The food was nothing as it used to be. Definetly dont come ever! Not worth it!

Wish I could give a ZERO rating. Our waiter Chris started out with a sassy comment, took our orders, poured our drinks, then poof was gone. We never saw him at our table again. Not to check on us, not to offer dessert, not to thank us for dinning there or even hope to see you again. Food was meh, Amalfi was better IMHO. I guess eating there is a shot in dark; like gambling, we lost a lot of money. The only exciting thing was eating there on Jin's discharge day at a restaurant they at during their Las Vegas concert (BTS).

Looking past the “Carbone” hype this place actually has good food. Yes you’ll find some of the most obnoxious people here; the types that wear their sleeves up to show their latest RM watch and who put their Rolls Royce keys on the table so everyone can see, but the food is great. Food Spicy pasta is delicious. The octopus is great. Cheese is good. Everything is honestly good. The dessert is a bit whatever and even the staff told us that some of the dessert is not good (2 separate waiters told us that) but apart from that it was great food. Service The service is great. Professional and not much else to say here. Vibe Very unique and dark red vibe. Feels sexy and old school. It’s nice. Overall If you can get a reso here and you like Italian food, then I’d say it’s a no-brainer and you should come here while in Vegas. It ain’t cheap but it is good.

My husband and I come to Vegas every year. Last year we weren’t able to get into Carbone so I made sure to make reservations well ahead of time this year. We had a 6:45 reservation on 4/24 (Wednesday night) and arrived early. Upon arrival we weren’t told they were behind on tables. After a while my husband went back up to check and was told they were still working on 6:30 reservations. The hosts are not the most welcoming and seemed annoyed we checked back with them. We were seated at a table near the kitchen. Initially we were greeted by a guy who took our drinks orders and got us settled… so kind and welcoming. Then another older gentleman (didn’t get his name because he didn’t introduce himself) came to take our food order. The menu doesn’t provide descriptions of the entrees so my husband asked for recommendations. My husband told him we were mostly interested in the pasta dishes and the server said “well you asked for recommendations so I’m giving all of them.” I ordered the fettuccine with mushrooms and he gave me a strange look and said nothing. Food came and nobody ever checked on us. Fettuccine lacked flavor. My husband had the spicy rigatoni which was good but didn’t blow us away. A somewhat famous person sat a few seats down from us and received all the attention from our food server. We had to ask for our check. We were never offered dessert. Initial drink server did ask if we would like more but at that point we were so disappointed in the whole experience we declined. I read so many reviews about the experience here… and we sadly didn't get that. We normally spend quite a bit of time at dinner… have multiple drinks and dessert.. and it just wasn’t the case here. Perhaps if we had a different server our experience would have been different.

So if you are slightly interested in going to Carbone at the Aria, I encourage you to do so. We had a mixed experience based on the following: -Getting into the restaurant was a bit of a mess. Unorganized group of people waiting to get in. We were let in 15 minutes past our reservation time. -Service: This was excellent and the highlight of dinner. If I remember correctly, our waitors name was Eric and he was very kind, knowledgable and good to deal with all-together. -Drinks: No issues here. Really enjoyed the reccomentations the waitor made -Food: This is where it gets strange. I researched the menu leading into the dinner and was verrrry excited for the spicy rigatoni which is what they are known for. My wife and I simply couldn't eat it. I had no idea there would be such an onion presence is in and thats all we could taste. Others may enojy this, but we could not. The appetizers were fantastic though, including the complimetry meat and cheese. We may not go again based on the price vs. how we enjoyed the food, but again, I'll still encourage others to try due to the service

Called in a favor to get in and I thought it was average and not as good as all the hype has you believing. Food was good not great and where it really lacked was the service. Restaurant’s like this the service should be excellent and it wasn’t. Drink orders messed up took forever to get food, etc.

We have traveled the world and our dinner at Carbone was hands down TOP 10 ever. It's a busy restaurant with many say a 4-6 week waitlist for reservations. We were seated in the far back in the romantic section...far less noisy and comfy booth seating for 2. It was our 39th anniversary which was special for us. The atmosphere is "brat pack" hip, the music playlist was fantastic and the dinnerware and table setting beautiful. The bread basket was just the beginning of our gastronomic adventure. 3 types of bread, each spiced and flavored brilliantly. The calamari appetizer was lightly battered and drizzled with an amazing sauce. The lobster ravioli and pasta ragu were delicious. The wine menu is top notch, their sommelier was fun and the wait staff could not have been more attentive. Truly was five star ⭐️ ⭐️⭐️⭐️⭐️

Where to begin... Form the start I guess? I loved everything about our dinner on May 15th 2022. From the moment that we walked past the front bar room to our cozy booth in the main dining room, the vibe was already set. Our server, Athena, absolutely crushed our service. From breaking down the menu, helping us map out a game plan, and seeing the menu through our eyes, she is a seasoned professional. They are extremely fortunate to have her. Food: -The breads that they bake in house let us know that we were in for some seriously fresh food to come! Incredible focaccia. -CAESAR ALLA was as close to as perfect a caesar salad that one could ask for. -SPICY RIGATONI VODKA, we only ordered one order for the table to share because we wanted to really explore the menu, but we all agreed that we should have doubled up on the Spicy Rigatoni. Apparently its legendary- now we know! -LOBSTER RAVIOLI was a perfect texture. Each ravioli was so delicate and full, we compared them to Italian Potstickers! Generous and flavorful. -DOVER PICCATA deboned at the table, delicate, flaky, SUPER fresh. Another stunner. -VEAL MARSALA - the absolute best. We never order veal, but a local foodie told me that I must order the Marsala. Wow. This dish changed my entire perception of what veal could tasting like. Perfectly grilled and sliced. This dish should serve as a sole reminder of how a single dish can expand your palate, live with you forever, and every other veal dish that you order for the rest of your life, will never compare to this Veal Marsala. Only order it at Carbone! Yes, we will be back!

I really like this place. Great atmosphere, great service and great food. My problem is that during the reservation process and their follow up and confirmation texts they continually repeat their dress code as being as business casual. Upon arrival , there were many guest dressed in tshirts, flip flops, tennis shoes, torn jeans, etc. why say something that they are not go king to enforce. After being seated , I asked our waiter about the dress code, he said yes, I know, we are trying. Start turning people away and stand by your dress code. This place should have and should enforce the dress code.

the steak i had was quite possibly the best ive had since i went to tokyo in 2002. this is a high class restaurant which i would definitely recommend for special occasions etc. its very pricey but worth it. you will feel like yo went to the right place in vegas

I never order Veal Parmesan, however a Veal Chop is at the top of my list, but after viewing pictures of this dish, I had to give it a try. WOW, was I surprised. It was awesome...the best ever. Also tried the Spicy Rigatoni Vodka, and it was superb. Two dishes that will not disappoint. The Ceasar Salad was 5 star with fresh greens and great dressing loaded with cheese. The Lobster Ravioli's were disappointing to me however. I would highly recommend this restaurant.

Big disappointment. Nothing close to the Greenwich Village gem. Those parts of the food that were actually edible were just okay. Captain was obnoxious (and I still left a big tip knowing that the others who share it should not suffer). The best and only good part of the meal was the bread and parmesan cheese. The captain repeatedly tried to talk us into ordering the caprese salad despite the fact that I hate tomatoes and my wife cannot eat them due to acid reflux. He insisted we would regret it because they would be the best tomatoes we ever ate. I guess they overordered for the day and needed to push them. The minestrone soup was inedible and sent back. The captain apologized saying it is the worst item on the menu, and he often talks people out of ordering it. The special corn compote was likewise inedible and should have also been sent back. The salmon was okay but the mixture it was served over was tasteless and hard to describe. The chef must have gotten his training at Riker's Island. Plenty of much better restaurants in Las Vegas.

I visited with my family; it was a travesty! Cold food, rude waiter, and disgusting artichoke hearts. I seriously have eaten better at Olive Garden. I used to love Carbon but my last visit has made me question this culinary establishment. The waiter first tried to upcharge us on wine and other menu items… when we said NO he should have continued to be professional. Instead, he practically went into hiding but not until after messing up our order and delivering cold entrees. Oh—they also tried to sneaked a 20 dollar bottled water charge on our bill when we drank house all night. Also—speaking to the crowds this restaurant attracts, there was a couple seated across from us making out and practically procreating in front of my families eyes! I simply can’t justify the prices for this kind of experience; if you’re looking for a good Italian spot in Vegas check out RPM Italian; they will treat you right… maybe even check out Olive Garden. I will not be back.

As others have said, waiting 15 minutes even with reservation. Seems like that was happening with a lot of people. Very loud. Didn't really understand the dishes. The very good waiter thankfully explained the two of us should split the different courses. They told us specials, but not the prices. I hate having to ask, so I didn't get any of the specials. The average price of wine in this place seemed to be over $1,000 a bottle, so I'm not taking the chance on ordering something they do not tell the price on. Really push the potatoes which we ok, and we did not eat. We got the spicy rigatoni. It was ok, but plain. Our bill was 260 with taxes. The place had decent, but loud ambiance. Went on a medley of Motown which I liked. We've hit all the Bellagio restaurants which we like. I think the restaurants at Aria are like the Bellagio for younger people. It was decent food, and decent ambiance, but just can't explain it - it felt awkward for my wife and I

Okay, I'm going to start off with the negative and I only have one thing bad to say. It has nothing to do with the food or the ambiance, both are very good. My issue is this, I made the reservation through the Bellagio Concierge thinking I'd have more pull at getting a "booth". I booked over a month in advance and specified it was our anniversary and I was really hoping for a romantic touch. When we arrived we were told that there were no booths available and that we would be sat in the main dining room. Okay, I get it, no problem. The issue was hardly any of the booths were occupied when we were sat down. 30 minutes later a couple that clearly had just come from the pool, as they were both in bathing suits and she was wearing a cover-up. A bloody bathing suit! In a fine dining establishment. Meanwhile, my wife and I were dressed to the nines!! This may make me a snob, but what restaurant would do this?? Know your audience!! With that out of the way.....the service and food were amazing. We let the sommelier and server decide the menu for us, as that is the way we prefer to eat. Who knows the menu better than they?? Of course, we will eat anything, so it makes it easy for them. Overall, I would highy recommend the place. They just need to get the front of the restaurant clued in!!

