Our meals -- I ordered sushi, and my husband had steak -- were excellent and presented so attractively that I snapped photos. While prices were high, the quality also was outstanding. The wine, however, appeared to be priced way beyond its value. Service and atmosphere were what I would expect for the prices: very attentive waitress and attractive surroundings.

I had sushi for appetizer with plenty of ginger and wasabi and then a steak that tasted great. the ambiance was wonderful and this helped great a very happy and positive feeling of people enjoying a great night out.

Had the most amazing meal with friends while staying in Chicago! The crab claws were huge and tasted great. Fabulous lamb chops! Staff very pleasant and whole vibe great.

Worst service I have experienced in recent memory. We reserved in advance for a larger party of 16. Service staff seemed totally unprepared and overwhelmed. They disappeared for 15 minutes at a time not even refilling water. Waited over an hour before drinks arrived, never asked for starters. Many ordered second drinks and never received. We were prepar d to order a couple dozen oysters and we cuoldnt find anyone to take the order, They had one drink ipad for a table of 16 and when we asked for another they acted like it was an impossibility. After nearly an hour they came arond askg for food orders saying they could bring oysters with our food id we wanted. Really. Food was nothing special. 50 bucks for a $12 steak that tested your teeth but it was properly prepared and well flavored. Overall I’ve had better service at Denny’s. I asked for a manager and was told one was not available. I did speak to someone as I left who said they would look into it, asked for my hotel room number but never heard anything from anyone. I was embarrased to have taken a group to this place. Save yourself some trouble and find another place to eat.

It was a Saturday nite and the place was empty, the hostess was friendly but the staff was so bored.. and in a restaurant city like Chicago, I don't like unfriendly servers. The food was mediocre at best and the dessert was some kind of pumpkin ice cream with espresso and pepitas (seriously weird). Just an overall lackluster performance and there are amazing restaurants in Chicago (its clear why this place was empty). I left depressed.

A Great Evening, Service & Food. The grilled calamari was the best calamari I've ever had. The Cap Steak was huge, tender, and excellent. I would go back tomorrow.

If you get the opportunity, stop here for a wonderful experience. Service was beyond compare, provided by Hussan, who went above and beyond, making it a memorable experience. The food was excellent, the prime rib was melt in your mouth, the scallops and risotto were be best ever. Also tried the fried tempura shrimp sushi, what a treat.

Here with our soon to be 12 year-old grandson and we wanted a good steak. Stetson was excellent for both food and service. Our waiter treated our grandson like an adult and helped him feel very grown up. The filet and asparagus were prepared perfectly and the atmosphere was relaxed! We will eat here again.

This is the place to go if you need a pick-me-up. The staff are all very nice and friendly too, they will make sure you enjoy your time there. The food is out of this world and reasonably priced. They have a great wine & spirits selection. I highly recommend this establishment!!!! A++++ Btw, if you are lucky enough to meet up with Deborah when she is working, you will be the next person to write a great review.

Stetson's is located in the Hyatt Regency on Wacker which is a convenient location. The ambiance is nice with fireplaces. The room is extremely noisy. As steak houses go both the drinks and food were overpriced. We started with a goat cheese salad that lacked almost any greens and a dearth of dressing. My wife order Sushi which was very salty. I had the 8oz filet which was good, but definitely smaller than 8oz. We definitely choose the wrong spot for dinner.

The restaurant is amazing. Does not belong in this shabby Hotel. Try to get past the Hotel and focus on the food. Started the evening with a Wedge Salad - Delicious. The mixture of flavors on the plate blend so well together. I could eat this salad for days. Almost a half head of lettuce. Then moved onto a California Roll with, not imitation crab or lump crap... A crab leg rolled inside. It was huge - a lot of meat. It is a steak and sushi joint. You have to try both, right? Well worth it. I would make two separate trips to this place if I had the time. Then for the Skirt Steak, at this point I was getting full and everything was delicious. A palate explosion. However, I was not leaving without trying the Banana Cream Pie - the recommendation from the waiter. Was able to get 3 bites down before having to ask for box for steak and pie. I was completely satisfied for a good half day. This is the place for dinner, atmosphere and proper service. Make sure to get a walk in after dinner. Will definitely go here again - Not the Hotel... Too Noisy

Having dinner with two others, all of us , having been to many steakhouses, were certainly surprised by the excellent steaks, my two guests had ribeyes while I had the filet, (with sides of mushrooms & garlic mashed) the steak was amongst the very best for all of us. A sushi roll appetizer was also truly amazing, and the service was perfect, would definitely return.