Dining at Carbone is a memorable experience. The service is amazing. The staff is very knowledgeable and helpful. The food was exceptional, from appetizers to desserts. We enjoyed it so much!!!!

Four of us had dinner, expected fine dining. The prices reflected fine dining but the service was average. The food was just average as well. It didn't live up to the hype. High class atmosphere but we felt unwelcome. Lots of choices in Vegas, we wouldn't dine there again. Dissapointing to say the least. A shame becuaue the Aria Hotel itself is top notch.

Amazing time! My friends and I melted with every bite. The staff was attentive and very pleasant. Our maître d was a funny guy, he’d crack jokes and really lightened our dinner experience. AND they played Jay Z and up north hip hop all night. Loves this place!

I went here for dinner. The food was good. The servers were quite nice. My problem was the speed of the whole thing. It takes forever to get the food. I was seated for over an hour before hit anything that I ordered. As for the food. I had the Angel Hair in olive oil and the ribeye Diana. But we’re quite good.

My daughter really wanted to try this restaurant so we we were lucky to get a chance to come here. It is by reservation only at least on Saturday nights when we came. I loved the decor of the restaurant and we sat in the section where there was small booths that kept the ambience very quiet and cozy. Most of the pasta dishes are smaller portions so the waiter was pushing us to get other entrees but it was perfect sizes for us because we were going to a show after dinner and didn’t want to be too full. Loved their Vodka sauce and the Orecchiette Vito.

Nice atmosphere. Lots of people. Get a reservation or get lucky with 1 to 2 people at the bar. I had the pork chop. It was excellent and incredibly large-easily shareable. Would recommend. Beet salad was also nice. Seems like all salad options are shareable. Spicy rigatoni - the signature dish was good but was not spicy for me at all. It’s a house favorite but it was a one timer for me. Nice opening treats- bread basket, cheese and a plate of salami. Nice touch. I sat at the bar and the staff there was great. Will likely visit again to try some other stuff.

Service was good, so was the bread and the Caesar salad. Pasta dish was good, but very small. Ribeye steak was awful and more like a Korean BBQ than a steak. It honestly was the worst steak I have ever had. The staff never asked once if everything was ok?

A must for lovers of Italian cuisine. The ambience is great, and so are the prices. :-) But it's worth it. Be sure to order the Caesar salad. It's freshly prepared at the table, a nice little show. Taste-wise, the best Caesar salad I've ever eaten. Meat and pasta are expensive, but good. Make sure to make a reservation or sit at the bar.

Great food and service but music was WAY off. The bread service is absolutely to die for him and everything else we had was delicious. I asked if they could change the music from the hard-core rap that did not really go along with the ambience and was told that that was impossible. It just really ruin the whole experience having to listen to that soundtrack. Everything else including service was on point

We heard that this was JZ and Byonce's favorite restaurant in NYC. I could see why. Super cool, sophisticated, upscale vibe, with amazing food. Rock it family style and you cant go wrong. I highly recommend this spot.

Now part of the Las Vegas dining landscape for seven years Carbone can safely be called an unabashed success, Rich Torrisi. Mario Carbone and Jeff Zalaznick’s homage to Italian-American Restaurants of the mid-20th century still proving a tough reservation thanks to classic Cuisine and tableside showmanship. No doubt a splashy space, the Manhattan original channeled for much of the lavish interior that stretches from Bar to high-backed booths and velvet curtains in the dining room, service is highly polished yet friendly thanks to industry vets like James Muscaglione and bussers that are ubiquitous but unobtrusive. Clearly trying to evoke a bygone era with Rat Pack classics playing a bit too loudly, the bar moreso than elsewhere, it is before menus are even delivered that complimentary bites begin to arrive, the acid-soaked Cauliflower simple yet refreshing while Cured Meat alongside three Breads were all quite delicious – the saucy Focaccia particularly quite addictive. Unrepentant in terms of opulence, hand-painted plates and big chandeliers all part of the show, Appetizers were deferred to the captain who chose Carpaccio Piemontese and Tuna Calabrese instead of a Caesar or Clams, the former riffing on Giuseppe Cipiani’s original with added texture while cubes of spicy Tuna outpaced the quality of all but Sin City’s best Sushi bars. Breaking the menu down into four-courses, though tableside presentations occasionally see things slightly more staggered, Macaroni recommendations predictably include Carbone’s heralded Spicy Rigatoni Vodka though thick double-stranded Gemelli di Rabe with housemade Sausage is actually even better thanks to Greens rendered to the consistency of Pesto. Onward to Secondi, the Pork Chop & Peppers undoubtedly channeling Mario’s time with another Mario at Babbo, guests enticed by the famous fried Veal Chop will be happy to know that the substantial tab is justified by both size and peerless execution while Potatoes Louie take Anna a level up with crackling edges and a fluffy center. Enjoying well priced Prosecco and Barolo with the meal and a double Espresso to finish Dessert at Carbone offers several choices, the Tiramisu and Cheesecake undoubtedly most popular but the Carrot Cake outpacing any other in terms of style and spicing while recently-added Nutella Crunch Cake should please Chocolate lovers before the arrival of complimentary Rainbow Cookies. FOUR STARS: As it always has Carbone offers a rarefied dining experience well-suited to New York, Miami and Las Vegas where prices are often subject to tourists with deep pockets, but unlike many imports the focus on Ingredients, service and style is uncompromised to create a Restaurant greater than the sum of its parts.

I guess when you see the reviews ( the amazing Tik Tok’s, you go in hoping)… Don’t get me wrong the ambiance was a 10/10… Service 7/10, Food 6/10.. the minestrone soup should be just taken off the menu., Waiter said most don’t like it. The waiters never smiled… Right to the point no talk or much interaction. Drink were 10/10 so the bartender was amazing. Pasta was great.. Rib steak was ok ( not alot of flavour).. The side table Ceaser salad was hard to swallow too much garlic(did not feel world famous) and heavy dressing. (keep in mind I’m Italian) . Lemon cheesecake was great!! For the price of the bill over 800.00 I would have liked to of walked away a bit more satisfied. The neighbours to the right of them, I won’t say their name. Beat them in all areas…. I would not come back but this is just my honest review.

The hotel concierge made my reservation. I have never been to Carbone before and when we first got seated, we were sat at a dark low lit table in the bar area which I was confused about cause I hadn’t seen anyone post photos of that area online. Once I asked the hostess if we could move to another table, we went to a completely other room that looked amazing. I couldn’t imagine spending that kind of money sitting at a bar table vs the actual restaurant. Once we sat down I was blown away by the ambiance and booth we were sat in. Service was definitely non existent, there was so much staff on the floor but really nobody attending to us. We even had to ask another server passing by to take our picture because our server was not around. I saw that someone was pushing a dessert cart around showcasing the desserts but it never made it to our table. I love the details of the restaurant decor, ambiance, music, staff uniforms and most importantly the food. All those things were a 10 but Service was 5. The only reason I say 5 and not less was because we did receive all the items ordered. If we didn’t say anything we wouldn’t have received half the experience that we received that night.

We had not dined at Carbonne for several years so I was anxious to see if my memories of the food were accurate. I was extremely impressed with the fine quality of the food. The spicy rigatoni was on point, and the lobster ravioli was decadent and flavorful. Cocktails were a reasonable size for the price, and service was attentive without being hovering. My wife and I wanted dessert but did not have enough of an appetite to indulge. We will be back for that and other dishes which all looked fabulous. Carbonne is a must place to eat on your trip to Las Vegas!

Love the ambiance in BOTH rooms at this restaurant! Make a reservation for sure! Food was amazing. We had the Veal Parmigiana and the Spicy Rigatoni (without the spice, they can do that) and both were great! Very flavorful! We were too full to split dessert (they come around with a dessert cart.... amazing!!!) but they do give you little Italian cookies at the end (shhh! Its a secret!). If you have and take leftovers they give you a nice reusable Aria bag. Very nice. They also start you off with a little veggies with cauliflower as well as a bread bowl, salami, and prochutto cheese, all very good! The cheese was my favorite! Nice waiter and staff as well. If early you can have a cocktail right outside the door in the seating lounge. Great cocktails and wine list as well!

We had friends visiting from back East and they wanted to try Carbone. It's a place that, as a Vegas local, I have been wanting to go to, I just never got around to it until now. There are positives and negatives to the restaurant, but I've settled on a solid 3 star rating. POSITIVES 1. The Service Our waiter, assistant water, and sommelier were all top-notch, obviously the place strives to hire the best in the city. Professional, courteous, patient, and helpful, I have zero complaints on the five star service. I also loved how the wait staff was uniformed in suits and bow ties. Classy. 2. Menu Modifications One of our friends doesn't eat pork, and I really wanted the tortellini that comes with a beef and pork ragu. I asked if the chef would do a plain tomato sauce for us, and my request was granted (it was by far the favorite dish of the table). 3. Food Quality The food quality is excellent and beautifully prepared. All of the dishes we had were tasty, served at the perfect temperature, and were lovely when presented. We ordered a bottle of red wine, caprese salad, tortellini, spicy rigatoni (x2), veal, roasted chicken, duck fat potatoes, lemon cheesecake, and 3 cappuccinos (all shared between the 4 of us) and the total before tip was over $1,200! 4. Complimentary Bread Service The bread basket was our favorite part of the meal! The pizza bread and garlic bread were standouts. I wish I had 10 baskets of bread! They also served a hunk of tasty parmesan cheese as well as pickled cauliflower and salami when you sit down. NEGATIVES 1. Inconsistent Portion Sizes, Massive Prices The portion sizes are all over the place. The veal is absolutely humongous, while the roasted chicken was enough for maybe one semi-hungry person. Ditto for the pastas. We had to order two of the spicy rigatoni dishes in order to split among four adults. The tortellini was tiny and had 8 tortellini on the plate, which meant two small bites for everyone at the table. 2. Ambiance It's modern and peppy, with a beautiful dining room. The problem is, it's LOUD. Like crazy LOUD. We had to yell and still could not hear each other over dinner. If you are looking for a place where you can talk, relax, or have a romantic evening, this is NOT the spot. The music choices were good, but the volume was insane. 3. The Hostess Stand My friend made our reservation almost 6 months in advance, and we arrived about 8 minutes prior to our reserved time (7 pm on a Saturday night). We checked in and were not seated until almost 30 minutes past our reservation time. This is unacceptable, and the restaurant needs to do a better job managing this. The lobby is also very cramped with limited seating, so a bunch of people were all standing around, shoulder to shoulder like we were waiting at a Chili's, LOL. 4. Too-High Prices Look, the food quality is good, the presentation is nice, and this is located on the Las Vegas Strip. But four bites of pasta (regardless of it being homemade) for $45 is absolutely outrageous. The Veal is close to $100! This is a budget-buster, and I don't think I'd go back solely based on the price alone. You can get a LOT of better meals in this city for a LOT less money. BOTTOM LINE I enjoyed my meal at Carbone, but this is one of those "one and done" type of places. It feels like a tourist trap that actually has legit chef-driven food, but prices that are in another orbit.

Service was fantastic. Veal Parmesan. Amazing. Pasta. Amazing. Dessert off the chart. Amazing. Great drinks. Price as expected. For such an amazing restaurant.

There is a reason it is so hard to get a reservation! This is one of the best restaurants we have enjoyed in Vegas. We celebrated our son's 21st birthday here at his request, and he is a true foodie. We loved the Italian formal vibe, with each room being different. The colored tuxedos and management that are so interactive with the patrons just make everything better. Almost everything we tried was 10/10. All the appetizers which arrive at your table immediately upon being seated (that other restaurants now charge for), to the outstanding service...just beyond compare. The Veal Parm was the best any of us had tasted, including our son who traveled to Italy. The Vodka Alla Pasta was perfectly cooked and the sauce was delicious. The server brought us a wine tasting experience so we could all have the perfect glass of wine, and our son enjoyed learning about the wine and having his first glass of wine with such an incredible meal. The server was so kind, that he said he was going to take care of our son's glass since it would always be fondly remembered. That is what kind of restaurant this is! The caesar salad was not tossed at the table, as we expected but was still tasty with homemade croutons and plenty of grated fresh cheese. The portions were huge so we appreciated the server letting us know that they were sharable portions. The dessert tray was beyond compare. We were too full to indulge, but they were kind enough to bring dessert with a candle for our son. The only part I would pass on was the $25 bowl of Minestrone. It was chicken broth based and very bland. It was a small bowl, not a sharable portion. Skip this for the rest of the amazing experiences. While we were waiting for the table (5 minutes) three different people came up to ask for tables. The only option was bar seating as there were no reservations for 30 days. The folks who chose bar seating looked like they were having a great time with very personable bartenders, who were expert mixologists.

We have dined at Carbone at the Aria at least half a dozen times. While we have had some outstanding experiences here, this one left a LOT to be desired. We were seated and greeted by our busier and eventually the table captain. We got water, ordered drinks, then waited for bread. A while. When we ordered, we asked about the meatballs for an app and the captain said “we don’t recommend it as an app but if that’s what you want….” Finally we got our drinks and bread, then within 90 seconds of finishing placing our food order, the meatballs were in front of us. They were delicious, and perfect as a shared app just as they could be for a side. When the captain came back to clear, my husband said we weren’t in a hurry (like, not heading to a show) - since the app had come out so quickly we didn’t want to have everything else come out rapid fire. Well, that was the kiss of death. We waited 20 minutes for our pasta course. The captain never came by, never got our water refilled, never asked if we wanted another round of drinks. Pasta course shows up, delivered by not the captain of course, and we enjoy it. The busser clears our plates, glasses, and bread!so we sat there with a completely empty table, just a sea of white tablecloth and nothing else. No one checked on us. After about 15 minutes, our captain comes out and says our dinner should be out in 10-12 minutes. No drink offer, no bread, nothing. 15 minutes later, he comes back and puts a single meatball on the table, saying they’re plating our dinner now. So this is now 30 minutes with no check in, no offer for drinks, no real acknowledgement that we’re even there. Finally our meal comes and by this point we’re both so tired from waiting that we make it through only about half of each of our dinners (veal parm & snapper Allison). Again, delicious, but the entire vibe was a huge letdown. I don’t come here to get dissed, I come here for a first class dining experience: the only reason I give two stars for this meal and not one is that the food was excellent as always. For such a coveted table, Carbone needs to step back and look at its service. Maybe they’re getting too cocky figuring the tables are in such demand that they don’t care anymore. I can eat at so many other places and get much better service why waste my time anymore? I’ve had great service before but this was one of the worst “top tier” dining experiences I’ve ever had.

The Carbone restaurant in Las Vegas clearly scores with its decor – stylish, elegant and a real eye-catcher. Unfortunately, the praise almost ends there. The food was average and absolutely nothing special. The famous vodka noodles were far too al dente, hard rather than pleasantly bite-resistant, and the sauce failed to convince in terms of taste – very unspectacular for the big name the Carbone bears. The worst thing about our visit, however, was the temperature in the room. Ice cold air was constantly coming from the ceiling, so we were freezing all the time. In such conditions, you simply cannot enjoy the food – an absolute no-go for an upscale restaurant. The attentive service staff, who always made sure that our glasses did not become empty, must be emphasized positively. Nevertheless, I can’t comprehend all the hype about the Carbone at all – for us it was unfortunately a big disappointment and definitely Not worth the money. Be sure to take a jacket with you during your visit.

We had a wonderful experience at Carbone. The meal starts with bread, spicy salami and cauliflower all delicious and all free of charge. The entrees are well prepared with a good variety of options and very large portion sizes. The prices are high but the portion sizes, appetizers and fantastic service make it worth the price. The only bad thing about this restaurant is the reservation process. Good luck getting into the restaurant.

Wow! This was such a fun dinner. Everything was ‘over the top!’ Our sever made the evening a real joy. The food was delicious and the atmosphere was so cool and old school Italian.

Great ambiance. You walk from the calm of the 2nd floor or Aria to an exuberant Manhattan eatery. My chicken dinner came with a bowl of cauliflower, basket of assorted amazing breads, and cookies at the end! Plus a sampling of their famous Espresso Martini.

In many ways I liked the layout and decor of this location a bit more than the NYC venue. However, from the moment we sat down (party of 6) it felt like the server was in a hurry and wanted us to be in one two. Our request space out the courses was totally ignored and when this was brought up it was as though his opinion of how people should want to eat mattered more than the request. Having said all this the food was quite good and we enjoyed the meals. The somme somewhat made up for the server. I'd give it another try since as I mentioned the food was good. Perhaps the server was having a bad night or was indeed rushed.

We had an over the top dining experience! Joey was our waiter who was attentive but not intrusive. Everything was wonderful! It is a true, once in a lifetime dining experience!

So the reviews are pretty close to what we experienced here. Is it worth the hype? Nah, it was good. The spicy rigatoni was tasty, but the veal parm was really delicious. Yes, they do encourage more family style vs. everyone purchasing their own separate meals, which worked for us a family of 3. You get the complimentary breads cheese and Salami all very good. It wasn't overly delicious your basic Italian meal. Our waitress seemed a little upset that we weren't purchasing more food, but we aren't big eaters. We did get the dessert the chocolate cake that tastes like a Ferro Rocher-now that was delicious. I would go again, but there are so many places to eat that we found other restaurants that had a much better presentation and higher end tasting food. It was good Italian food and you'll have to experience it just to say you went.

Our favorite in Las Vegas. We love Bernie behind the bar and always choose to sit at the bar. The food is amazing, the service is top notch, and the atmosphere is great! We have never had a bad meal here and Bernie goes above and beyond to take care of us!

We have been going to this restaurant for years as a family. We go there for special occasions for big events! However this last Friday night we were there, a gentleman walked in was seated with his group at a table right next to ours. The patron was smoking a cigar and he asked if he could continue smoking, and the hostess proceeded to tell him that he could not it was a non-smoking establishment. He continued to smoke a cigar, we asked him to please put it out because we had two of our family members who have asthma and it was beginning to bother them. When we did that he decided to antagonize us and try to start some thing. There was a little altercation staff came over, and did nothing to stop the situation move the other party and explain to him he could not smoke a cigar. At that point we were flabbergasted that nothing was going to be done, and in fact the manager was extremely rude told us to please leave and was trying to escort us out. I’m a little confused we were not the ones doing something wrong we nicely asked about the cigar being put out, but I guess that doesn’t matter. We will continue to let everybody know about this establishment we have a lot of local friends that we suggest go there for a nice dinner lots of family and friends are coming to Vegas and we will not solicit them again!

We have been to Carbone three times since they first opened. The food and service never disappoints. This last visit was with family for multiple celebrations. Everyone from the hostess and wait staff, headed by Eric, was top drawer. The appetizers, including the tuna special, were excellent as were our salads and entrees. And the table side preparation of the Caesar salad and their take on a banana Foster are a classic old school touch. My only complaint is that the music in the first dining room needs to be at a lower volume so conversation at the table can be at a normal level. Previously, we always sat in the second dining room where there is more fabric to absorb the sound and this was never a problem. Also, I miss their homemade limoncello, which they no longer make. But, overall, a great dining experience.