The food and service are a 10 but since I can only give 5 stars that will have to do. Deb the Bar Manager and Pete the GM provide service second to none and Juan is also very attentive to those sitting at the bar. The popovers, filet, and baked potato were perfect. If you go, save room for the chocolate cake. If by chance you simply cannot eat another bite after your meal, my recommendation is to get a slice of chocolate cake to go-- you won't regret it.

Ate here a while ago and returned. A British Yorkshire pudding was given in lieu of a bread roll. When I asked for bread, we got given dinner rolls..the type you would get on an airline. I seemed to cause a problem asking for decent bread/rolls which seemed like a big ask.... The oysters from the chill bar came out slightly warmed on purpose, no idea why. A real shame as we had really been looking forward to this place....

With a great vibe, positive noise and energy, and above all, high-quality steak and sushi, Stetsons is an ideal business or social option in Chicago's downtown hotel enclave by the lake. The sushi is fresh and delicate, the steak succulent, aromatic, and the presentation superb. Try the spicy tuna or rainbow sushi-both are excellent--and the remarkable cap steak is also a great choice. Plus, the servers are fast, personable and informative. Deadly desserts, too!

Chose this place because it's located in the Hyatt where we stayed. They let us book six at the last minute and had no concern when a seventh joined us. The sushi bar did not seems busy but us meat-eaters were keeping the kitchen busy. I broke down and cried when I heard they didn't serve draft beer. But the bottled IPA was ok. The short-rib I had was delicious but they forgot the slaw it was supposed to be served with. We were all too full for dessert.

During my business trip I had dinner at Stetsons. The chopped salad was great ,fresh and seasoned just right . The steak was cooked to perfection . The wine selection is good ,wish they had more Italian selections but the one I had was great .

I decided that in Chicago one should go to a steakhouse if for no other reason than tradition. Since Stetsons was in the Hotel and had good reviews, I decided to try it. First, My waiter was superb and also very helpful. I will say this is the only place I have ever been to where I was served Yorkshire pudding and sushi rolls at the same time. It was an interesting combination I must say. The Steak was beautifully rare and unfortunately too heavily salted for my taste. Everything else about the meal was top notch and only the salt kept it from being a 5 star rating. If you like heavier salting on your steak, this is the place for you

We had such a perfect meal at Stetsons. We were staying at the Hyatt and wanted to stay in the first night of our trip. We had the prime rib which was amazing. We loved it just as much as our night at Gibson's later in the trip but the service and atmosphere at Stetsons put it over the top. The restaurant is cozy and romantic. Our waiter Hussain was wonderful - we loved talking to him about the city. The sushi, which we had as a starter, was unexpectedly wonderful - it turns out they have a legit sushi chef and the quality was fantastic. We would absolutely recommend Stetsons!

For a restaurant that specializes in Sushi the seafood is not fresh enough. Got food poisoning from 'fresh' oysters. I would avoid the place next time I go to Chicago on business.

And had to find a quick reservation for 7. Not an easy task when the Cubs are in the post season and the Bears have a home game the next day. They were able to accommodate us, which was kinda of scary. But it was one of the finest steaks I have eaten. And the Brussels sprouts side dish was the bomb. Make sure you get a taste of bacon in your bite. And service was exceptional. And we never had to leave our hotel. Five bonus points for that!!!

Great place, great atmosphere, but the best of all it's the staff. My meet was over cooked, and frankly, In rarely occasions, I give a 2nd chance. But my waiter and Peter save the day with a perfect cooked medium rare new cut. Thank you Peter for all your attentions!! If you are in Chicago, you have to go there!

We ate here on our last night as we were tired & what a surprise! It turned out to be the best meal we had & it had stiff competition! The presentation was perfect and each dish was perfect, packed full of flavour and very tasty.

The service here is fabulous! I had the best wedge salad I've ever had. Delicious. I had a bbq eel sushi roll for my entrée, it was pretty good. For dessert we ordered the banana cream pie, nothing special. I'm giving 4 stars for the service and salad.

I had read that Stetson's was pretty pricey. So I definitely hoped it would live up to the money spent. I certainly did. We had reservations. There was now wait once our party arrived. Our server was very attentive. 3 of us ordered seafood options and 2 had steak. I had the salmon. It was delightful. The scallops ordered by a member of our party were massive. She reported they were prefect. The service, the food and the atmosphere definitely were worth the prices charged.

Connected to the Hyatt and accessible from the lobby you enter a warm ambiance upon arriving at the bar, then moving into dining area an open kitchen with Chef serving steak and sushi is a delectable experience and is so worth trying. Perfect while on business with a large group. The menu ranged from sushi to the finest cuts of prime steaks. Surprised to see the pricing was not over the top. Starting w a hot popover was a treat. Pick your steak or seafood and many delicious sides like maple glazed Brussels sprouts topped w smoked bacon bits. The mashed potatoes, creamy Buttery and delectable. Highly recommend a visit along with one of their cocktails to round out a pleasant evening.

Sushi was absolutely fantastic but about $20 a roll. I spent $80 for 2 drinks and 2 sushi rolls. Sushi I ordered was not extravagant- spicy tuna and California roll. Just very pricey.

We went on Valentines Day. We had reservations because we anticipated that it would be busy. It was busy, but that did not impact the quality of service. The apple pie dessert was delicious! We had filet mignon and scallops. Very delicious!

The three of us including my extremely foodie son of 19 years old had a very good meal for dinner at Stetsons on a Sunday in March. The dinning room had a warm hue with a gorgeous fireplace. Just enough people not to feel lonely, and just few people not to feel noisy. The serve staff were just friendly and professional enough without imposing or intimidating. The wine list were just long enough without being overwhelming. The food menu were just traditional and innovative enough to accommodate the young and old, from east to west. The food quality, taste and portion were just good enough for the price. Ok, maybe a little on the pricy side. The complementary starter bread was most impressive of all. The desert could have been a bit more interesting. I would recommend it to anyone particularly if you are not familiar with Chicago and want a safe place to have a quality meal.

We ate at Stetsons after a day of sight-seeing. I can't say enough about this place. The ambiance was relaxed but classy, the wait staff were outstanding and the food was truly decadent. First, let me give a huge thumbs up to Julius our server. He was attentive without being overbearing. There was a slight misunderstanding with our meal, but he quickly corrected it and we were well on our way to eating a culinary masterpiece. He was even understanding when I broke a wine glass. What can I say, I'm a klutz. Second, a shout out to the chefs. WOW! I had a bacon, something soup that I can't remember the name of, but it was truly an explosion of flavor. I probably could have stopped with the soup, but why stop there? I had some sashimi. The tuna, salmon, everything was fresh and melted in my mouth. Finally, I had a Raspberry Sorbet with dark chocolate that was a wonderful refreshing way to finish my meal. If you find yourself in Chicago, go to the Hyatt downtown and treat yourself to a meal at Stetsons. You will be glad you did.

Steak and sushi makes great sense to me . . .a slight revision on Surf and Turf. The Octopus appetizer was interesting; the California roll and Shrimp Tempura were flavorful. Shared the prime rib (14 oz is a lot of meat) and it was perfectly seasoned and served medium rare. Bonein ribeye was excellent as well. Wedge salad was very good. Definitely have the cream corn; the whipped potatoes were good but nothing special. the asparagus was really good but only enough for two. Server provided a flight of sauces with our entrees.Love the popover served early in the appetizer course. Service was excellent - she anticipated our needs and made great recommendations. Only negative - had to sit at a high table. not comfortable.

The brioches that we were served at the start of our meal were light and fluffy. What a nice change! We had a great mushroom soup and a plate of burrata mozzarella with prosciutto and figs as starters and really great, perfectly cooked and very tender fillet mignons as our main courses. While we understand that there may have been a stand-in wait staff due to the hotel workers' strike, we unfortunately felt a little rushed in that our main courses were served before our starters plates had been removed. Also, the steaks were a little too salty. This took the edge off an otherwise great meal. Stag Leap Chardonnay accompanied our meal, which was well selected.

We are here in Chicago on business and it usually includes a visit to Stetsons on East Wacker. We have not been to Chicago for a rew years so expected Change. The restaurant had changed with Sushi on the menu, and it seemed to have lost a little atmosphere. However the Steaks were great as was the service, so it will stay on the go to list.

Very good steak and seafood. We didn't have the sushi. The menu is alla carte so the dinner can be pricy. The food prep was well done and no one had any complaints. Of your staying in the Hyatt Regency Chicago this is a convenient restaurant to host a business dinner.

We visited during the annual Triple I conference in November 2016. We didn't have a reservation but that was no problem. We were flexible and they offered us a great seat in the bar area next to the fireplace. Between the two of us we had a filet and scallops. All I can say is outstanding!