A friend took me to this place. I did not know anything about this restaurant before. I almost did not go, BOY! I am SO glad that I did! The host was friendly and knowledgeable. And the food and wine were amazing!!! I love their side bread so much I had to order it 3 times!!! This place is a must when you are in Vegas. I am looking forward to go back when I am there again.

This is our second visit and we had a fantastic dining experience from beginning to end, the Captain and his crew made sure we were attended to perfectly. The food was perfect too all the dishes came right on time and were prepared to perfection. The table side caesar is a great experience and they ask you how you like the anchovies with I thought was a great touch.

I don’t write many reviews, but I just had to share. Tonight was one of the BEST meals we’ve ever had!! Not only was the food AMAZING, but the service…. the service!! The entire staff was top notch, but Peter was above and beyond. Such a GREAT dining experience!! Thank you!!

Overrated, terrible service! We had a reservation far in advance for our engagement and requested a booth, they sat us in the bar. We asked to move to the dining room and the host was annoyed. Our waiter didn’t explain the menu when we asked questions and was very rude . He disappeared never checked on us. It’s an overpriced Macaroni Grill.

Sat at the bar - awesome service. The veal parm was outstanding as usual, and I always love the bread basket they bring out. Despite some bad reviews, Carbone is a must visit for me every time in Vegas.

Carbone is overpriced even for a Vegas Strip restaurant. The food and service are top notch but even that cannot justify the price. For the table we had caprese salad, meatballs, eggplant parm, strip steak and a couple of desserts. No alcohol and the bill was in excess of $450.

Excellent food...excellent service We always have the best meal at Carbone and make it a must do dinner very time we are in Vegas. I like the three course appetizer, pasta, and main meal....the prosciutto and fresh mozzarella is absolutely delicious

Last year when I went to Las Vegas for five nights in July and August I ate great dinners overall. This year I went to Las Vegas for five nights in the second week of July. Prior to dining at Carbone my dinners so far have been underwhelming as the first two dinners were ok, but the third dinner was exceptional. I ate at Carbone on a Wednesday night prior to the Usher Concert. I've eaten numerous Italian restaurants in Italy and North Beach in San Francisco. They're a lot of dishes I'm familiar with. For my dinner at Carbone I was going to order items I've never had. That first item I had was a glass of red Cazaux from the Rhone Region in France. When I eat at Italian restaurants I order the Italian wines Chianti or Pinot Grigio. Ordering a French wine for my Italian dinner was out of the ordinary for me. Also I never drank a Cazaux before. The reason I ordered this wine was because when I tasted it had a smooth taste without the aftertaste. For pasta I ordered the orecchiette vito. I never ate orecchiette before. The server mentioned that this dish has broccoli rabe and sausage. Something new that sounds delicious I'll order it. The pasta was al dente as there was firmness to it. The combination of the bitter broccoli rabe and sweet sausage created a savory sauce. One of the best pasta dishes I ate at an Italian restaurant long time. The next dish I ordered wasn't necessarily what I consider Italian but American - pork ribs. From the outset the cherry pepper ribs were a man's meal - portions huge with the six bones. From the looks of the dish you would think they were beef ribs instead of pork ribs. The ribs were heavily sauced. Due to the peppers and jalapenos this dish appeared spicy but wasn't. These ribs took me a while to finish yet I didn't get meat sweats. Part of the reason why it took me a while was because of my weakness - warm bread. The compliment bread served at Carbone was warm in the middle with a slight buttery crust. Another compliment item that contributed me of having a hard time finishing the ribs was the spicy salami, which wasn't spicy but fills you up as the more you eat it due to the fat. Overall the cherry pepper ribs were tender. The sauce on the ribs wasn't BBQ but a sweet tasting sauce that brought pork flavor of the ribs. If you're craving for ribs at Las Vegas I recommend the cherry pepper ribs at Carbone. There's a saying "It's not for how you start but how you finish." That's how my dinners were in Las Vegas - started slowly in satisfaction but picked up steam. Sometimes when you order items you never had before they can end up as a disappointment. When you're going eat at Las Vegas for dinner you have "roll the dice" because the new dishes can be a delight satisfaction. From the glass of red Cazaux to the orecchiette vito and the cherry pepper ribs my dinner at Carbone was delizioso e magnifico.

Overall, a great dinner experience here. Phenomenal service from Athena who was warm, funny and professional. She really made our night. The meal starts with an incredible complimentary bread basket and some salami. They don't skimp on the little touches here and everything was so tasty and got us pumped for what was to come. We especially loved the caprese salad (definitely a seasonal pick but in September the tomatoes were perfect). The baked clams were delish and I don't really like clams. I would definitely get them again. The spicy rigatoni vodka was also excellent. It's not going to change your life but it was perfectly cooked and seasoned and very craveable - I would certainly come back to Carbone for this dish. It's also great that you can get 1/2 portions of this pasta as an app. All four of us got our own haha. I would also highly recommend the meatballs. The only dish that we all agreed was mediocre at best was the lobster ravioli. It generally lacked flavour and none of us loved it as much as any of the other dishes. At the end of the meal you get a complimentary shot of limoncello like you would when dining in Italy. Such a fun little touch! One thing to note is that the restaurant has several 'rooms' that have different styles. The first room that you enter feels the least formal and has a kind of trattoria vibe. We were bummed and asked to be moved to the fancier 'chandelier' room and had to wait 40 minutes to be seated there. It was a non-issue because we just grabbed a drink at the restaurant a few steps away in the hotel. But if you are looking for a more glam dining experience, definitely specify which area you want to be seated in at the time of booking.

We dined at Carbone on Saturday night and had one of the best experiences my wife and I have ever had. First off, the service was absolutely incredible. Our drinks were not empty for more than a minute before someone was filling them up. The wine list was huge and offered a great selection. We ordered table side ceaser salad which was one of the best I’ve ever had. We then started with the vodka rigitoni as our server highly recommended it and it did not disappoint. It was one of the best pastas I’ve ever had. Finally we had the veal parmasean for the main course. It was just ok but still good. The resturant itself was amazing, we had a corner cubbie all to ourselves which was very romantic. Truly one of the best experiences we’ve ever had, cannot rate it high enough. 15 out of 10!

Probably the best restaurant located in the Aria. Our waiter was nice & knowledgeable and I enjoyed all of our dishes. I’m pretty picky with Italian food, as I got married in Italy and frequently travel there, but for a stateside dish it was quite good. It’s expensive, as to be expected, but at least you feel that your food is good to somewhat backup the price. I’d recommend stopping in if you’re staying at the hotel.

I celebrated my 60 th birthday what a great experience GM Robert had a great booth selected. I was meet by Nick and Brad our servers what excellent suggestions on food and drinks. The tomato and cold mozzarella salad for starters. Second-course Eggplant and zucchini. You need to try the lobster ravioli. Main entree filet of Dover sole. Finished with a lemon cheesecake.

It was disappointing !!!!! First thing, we had a reservation and we waited for extra 15 minutes at the outside door! Second thing, the food was disappointing!! Our expectation was high!! There menu is small now maybe because of COVID!! They are closed on Mondays and Tuesdays!

OMG, I can’t stop thinking about, I can’t stop talking about how great our dinner was at Carbone Vegas. Richard and Keith took care of us and they were the best duo. Having a great waiter made the difference because of his suggestions and care …yes, we overdid it but not as much as we probably would have! We enjoyed the veal Parmesan bone in…it was the best I’ve ever had in my life. We had the in-house, famous and well-known vodka pasta, it was the best I’ve ever had in my life! We had the most amazing Caprese salad ever in my life! You may get the idea, don’t miss going to this amazing restaurant. It’s pricey, but worth a penny.

I visited this restaurant for a special occasion, expecting the fine dining experience that its reputation and marketing promised. Unfortunately, it fell short in several areas. To start, I mentioned to the hostess that we were celebrating a special occasion, hoping for some form of verbal recognition, but nothing was mentioned during our visit. This small detail, which could have elevated the experience, was entirely overlooked. During the meal, my companion went to the restroom and found a staff member applying lip gloss and playing on her phone. This was surprising and unprofessional, especially given the numerous restrooms located outside the restaurant, and it detracted from the elevated atmosphere the establishment aims to uphold. As for the dining experience itself, the wine and drink menu was underwhelming. I ordered an Old Fashioned, introduced as a traditional cocktail, but it was overly sweet, which left me disappointed. The table-side Caesar salad, however, was quite good and likely the highlight of the meal. Unfortunately, the main courses were less impressive. The veal was somewhat lackluster, and the accompanying sauce did little to enhance the dish. While the lobster ravioli was fresh and well-prepared, it was slightly watery, which detracted from its overall flavor. When served our dishes both were served on cracked/chipped plating, entirely unacceptable for 50$ a dish. Service was another area of concern. Our main server was not particularly engaging or informative, but I have to give credit to our server's assistant, Justin (if I remember his name correctly). He was attentive, knowledgeable, and offered excellent insights about the menu, which helped improve our experience. Overall, while there were a few bright spots in the meal, I left feeling disappointed. For a restaurant that markets itself as a fine dining establishment, more attention to detail and professionalism would go a long way.

I love the Ambiance and service as we had a great host. This is definitely an upscale Italian restaurant that worth trying. Only reason I gave over all and food service a 4 is because we had the lobster and pasta ravioli and it was not what we expected. The noodles tasted like sausage even though it was a blend of vegetables that gave it that taste. The lobster is not inside the ravioli and I did get a ravioli feel at all. I don’t eat any pork so that flavor kind of threw me off. My wife had the Vodka Noodles which she really enjoyed and my sister had the Veal parmigiana. She enjoyed and got full fast. Great portions. The 18 month aged cheese was perfect that they serve before the meal.