We enjoyed our dinner here thoroughly. The service was spectacular and the food as well. We opened with shrimp tempura maki rolls. It was a perfect size and very tasty. The bread brought to the table was delicious and our steaks were perfectly medium rare and so tender. My husband got the sea bass and said it was the best he ever had. We would recommend this place and return! Love that we can get sushi and steaks in one spot!

a reasonable venue, but not cutting edge. the food was simple rather than sophisticated, so travelers used to cutting edge cuisines found on the west coast will be disappointed as it is not as sophisticated as it advertises.

To start on a positive, the food was very good, I had sushi which was fresh and delicious and my husband had sea bass which tasted great, however the night was ruined by the service! We had a server who would only make eye contact with my husband, it was like I wasn't even there! He was very rude, he never offered to go through any specials, he never asked us at any point if the meal was good or asked if we needed our drinks refreshing, he had such a bad attitude! Then when we payed the bill and left an 18% tip which in my opinion was way too much in any case he looked at the bill and shook his head! We would never return here, awful service!

We first ate at Stetson's a couple years ago before they completely remodeled and added sushi. It was fabulous. It is even better now. The steaks we chose were the bone-in rib-eyes. They were HUGE (2 to go boxes), cooked exactly as ordered, and seasoned perfectly. The sides were spectacular: Brussels spouts, spinach and large baked potatoes with 4 toppings. The desserts were, well, sinful. We "fought" over the last bite of chocolate! The wine list is complete from modest-top shelf. The manager, Pete Karczewski, remembered us from 2 years earlier and made us feel like special guest. We eaten at most of Chicago's well known steak house. Stetson's is unique, and our favorite!

I was staying at the Hyatt Regency for work and had a nice dinner Stetson’s. I had the 10 oz. filet and very much enjoyed it. It was nice having a steakhouse located within the hotel.

Having heard of this restaurant from 2 different people, both saying it was excellent, I was looking forward to eating there. However, upon arriving at the Hyatt, getting our rooms, then decending to the LOUD & NOISY lobby, we were informed by the desk clerk that it had closed, suspect that it was now closed forever. Sigh .. so we went to the Palms Steak house 2 blocks away ... very good meal.

Located in the lobby of the Grand Hyatt, this place is a hidden gem as compared to the many steak houses in town. This is not a huge place and I think that gives it a distinct advantage. Reservations are required as are business casual or business attire. Staff were very attentive, knowledgeable and they have a high quality and deep wine list. Appetizers, very good (my colleagues ordered family style so lots of sharing and nothing left to send back to the kitchen. Let's get to the steaks; my petite filet was nothing short of awesome, prepared to my request, and served with a sizzle. Sides again, family style, all delicious. Top of The meal with a cappuccino and a variety sampler of delicious treats and, well I'm in heaven. Now I've eaten in all the big joints and while there steaks left nothing to be desired, the service in those places always felt rushed and impersonal. Not at Stetsons, a great meal, impeccably prepared and served in a relaxed atmosphere. Go there! You won't be dissatisfied!!

Wanted to grab a bite here to hold us over until a late night dinner. Ordered three half-price, happy hour sushi rolls. All of them were fine - no complaints, just basic sushi rolls. I would probably try a steak here if I was staying at the hotel and didn’t want to venture out, but otherwise it was generally just fine (not amazing, not bad).

This is located inside the Hyatt and the food was amazing and so was the staff! They were very helpful and took there time to explain the dishes. We called them back a couple times and they were so friendly and really made the experience! I would highly recommend

Was here for a large conference. This restaurant is fashioned for the traveler staying at the hotel, meeting at the hotel or in the immediate area. The food is quite adequate, sushi or steak, both are fine. The service was very good, and the server was well informed and gave great advice. I recommend it if you wish a convenient very good meal. There are a lot of places that at a level way below this restaurant. But it is not a destination meal. Perfect for a business group paying on a business account, but I personally would opt for a finer cuisine to suit your budget at more distance if I am looking for really good food and don’t mind a walk or cab ride. There are tons of choices in the area, not to mention wider Chicago.

Had dinner here, and there were plenty of creative choices for a fusion meal or for straight-up steak lovers. Attractive decor, professional service, sommelier gave a high end experience.

Really disappointing overall because of the steaks 2 of 4 ordered medium rare and got medium well. We sent back and got black and blue-completely cold on the inside and burned on the outside. We would have sent them back again but our other guests had already finished their dinner so we just left the unfinished steaks on our plates. Our other two guests has the prime rib which was excellent and cooked to order Service was spotty. Sushi was exceptional, Ambiance was fun and lively.