This was a guys trip and we wanted a nice meal. The four of us were staying at Aria so we made reservations at Carbone. We were seated at around 7:00 p.m. The music was very loud. Not rock, loud Frank Sinatra style. Way too loud to hold a conversation. Our waiter kept stressing that it was served family style and we should order carefully because we would “Hit the wall” with too much food. Two orders of pasta were about the equivalent of one order in other places. Split four ways, it was almost an appetizer. The fish was old and very small portion. It tasted fishy, in a bad way. The chicken dish was over cooked and just not good. This was the worse meal, atmosphere and service I’ve had at any restaurant associated with or in an MGM property. The best part of the dinner was the water guy kept our water glasses full, a very nice touch since we needed to wash the dinner down. It is an expensive place but about what we expected for a very nice meal. The meal for the four of us was $462.00 not including tip.

The food and service are first class. The restaurant is always full. You need a reservation in advance, sometimes weeks in advance. The ambiance and architecture are great. The music that plays in the background is great, an important part of the experience. We had the veal parmigiana and the spicy vodka rigatoni. Finished it with a slice of tiramisu.

Save your money! If you like small portions, expensive meals, and average food at best, this is the place for you. Kudos to the staff, they really try to make your experience special but still not remotely worth it

I’m not one to ever complain about service however this may have been the worst service i have ever experienced. The hostess were snobby and wouldn’t even look in my direction only speaking to my husband. It almost seems like they are annoyed to have people show up? The server however was the star of the show (NOT). He made us feel guilty for my husband not drinking alcohol and not wanting 100 different dishes. It was only myself and my husband and we ordered calamari, 2 plates of spicy rigatoni and meatballs. Once we finished the cheese and bread we received the calamari, I was already extremely full so we asked if it were possible to cancel the meatballs (we would’ve understood if it wasn’t). The server didn’t even make eye contact and mumbled “ok I’ll cancel it” and walked away. It was extremely awkward and made the rest of dinner very uncomfortable as he remained to have an attitude over us being full. The same attitude arose when we deciddd against dessert. Safe to say we won’t be going back and i was very excited for this dinner as we loved carbone in Miami. i’m starting to think the waiters get commission on what they sell lol. Papi Steak was 100x better

This place is all hype and the food is inconsistent and average. Our waiter was pretentious and condescending. We had a reservation and they finally sat us 30 minutes after and the hostess was rude. Veal parmigiana was good, chopped salad isn’t a chopped salad and a complete ripoff, linguine vongole was gross. Would not recommend.

This was one of the most incredible dining experiences I've ever had! Impeccable service. Joey was our main waiter and he was fabulous! From the appetizers to the desserts, everything was spectacular. I especially loved the Sole flown in from Holland that very day.

Party of 5. Definitely make a reservation. This will keep you from waiting too long. Atmosphere: The music was very loud this time. Several at our table couldn't understand the waiter when he was describing dishes. The loudness caused the waiter to not bring the right items at pasta and dessert times. And when we were trying to get our tickets split correctly, the waiter couldn't hear us. Food: The mozzarella & prosciutto is a great starter. Mozzarella is made on site and served less than 2 minutes old. Lobster ravioli...YUM. So, so good! Chicken Milano was super good. Great taste. Veal Parmesan was just ok. Would definitely choose something else next time. Had lemon cheesecake for dessert, it was sooooo good. Only let down was they no longer offer the carafe of limoncello at dessert. You can only order it by the shot now ($10/each).

I was so looking forward to dining her I managed to get a reservation for Monday night at 9pm. On arrival, there was a woman with dark brown hair who didn’t even look up at me just said “what name” and proceeded to tell me my table wasn’t ready yet I had to wait for the table to finish their desserts. This felt very unreasonable for such a high end restaurant and they didn’t even offer for us to sit at a bar and have a drink we had to stand by the door waiting for our table for 20 minutes despite us being on time. We were eventually seated 20 minutes late with no apology and right by the door. The waiter was really friendly and asked the Sommelier to come over and discuss wine options with us. The wine is incredibly expensive, so he helped us choose an affordable bottle at $120 (we bought 2) The “captain” waiter was very rude. I don’t recall his name but he was tall with glasses and around 50+ He wasn’t attentive at all, more interested in two young girls who were sat nearby. Service was slow and the waiter had to keep coming over to ask if we’d been served yet and go get this so called captain. He tried upselling us seafood towers and special truffle. As he’d gone to the effort of explaining, I asked if I could have truffle with my salad and he said no. We ordered various different pasta dishes and he was incredibly condescending saying they were very small dishes and wouldn’t be enough food. I said I’d seen plenty of photos on reviews and the pasta is sufficient. Sure enough the portions were fine. We tipped the expected 20% but honestly, it wasn’t deserved. I was gutted to have this experience as Carbone has a reputation but I wouldn’t recommend this to anyone. There are so many choices of restaurants on the strip so give this a miss

Our group of four had a great experience recently at Carbone. The Veal Parmigiana is a favorite, however, our group shared dishes and you cannot go wrong. Exceptional food in an exceptional atmosphere!

Bad service. Receptionists and uneducated and arrogant managers. They do not respect scheduled hours and do little about the client.

I Love the history of Carbone. Music fun. It was all good, my rigatoni was a little too Al Dente. Our problem was we paid on room charge. Wrote on receipt tip on table. our bill was 130 and left 30-dollar cash tip on the table and they added 20 tip on our account. How rude and wrong. They did remove it but after we had to clear it up kind of a hassle and embarrassing. We left 30 didn't want to leave 50.

I tried to make an OpenTable reservation one week in advance, it stated someone will get back to me via e mail, no one did. So I had a member of our party of 3, who holds a Gold M Life card call the restaurant directly. He secured 3 at 7 PM, Monday 6-14,. This was our 5th time at the restaurant for all of us, all of us were staying at Aria, the last times were mainly at the bar with the fabulous Bernie. We were seated in the bar lounge which was fine. Service was abrupt and a bit pushy, we started with 1 Caesar split for 3, the server really pushed for 2 salads split for 3, we know the size of 1 and stuck to that. It was more than enough. The Caesar and all entrees were 5 star outstanding. My pork chop was the best I’ve ever had. On previous visits we received bread with salami and a piece of Parmesan, not so this time, we asked and it was brought. The reason for the 1 star deleti0n is the unprofessional way of securing a res, and the standoffish attitude of the server. I figured he pegged us as “low rollers” and not worth his time.

Every time I come to the Aria or Vdara, I come to Carbone. The atmosphere is great . They play some great music in the background. The seating area in thh by e back room is very nice. They bring you a variety of bread which are great, a piece of Parmesan cheese a type of salami and a pickled cauliflower. We ordered a veal parmigian and a rigatoni in spicy vodka sauce which were large enough to share. I highly recommend this place.

Over priced for mediocre food and slow service. It was also very noisy and we could hardly have a conversation! Went there with another couple and we ordered a Caesar’s salad at the table. It was drenched in dressing and not divided into four plates. Ordered a pasta dish to eat prior to our main meal to share… that was a joke… it was so small I had about 2 noodles on my plate! Okay maybe my main meal of red snapper would be better….so salty and overpriced at $49! Waiter never came over to see how my meal was prepared. No concern whatsoever! Dessert came for us to share… the piece of cake was enough for one person ! Would I eat there again? Absolutely not. I can get a great meal in Henderson with much better quality food for a more reasonable price. Very disappointed☹️

If you're looking for a romantic spot, avoid this place at all costs. The service is terrible, the food is mediocre and the music is so loud that you can't talk to the person next to you without shouting. When we asked why the music was blaring, the waiter told us in a condescending tone that "this is a NY restaurant and this is how it's done in NY." As a native New Yorker, it's clear no one there has ever been. Everything is "family" style, which is really just an excuse to charge outrageous prices for pasta with tomato sauce. Don't waste your time or money on this place.

So overrated. As a local, this was my third time here. Don't go to the bar for a $25 drink because it's reserved for diners. They push you to the side. So annoying and rude. Food and service is excellent but dramatically over priced. Hard to deal with the selfie crowd that now fills the joint.

I was able to get a late night reservation on a Friday night. It was packed as expected but the service and food were worth it. The price point was fair. I had the Spicy Rigatoni Vodka and Caesar Salad. Nothing fancy but just good, solid food! If reservations were easier to get, I can see myself coming more often.

Truly a beautiful meal here. The food, service & atmosphere are all top notch. Excellent cocktails (Negroni ) to start the meal off. I recommend the Spicy Rigatoni Vodka, the seafood salad , & Eggplant Parmigiana. A special thank you to Manager John for seating us at a wonderful table.

Went here for dinner with two friends in August. We were looking forward to it as I’ve eaten at the bar here in the past and my friend had been to the New York location and loved it. Started out fine. Table in one of the back dining rooms. We ordered drinks and a table served Caesar salad. Service seemed a bit busy and not super attentive, but came to take our order in a timely manner. I told him we weren’t super hungry, but we ended up getting two pastas and their special fish option. Food was good but plenty of leftovers because the portions are large. Our server basically disappeared after dinner and we never were never asked about a refill of our beverages. Our dirty, half empty plates sat in front of us for over 20 minutes before anybody even offered to remove them. This is supposed to be a high class restaurant and we felt ignored and just set aside. We were disappointed. We also had to flag someone down to finally get our check even though we hadn’t been asked about dessert or even another drink. We deserved better service for the price we paid for our meals.