Great dining experience for a night out with work..... Loved the great and friendly service from the get go. The menu provides plenty of choices other than steak and sushi hence everyone should find something on the menu. We all had a great time yet count on $100 per diner.....

I have been eating here at least once a year for four years as a part of a business meeting I attend at the Hyatt. I've always found the service and food here to be above average but the meal that we had here this trip was phenomenal. Number one they have a great wine selection and the prices for a restaurant especially in a hotel are very reasonable they're basically about two times normal retail which is where they should be and they had a great wine list with some really wonderful wines that you won't find in other places the food was outstanding I had a Seafood Tower that was very fresh as well as a pasta dish that was extremely well done and I've had the steak and that sushi in the past and it's all been very good and fresh. The service was outstanding our server went out of his way to help us and serve us at the end of the dinner he sent us out with bags of goodies to take back to the room he was very professional and courteous and we tipped him 25% because we have never had such good service in a while. I personally congratulated the general manager which I do when the food and service is outstanding I highly recommend this place and they're always courteous and trying to get you a seat as soon as possible.

The restaurant is located on the first floor of the Hyatt Regency. Though part of the hotel, and though mid-level hotels tend to not have the best restaurants, we found Stetsons to be unexpectedly good. The filet was excellent quality, seasoned nicely, and cooked perfectly. The scallops (which are easy to mess up) were likewise done perfectly with a nice sear and excellent texture. I also must commend the serving staff. Out waiter was both prompt, engaging and knowledgeable. The restaurant was an unexpectedly enjoyable find.

We were in town to visit family decided to eat at the hotel. My wife had steak, I had seafood pasta. Both had great flavor, and the wine topped off the meal. Professional waiter with excellent recommendations. Go to Stetsons and enjoy

Got the grilled octopus and like it. Got the shrimp tempura roll and was not a fan. A little overpriced.

This place is right in side the Hyatt Regency Hotel downtown and the sushi was really fresh and the steak melts in your mouth

I was not expecting a real good meal neither for sushi or steak. Hard mixing. But I was very wrong. Ordered a bit of sushi and different steaks. All was simply superb. A bit pricey perhaps. Good service too. What else to say?

Stetson's Modern Steak & Sushi restaurant describes itself as a non-traditional steakhouse. Located at 151 East Wacker Drive, in the Hyatt Regency Chicago hotel, off North Michigan Avenue, in Chicago's Loop, it features an open kitchen, sushi bar and wine program with 75 selections. Open daily from 5 to 10, it offers everything that a steak-and-potatoes guy like me is looking for in a steakhouse. And I don't indulge in sushi or drink alcohol. I started with a shrimp cocktail with poached jumbo Gulf shrimp, cocktail sauce and lemon, a bowl of seafood bisque with Yuzu lobster, shrimp salad and crostini and a Classic Caesar Salad with Romaine lettuce, parmesan, white anchovies, ciabatta croutons and house-made Caesar dressing. For my entree, I chose a 10-ounce filet mignon with bearnaise sauce, loaded baked potato with butter, sour cream, cheddar, bacon and chives and creamed spinach. For dessert, a large slice of apple crumble cake with rum caramel sauce, poached apples and cinnamon whipped cream was delicious, a real game-changer.

A business dinner with Colleagues on a very cold Chicago evening. Service was great, meal was great. It's been a while since I had such a perfectly cooked prime rib roast. Good job.

The restaurant is inside the Hyatt Hotel, which is very useful when on a business trip. The menu had nice selection of options for lighter fare, as well as typical dinner choices. The salads we had were all nicely prepared. The service was very attentive.

We were residents at the Hyatt, and had made a reservation several nights before. Quite fortunate really as people were advised of an extended wait. However, we had an extended wait till we were at the front of that queue so that was annoying. Once seated, in a very busy restaurant we ordered our meal and drinks. I can honestly say the steak was the best I have ever eaten, cooked to perfection and served with a delicious sauce and fries (although I had to ask for them as they were not on the menu - very odd) My wife enjoyed a lovely piece of salmon. This was really a corporate restaurant not for a couple to enjoy an evening out so I would be mindful of that if this is what you are looking for though. Otherwise it would have been a 5 star experience.

One of my top 5 steaks ever! Cap steak, medium cooked, with a side order of blue cheese salad. The service was very good, but to get a 4 star experience, the setting needs to improve. The interior is plain and lacks cosiness.