This was a girls trip. I had made the reservation through my Aria concierge about 2 months before our trip. Our reservation was for 8:30. We were seated upon arrival and greeted by our server Christian. The place was packed but everyone was very attentive from start to finish. The cheese plate, breads, salami, and marinated cauliflower was a great start. We ordered our drinks and placed our orders. The mushroom linguine was delicious. My friends had the lobster ravioli, the tortellini and the clams and linguine. I can’t say enough about our experience. The ambience, the music, food, drinks and vibe was amazing. The food was delicious! We all split a lemon cheesecake for dessert and that was the final exclamation point to our meal! Cannot wait to go back

We have tried 3 x on 3 separate visits to Vegas to get in to this restaurant and were finally able to secure a table. The food did not disappoint. It was fabulous. The service was excellent. The wine selection was very good as well. We are knocking it one star down due to the fact that we were told that they had a strict dress code, we need to adhere to it, or else etc etc. We have no issue with a dress code and dressed accordingly. What a let down when we were seated and all around us were people dressed casually in jeans, sneakers and t-shirts. Not sure what is happening in Vegas lately, but if you ask for a dress code, then stick to it. Or else, just let people in from the pool... and don't send texts or emails reminding us of your dress code, because obviously it does not matter.

I was very torn on what rating to put in this review. I had the Angel hair AOG. It was perfect. The steak Diana was completely amazing, one of the best things I have eaten. However. I am not a slow eater. And I was seated at 745 and walked out at 1030. Thats way too long for me. I spent a ton of time just sitting there staring into space. They rarely checked on me or even said anything. Soooooo so slow.

We loved our dinner here. From beginning to end, service and food were both amazing. We ordered everything. Wine was also amazing. Do not recall exactly which one it was; but it was recommended to us and we loved it. The bill was also not bad for 5 guests, under 1000 USD. Our dear friend Natalie treated us and we could not be more grateful. Ambiance was nice as well and we all enjoyed. If your in Vegas, try here, you will not be disappointed.

The food here is excellent and served in nice, large portions. It's authentic and absolutely delicious. It's also a bit pricey, but you get what you pay for and the servers are happy to do splits if you ask. They have a nice wine selection as well. There are two rooms - one is quiet and intimate and the other is vibrant and loud (with the bar). My only complaint is that the pretentious little girl who seated us was dripping in bad attitude. Even though we had reservations and were dressed appropriately, it was clear that she loathed seating us (which made no sense) and then made an audible huff when we didn't want to accept our initial booth table assignment - preferring a table instead. I'm surprised that a high-class restaurant like this would keep somebody like her on staff. There was no visible manager present for a complaint.

Loved this place. Sat down in a beautiful booth, waiter came with a huge wheel of parmigiana and chopped off a chunk for us to have with some fresh bread. Also brought cauliflower in a bowl that may have been pickled. Appetizer: fresh burrata with heirloom tomatoes (fabulous), dinner, meatballs, tortellini and rigatoni with vodka sauce. Not a fan of the vodka sauce. Asked for some extra marinara for the rigatoni- I thought it was dry. Great dessert. We really enjoyed the experience. We highly recommend!

Let's just get right into it. I'm an Italian/American born and raise in Chicago which has probably "the best" authentic Italian restaurants in the country. I'm sure some NY'ers may disagree, but whatever. Carbone's...food authenticity (bad). Not sure what part of Italy they're from, but I question it. Price (ridiculous). Portions (Even more ridiculous because of what your paying!) I had the grilled octopus which is my all time favorite appetizer ($32!) SERIUOSLY! The most I've every paid was maybe $18 and I got a plate full! This place, 1 baby octopi. Out of all of the 100's of Italian restaurants I've eaten at, this could've been the worst. Grilled means GRILLED, with a crisp, not moist and chewy and drowned in juices from veggies and potatoes, and get this jalapeno peppers. Hey, If I wanted my mouth to burn after eating this I would've went a Mexican place for chips and hot salsa! Oh, by the way, the wine, a generic Riesling ($18) a glass. I can get 2 bottles for that price at Binny's. Martini's ($24) and they were miniature 1/2 glasses. Main course (Linguini Vongole), $30 ($2 less then the appetizer). Restaurants in Chicago, guaranteed you'll get at least 25+ baby clams with at least 1/3lb.+ of pasta. This place, 9 clams and MAYBE a 5th lb. of pasta. Hey Carbone, linguini is $1.25lb. retail, 99 cents on sale...Throw some damn pasta in the plate! The dish was loaded with pesto, had a creaminess to it just like the appetizer and was TOTALLY tasteless, which was extremely surprising by the amount of pesto on it. On a positive note, the place was beautiful, the service was great and the server was very knowledgeable and knew the menu, that's why I gave it a 2 rating. But, for the food authenticity, price and portions, a definite 1 star. Fire the chef or whomever is in charge of the recipes.

The place and decor is beautiful, but ends there. Not worth the wait for the reservation, the meal was tasteless. We had the beef tartare tasted like nothing, the meatballs were good but not great, the veal parm was decent and the shrimps were dry and tasteless. The vodka rigatoni what they claim to be known for, tasteless. Not impressed and expensive!!!!!!

We lucked into a reservation as it seems you need to book many weeks in advance. The food was outstanding but the pricing was crazy. My wife has a small chopped salad and it was over 25 dollars. The kids had plain pasta and each was over 25 dollars. I had a bone in strip steak, and while super delicious, was $135 dollars!!!!

First, the ambiance is horrible. Not at all what I expected from a high-end Italian restaurant. Second, we walked out when my wife and I saw the ceramic tableware was chipped fairly heavily. When I called it to the waiter's attention he simply indicated, "Yeah, a lot of the tableware has chips. Look, her it is on your plate and bread plate." Huh? The response was not at all what I would expect. I indicated that this is a health concern as the chips can harbor bacteria. No restaurant should have chipped porcelain or ceramic--let alone nearly every piece on the table. Third, the staff was very friendly and the front staff were great. We didn't even order dinner. I simply asked for the check to pay for the bottle of champagne. So far, Carbone was the biggest disappointment of all our Vegas dining experiences over 11 years. I sincerely hope the management starts to take some pride in the business in order to get the restaurant to a point where the price and hard-to-get reservations are actually justified. PASS!!!

We had an awful experience. We arrived early for our 7:15 reservation yesterday. They send you an email prior to your reservation stating that there is a 15 minute grace period and the party has to be complete. We were told they were running 15-20 minutes late. Fine - understand things happen. Checked in with hostess at 7:35 (20 minutes post reservations). Checked in at 30 minutes. Checked in at 40 minutes. At 45 minutes I asked the hostess again when we would be seated. She said the table was settling up. I asked to speak to a manager as our evening plans were now in jeopardy. She continued with her unhelpful, dismissive attitude and RBF, and did not get a manager. At 51 minutes, we were finally seated. No apology. No complimentary drinks as a gesture of goodwill and to acknowledge that you ruined our plans. It's one thing to send an email to patrons saying we could not be more than 15 minutes late and there was a 2 hour table limit, but it is completely unacceptable to then not hold up your end of the bargain and seat us at our reserved time. We made a reservation for a reason. And we watched them seat other parties of four who arrived well after us. Food was good, nothing special. But the experience was spoiled by the wait and the poor service. I expect more for a $400 meal. We have been here many times, but won't go back and DO NOT RECOMMEND, especially if you have plans after dinner. Carbone - DO BETTER.

Veal Parmigiana was bland, spicy rigatoni everyone raves about was not very flavorful cost $32 for meh. Gave 2 stars vs 1 as grilled octopus was a good appetizer. All on with too $375 for the 3 of us. I’m happy to spend that much for great food, for OK food I have to suggest you pass.

Ambiance was great. Service started out excellent then a larger party was seated in room next door and it felt like we never saw our waiter after. Based on reviews I ordered the spicy vodka pasta and the veal Parmesan. The pasta was ok, but nothing a competent home cook couldn’t just make themselves. The veal was good, the house sauce over it was very flavorful but not sure it was worth the $95. My wife got the eggplant which she liked but the order is actually service for six. Place was good but certainly not the best meal we had all week and not sure worth the price/hype

This meal was a whole vibe!! First time eating here, Bonnie was the best host! We were celebrating my daughter’s and son in law’s wedding anniversary and my early 50th birthday! We had a delicious Caesar salad prepared table side. We had enough food to share as a table. The Dover fish is a must try!The drinks were amazing and the service was even better. They also have an awesome powder room. This is a great meal if you want to spend a little extra for a special occasion.

I will start by saying we frequent Carbone in NY and Miami and have become accustomed to their excellent service and hospitality. Unfortunately, their Vegas location was extremely disappointing and fell short. Our reservation was for 945, which we were early for. We were seated at least 15 min after 9:45. While we were waiting on our reservation we thought we would have a cocktail at the bar. To our dismay, we were approached by an extremely rude bartender letting us know in a condescending, aggressive manner we cannot sit there. Instead of giving another option he rudely dismissed us. I asked to talk to a manager but in return he surprisingly listened to our complaint and said a quick apology and walked off. He could not have cared less. It seemed as though he was new and had not been trained properly. I wanted to leave but we were starving. After ordering a caesar salad the table was left there a full five minutes without table side service. When the SA got to the table to make the Caesar salad he was completely mute, not saying a word to us.. not even a "hello". It seemed as though there were not enough SA's and maybe the server was too busy. For the price I was extremely shocked at the service towards guests and careless attitudes. We will never come back to this location again. Terrible mistake. AVOID this Carbone location !!!! This is not an accurate representation of the Brand. Extremely disappointed.

Friday night table at 8:00pm- perfect. Fresh bread, salami and picked veg hit the table. Ordered a couple of glasses of Pinot Noir. We started with the grilled octopus ( highlight of the meal) followed by spicy rigatoni a la vodka and lobster ravioli. Side of broccoli rabe. Food was outstanding, and I must mention Keith and Pete who took care of us all night. This is what dining out should be. Too full for dessert but couldn't resist the cart so took a slice of carrot cake back to the room. 2 comp shots of limoncello rounded out the meal. Carbone is my first choice when in Vegas and this was the best meal and service yet! Jennifer

Joined some friends here for dinner on our last night in Vegas. 2 of the couples had been here before and they ordered for the table. Before long our table was completely full of some fabulous dishes that we all shared. Service was top shelf.

I'll start with saying this was my third visit to a Carbone (twice here in Las Vegas, once in Dallas) and I've never picked it on my own, only gone with others who wanted to go. My visit a couple of weeks ago proved, once again, this place is mostly hype. We were seated promptly and our waiter took our water/drink orders and remained decent throughout the night. I wish he would have been the only server we dealt with but, after ordering cocktails from him, the drinks were delivered by a creepy guy in a dirty apron who had the personality/professionalism of sheetrock. He continued to handle the drink service throughout the meal. Each of our cocktails was poorly-balanced and my wine (recommended by creepy drink fellow) was bland and didn't complement the meal. The meal began with the Baked Clams which were tiny, tasteless, and reminiscent of the quality you'd find in a low-end Jersey diner. Strike one. I then had the House Chopped Salad which was nothing more than some random greens haphazardly thrown on a plate with a minor drizzling of dressing. Decent, but not high-end restaurant level. Then, it was time for entrees. My companion had the Veal Parm which was good, though nothing special. I unfortunately had the Veal Marsala (on the recommendation of the server) which was $100 worth of inedible garbage. The few bites I had vacillated between tasting like mush and tasting like a charcoal briquette. Literally once of the worst entrees I've ever had, much less in a "fine dining" setting. Upon checking on us, the waiter seemed almost offended I had barely eaten my meal, but didn't ask if I had a problem with it or offer something else, just offered to bag it. It ended up in my room trashcan upstairs. Would have been better off just putting $100 on black in the casino or lighting the bill on fire. Atmosphere was primarily lower-end people Instagram-ing their meal (90% "Spicy Rig") and acting like they were getting cool points for dining here, food quality be damned. Noise was loud enough that it was difficult to have a conversation. I expressed all of the above when I received the e-mail survey the next day, but I received nothing more than a useless form e-mail in return where they promised they'd use my feedback to "continue to improve our services." I realize Carbone less a high-end restaurant than a business venture concocted to entice rubes into thinking they're eating (and paying for) top-level cuisine, when it's really little more than gussied-up Olive Garden/Chef Boy-Ar-Dee. At least make an effort, though. Major Food Group CAN produce quality food and I've had it at Torrisi, The Grill, Sadelle's, and their partners at Marea just a couple weeks back. Carbone, however, is a scam with average service and over-sized, over-priced, and underwhelming dishes. If you want to pay a small fortune for food to post on IG or Tik-Tok, this is your place. If you want a decent meal, service, and ownership that actually gives a damn about your dining experience, look elsewhere to the minimum of 25-30 Italian restaurants in Vegas that place this Social Media creation out of the water. Poor value. Poor service. Terrible food.

We had an unpleasant experience because we got food poisoning. The restaurant is loud, the food was mediocre and overpriced, and the service left much to be desired. We ordered the Dover Sole, the menu said market price and we didn’t inquire since it was just sole… we were charged $155. As a reference, we had a party of (4), we ordered (5) standard drinks and our bill was $637.25.

Helpful & friendly service, delicious food and a beautiful setting made for a great dining experience. Our appetizers were oysters & soup, mains were lamb chops & I had the Snapper Alison. We finished with their famous lemon cheese cake. Every forkful was delicious. The waiter carefully explained how each dish was prepared & nd the whole wait staff was efficiently excellent! Total price with drinks tip & tax was about $520.

I rarely post but felt so strongly about this restaurant that I felt like I needed to now. We were so excited to go here to celebrate my birthday - we left feeling so angry and disappointed. Our waiter recommended every one of the most expensive dishes and talked us out of dishes we were going to order in favor of more (obscenely) expensive dishes. We wanted to order the veal parmigiana and the waiter emphatically talked us into the tomahawk instead. Well, he didn’t tell us it was $550 (instead of $90 for the veal). It was also terrible. Very fatty and it didn’t have much taste. The ($185) truffle tortellini was bland. The Dover sole was pretty good. Our waiter brought over a side (acorn squash) that we hadn’t ordered because we were such a “fun” (read: idiotic table that listened to his recommendations) group. We found out later he charged us for the side we didn’t order! They did give us dessert for free which wasn’t very good. He came over 20 minutes after we finished dessert to ask if we wanted coffee. We just wanted to get out of there. He stood over us while we paid the bill on the machine and decided on the tip which is obnoxious. On the positive side the sommelier picked out a good bottle of wine and the bread and rigatoni were very good. I really felt abused and disappointed after we left. Last time we ever go to Carbone in Las Vegas.

Horrible service, it seems like 100s of servers speed around, but apparently not for the guests. The bad taste music was so loud, everyone had to scream not only the food order but also at table. When we asked if please the music could be turned down a little bit, Incomprehensible stare as answer. Arrogantly ‘served’. Food totally overpriced and a far cry from real Italian taste. Will not go back!

Made reservation, promptly seated. My food was the Vodka pasta, and a side meatball, both very good. Glass of prosecco to start, Amarone with the meal, Tiramisu cake for dessert. all was good, service was very attentive without being overbearing. Would definitely return.

Easily the worst restaurant food I have ever experienced. We were celebrating our 31st anniversary and felt so lucky that we were able to secure a reservation at Carbone. The hostesses and staff were very friendly, attentive and our food came out quickly. I have never had to politely “discard” my food into a napkin, but it was necessary. The cocktails were very small, yet expensive- but we knew that going in. The bread basket consisted of a couple of breads, one being something greasy with remnants of sauce that Little Caesars would refuse to sell. The Gorgonzola salad was oily with a strange combination of flavors. I love Gorgonzola and this salad was inedible. The fish and asparagus I ordered was sub par- I didn’t eat it. How can you mess up asparagus ? I thought I’d share some of my husband’s pasta, since I didn’t care for mine. They tell you everything is family style but the “famous” rigatoni was so small we had a good laugh over that. It was a tiny portion served on a salad plate. You’d think that pasta is cheap so they’d be generous with that? I was starving so I had a protein bar when I got back to the hotel. I suppose the good news is that I was able to stick to my diet and only consumed a few bites of salad and the protein bar that I brought from home. I rarely write reviews unless the experience was superb or really really awful. I am hesitant to complain because I know that the servers work hard and did the best they could. I hate to leave bad reviews but I don’t want someone else to reserve a “special” date night out here and spend a lot of their hard earned money on terrible food.

The restaurant is very romantic, wait staff very professional, makes you feel appreciated, but food was not to our liking. Big family style eating plates. Got the veal marsala and it was full of fat with big chunks of meat, sauce had very little taste. Ordered potatoes in duck fat..again did not like. The house salad was very good. Sometimes making things too fancy hurts food quality.

We were very much looking forward to dining at Carbone for the first time since Covid. Food was excellent - especially the spicy rigatoni vodka they’re famous for. Their chefs are wonderful. Toward the end of dinner, we asked about limoncello and how this was something we got at the end of dinner in our previous visits. Our server said “we don’t do that anymore it cost the restaurant too much money.” We were kind of surprised and then he suggested “I’ll get it for you”. The bill came next. We asked to do a room charge. The ability to charge to the room went down. (Technology. Sometimes this happens.) They asked for our credit card to pay. With a bill totaling $800 for the two of us, we were hoping to apply our dining credits to the dinner. But without a room charge, we didn’t understand how this would happen so we asked. Our service captain said we just go to the mlife desk and they’ll fix it. This didn’t sound right to us… and the last time we were at the Aria was during the cyber hack - so we were skeptical of this being the down process for this (and about tech in general). We asked the managers name who could confirm this for us. He did not give the managers name and was extremely unhappy we were pressing the issue. We pressed again. while he doubled down, the manager Johnny was walking by - the service captain called him over. Johnny confirmed this was the process. We voiced our confusion over how this would work - and he assured us that the rewards desk would be able to handle it and this happens “all the time”. We paid. We left. We went downstairs to the mlife desk and told them what transpired. They were bewildered and said “this doesn’t happen all the time” and that “we can’t just comp restaurants that way. This is up to them to handle the payment and transaction.” We were stunned. The two managers gave us their names. We asked what to do and they said we needed to talk to the restaurant. So. We went back upstairs. We asked to speak to Johnny. We told him what the desk told us. He did not seem surprised. He said he would try to refund the charge tomorrow and charge it to the room. He did follow through with this. The charge was eventually placed on the room. I’m not the best writer: so expressing these events in words is challenging. But what made this situation so infuriating to us was the gaslighting that occurred in the restaurant. We voiced our concern of what would happen - (which is what DID happen) and the service captain and manager lied directly to our faces to move us along and make us someone else’s problem. Ultimately having us running around the resort looking for SOMEONE to help us. We will never return to Carbone. Our fond memories of the place are gone. It’s been 3 days and we are STILL angry about this experience and how pathetic Johnnys “customer-no-service” approach to management ruined the dinner we had been looking forward to for months…. And came close to ruining our entire trip overall. But we will try to not give him that much power. And just as a last note, : in the end we never got any limoncello.

This place has gone so downhill over the last few years. It really sad. The first time I was there was magical and sense 2021 it’s been very disappointing to see the quality and service go from being good to terrible in at least two years. Much better experiences in Vegas for a memorable dinner. We spent 1000 for a pretty standard three person dinner. Just terrible.

We ate here for the first time and our opinion is the food and service was fantastic. We ordered the vodka pasta and the veal parm. Both dishes were excellent. To start they gave us a bread basket with salami and some parmesan cheese chunks, delicious. It is on the pricier side but we knew that going in and were very pleased with the food. We will go back next time we're in Vegas.

We stayed at the Aria Sky Suites so we could visit this restaurant as they have guaranteed reservations for Sky Suites guests. The Aria concierge confirmed the reservation. Arrived and was told there was a mix-up and our family could not be seated. We were left with no reservations on a busy night and had to try and secure something else at the last minute (which is nearly impossible in Las Vegas at a decent restaurant).

We had a 5 PM reservation—the restaurant’s opening time—yet were seated in a cramped two-person booth right by the kitchen entrance despite the place being empty. After requesting a different table, we were moved just a few spots down, still uncomfortably close to where the waitstaff congregated. The music was loud and outdated—think 1950s diner tunes—making conversation difficult. The menu lacked ingredient descriptions, leaving us entirely dependent on the server. As someone sensitive to heavy, creamy sauces, I struggled to find something suitable. Prices were outrageous. A $50 chicken dish came with just chicory—no sides like mashed potatoes. My chopped salad was $25, and the food itself was mediocre at best. Overall, an overpriced, unpleasant experience. I would never recommend or return.

If this was just a review to the food it’s 5 stars. Started with the minestrone and was top notch. The carpaccio was equal to the best I’ve ever had. Sadly the service was below par. A check back is a must for me when I’m fine dining. If I have to also ask for a soda refill....I just feel that at that price point you should be well attended to. Second time going to Carbone. Service is always exceptional. Their bread service pretty much fills me up. Delicious food.

Just had to try it. We arrived for late dining and opted for sitting at the bar. 30 minute wait which was except-able for us…….. Walked out about $400 lighter and satisfied ( that was all). Very good quality, “ BUT” Lots of better options for this amount of money.

I was very excited for a night of "amazing" Italian food. Food was amazing, service was "meh" for how many staff were there. We were made to wait for our reservation - things happen, but it was an excessive wait time. Made it to our table and ordered both red and white wine. We had to ask for an ice bucket for our white - they just placed it on the table. Had to ask for water refills, etc. I'm not "bougie" by any stretch, but when paying those prices - you expect a touch more. Again, the food did not disappoint. Veal Parm is a MUST. The bread basket was overflowing with amazingness. Cesar Salad was delish.

Once again we had an amazing meal and experience at Carbone. The bread, cheese and tomatoes were incredibly fresh, the pasta was cooked perfectly and the seafood was top notch. Each dish was tastier than the next. Dion and Ramon made our dining experience even more superb. They were friendly, upbeat and knowledgeable. I think I have to eat here every time I come to Vegas. If you haven’t gone, go!

We made a reservation and we were seated in the bar area. We only became aware of this fact after seeing other patrons requesting to be seated in the actual restaurant. We were appropriately dressed and didn’t ask to be moved because the food was already ordered. I can only assume this happened because we are black and there is a history between Italians and African Americans. So sad to see in 2022 that some things never change. The best part of the meal was the complimentary cookie delivered at the end.

We've been to Carbone a few times over the years and just went back last week - once again, it did not disappoint. Service was attentive and food was spectacular - our favorites are the caprese, lobster pasta, and of course the parmigiana. One thing I was surprised about that I did not remember from prior visits was how great the desserts were too! Will definitely be back again.

Fabulous experience. Service was great - waiter very attentive. Food was fantastic - had the Caesar salad and burrata and then spicy rigatoni and salmon. Salmon was the weakest of the dishes but still good.

We come to Carbone each time that we visit Las Vegas and it never disappoints! The service is always fun and friendly and the food and drinks are spectacular. Our favorites are the chicken Parmesan (must be ordered a few days ahead), lobster ravioli, and tortellini al ragu. And don't forget dessert-they have an old-school dessert tray and a hazelnut chocolate cake that is to die for!

The food was just ok. I ordered the chicken scarpariello and spicy rigatoni. The chicken was not as tender as I thought it should be, so I barely took a bite and had them box it up thinking my husband could try it. The server gave me someone else's to go bag and when I got home I called to tell them of the mistake. They said they couldn't verify that, and I even offered to bring it back but they said there was nothing they could do. In fact, the hostess I spoke to was very rude about it. As a former hostess of a top rated restaurant in a billion dollar hotel chain, I know that this is unacceptable, and they could have been more apologetic. As a Vegas local I won't waste my time on them again.

We don’t have a reservation but we walked in at sat at the bar. Nick was our bartender / server and he was amazing. We ordered Lobster Ravioli and linguini with clams. They served us an amazing g assortment of breads, salami, cheese and picked cauliflower to start. And an Italian wedding g cake slice to end the meal. With tiramisu and lemon cake for dessert, the food and service was incredible.Highly recommend this place. Its fun and vibrant atmosphere reminds me of an old Italian family!i

I’m writing this review to warn other diners about Carbone Las Vegas and their exorbitant cancellation policy. Be extremely cautious before booking. After having to cancel a reservation due to unforeseen circumstances, I was shocked to learn that Carbone charged an extremely high cancellation fee — far beyond what most fine dining restaurants charge. I immediately contacted the restaurant directly, explained the situation, and politely asked if they could either refund the fee or simply move the reservation to another night. They refused to offer any flexibility. No refund. No rescheduling. No willingness to work with a customer in good faith. The attitude was dismissive and unhelpful, which was disappointing for a restaurant that claims to offer a “world-class dining experience.” There are so many incredible restaurants in Las Vegas that treat guests with respect and understanding — I strongly recommend choosing one of them instead. Don’t risk being charged an outrageous fee for a reservation you can’t attend.

Carbone is over rated. The service is okay. Not great. When you order a $240 Brunello and ask for it to be decanted, it should be decanted. It wasn’t. We had cocktails in the hope that the wine could open up. We noticed other tables had decanted wine. Inattentive service at over $250 pp is not what you want when you book Carbone. The $100 Veal Parm had lots of breading, very little cheese (parm ?)and almost no seasoning. The $150 Dover sole was good but also not well seasoned The bread, prosciutto with mozzarella were excellent. I probably will not return to Carbone which appears to be trading on hype rather than service and product

We have been to Carbone twice before and the visit was fantastic. This time, not so much. The waiter was polite but distracted. The food was acceptable but not fantastic, as it was in previous visits. We will not be back.

The food was wonderful but VERY pricey. The music ridiculously loud and servers didn’t take the hint when we kept asking them to repeat specials. We at one point said that the music is super loud but they ignored us. The servers tell you that many options should be served family style (with Covid, really?) but they are not noted on the menu. They have a very weird way of getting you to order and seemed pushy about us getting their penne alla vodka. I would not eat here again with so many other options in Vegas.

My wife and I enjoyed an excellent dinner at Carbone. Table-side caesar salad was very good. Additionally, the chicken parmigiana was excellent. Friendly and helpful wait staff.

Made reservations a month in advance and the only available time was 5:30pm. When we arrived, there was a line to get in. The dining area was very nice , the music that was playing was outstanding. The service and food was. excellent.

Great food and better service. Ate here last week on a bachelor party. Deon was our server and he was one of the best I’ve encountered in fine dining. This guy really knows what he’s doing. He guided us through the experience and it was one I won’t forget. Thanks Deon, Kevin and the rest of the crew for a memorable meal.

Everything about this place is top notch, from the atmosphere, to the staff and of course the food. Athena, who was the Captain for the night, guided us perfectly through the menu. I was extremely impressed with their Piedmontese inspired carpaccio, which had walnuts and mushrooms from the region. Another reason to return are the perfectly cooked and seasoned meatballs. These were ordered as an after thought and they may have won my favorite dish of the evening. Get ready for the obligatory comment on the house specialty, spicy rigatoni. I will leave it to others to describe but my advice is just order it. It’s one of those dishes that starts off great from the first bite and proceeds to get better the more you eat. If you are lucky enough to be near Carbone and can get a table you will not be disappointed.

I was expecting a superlative experience at this well-known restaurant. Unfortunately, it was underwhelming to say the least. The veal parmesan and the rigatoni, which are two of their marquee dishes, came out lukewarm…. This, after a 45 minute wait for our food. The manager Suzanne was very understanding and gave us a better ‘experience’ than our server! Service was very disappointing and Our, was conspicuously absent during most of the dinner, until I asked where our food was, which he said he would check on it . Keep your expectations low, and you will be fine…this is not the Carbone in New York City.

The atmosphere and service was classic Italian dining. To start with I had Carpaccio Piedmontese, then for the main course the Ribeye Diana with Potato Louise. Topped off with a slice of cheesecake. Perfect 👌

I held a business dinner here upon recommendation. We had a 545 pm reservation and were held waiting for 15 minutes outside. The ambiance is nice but the music was sufficiently loud to render conversations more difficult. The waiter and staff were friendly and pushed their favorite dishes. The wine list was fully priced and I felt rather unoriginal, though probably fine for most. The salads and appetizers were good. The entrees were just mediocre. I had the Dover Sole which was not wonderfully deboned and just wasn’t very good. My colleagues had pasta which seemed a better choice. Overall, for the price, I was underwhelmed. They are priced like some really top restaurants and the experience just didn’t live up to the price point. Nothing was horrid, but a good dinner should be a work or art, and this was just ok at best.

I knew what i was getting into price wise and hype wise. This restaurant did NOT disappoint. Elegant and professional right from the start. We ordered the caesar salad which was prepared table side, calamari (big portion) the cheese, meat and bread at beginning was all delicious. Of course we had the vodka rigatoni, perfectly al dente and the veal parmesan. All large portions that were already split for us to share. Other couple was happy with their pasta dishes too. The atmosphere was old Hollywood with 40's and 50's music playing. Very classy. Great end to my birthday.

Incredible food and impeccable service. Carbone is a must for Italian food in Las Vegas. Reservations are needed and you can only book 30 days out. Well worth the effort. The spicy rigatoni is the key. Spilt an order as a side dish

Ate here on our second night, service was fantastic from the greeting on. Our captain did a fantastic job explaining the menu and available specials for the evening. We had Caesar table side and prosciutto and mozzarella to start, both starters were great and big. Got the spicy rigatoni to share and the lobster ravioli for the wife and veal Marsala for me. All dishes were great portions felt big. Next time we visit we will share the veal and not get the prosciutto. Over all great experience