We met some friends that live in Chicago at this restaurant. The atmosphere was very relaxing and great for having conversation. 3 of us had the steak and I tried the crab cakes and sushi. It was all amazing. Additionally we had the french onion soup and wedge salad. Everyone really enjoyed their meals and the portion sizes were just right.

As a life-long Chicagoan (with a year in London and five in New Orleans), I have numerous fabulous restaurants to choose from in the Windy City. One of the very best is Stetson's, located in the Hyatt Regency Hotel just off Michigan Avenue and overlooking the Chicago River. Besides the ambiance (a perpetual fireplace) and professional staff and kitchen, the food is simply wonderful! You can enjoy dining (as opposed to eating) at a leisurely pace with a fellow diner by splitting an order of crab cakes, a Caesar salad and sushi. (I was never a sushi fan, but the vegetarian iteration is wonderful.) This with a bottle of wine and you have your evening set. Still hungry? The filet is delicious, as are other cuts. When dinner is over, you are located at the foot of the Magnificent Mile for a walk, or venture down to the River Walk. I highly recommend Stetson's. You can book ahead online.

Given the proximity to our hotel and good reviews we decided to give this restaurant a try. We were not disappointed! The service was excellent as well as the food. Had the crispy maki rolls as a starter and filet mignon and rib eye filet as a main course. The meat was delicious, grillled to perfection with great flavour. Same can be said about the sides. Thanks to the warm weather we were even able to have our dinnner outside on the patio. Enjoyed every minute (& and bite) of it. Highly recommended.

Eating alone and wanting good food but not a fine dining experience? Try the sushi bar. Great service and comfortable chairs. Food came fast. Very good California Roll and Shrimp Tempura! Apple pie was good.

I was staying at the hotel for business and didnt want to go out for dinner, so despite some concern because of mixed reviews, went to Stetsons. The food was such a pleasant surprise. On the recommendation of the server, I got the sea bass and it was exquisite! Very pleased with the quality of both my cocktail and the food. Only drawback was that service was a bit uneven. Actually ended up tipping the water/bread server because he helped me out a number of times when I needed service! Overall, would go back though. Food was good and I liked the intimate atmosphere.

Arrived here after a long day of travel. Wanted a quick bite of sushi around 4pm. Had to wait because the restaurant opens at 5pm. No big deal so I grabbed a drink and waited an hour. Glad I did. Ordered a couple rolls and they were excellent.

My husband and I celebrated our anniversary here while in Chicago. We both had 8oz filets excellently prepared and some great side dishes. Also a bottle of Saved Cabernet. They surprised us with a huge piece of chocolate cake. Loved that place. Pricey but well worth it.

I was surprised to see steak and sushi in the same hotel restaurant, but -- with sushi as an appetizer and steak as the entree, well, now I'm sold. That said, don't miss the grilled octopus. The chef is Greek and he knows how to fix octopus so that it's NOT rubbery but succulent. I've never had better.

We had dinner here for my birthday and I honestly was unimpressed. The service was bland and our waiter bordered on rude. He was I engaging when taking our order, he didn't bother to tell us about the menu or any specials. The food was eh T best. My husband ordered the ribeye filet which was dry and boring. My blackened Chilean sea bass was good. I would rush to this establishment. The prices are high and the service and food are not worth it.

Located in the Hyatt Regency Chicago near the Navy Pier. This upscale modernly crafted restaurant is only serving the freshest seafood and highest quality beef. We entered the softly lite dining room with the sushi bar to left and intimate table seating to the right. In the back of the restaurant we’re tables to accommodate larger parties. We chose a table near the glow of the fireplace in front of the exotic back lite bar with the finest liquors placed on glass shelves. We order the seafood tower for our appetizer and filet for out main course. This place gives you a reason to stay at your hotel and eat in with connivence and uncompromising quality from every aspect!!! An awesome experience.

Good Shushi , but nothing special , especially for the money that you end up paying. Overall good food (I tried the Shushi menu only) but overpriced. Not worth visiting , especially if you are not staying in the hotel.

The service here was excellent. As we were seated, they placed our napkins in our laps, and brought out an "oshibori" (warm wet towel) for each of us to clean our hands. I ordered prime rib cooked medium rare and sauteed spinach. Both were excellent. My friend had crab cakes which looked delicious. They brought each of us a pop-over, which had been baked with cheese on the bottom. It was delicious and unique. We did not order dessert, but were pleasantly surprised when two chocolate-covered strawberries were delivered with our checks. I would definitely return to this restaurant.

Oh my has this restaurant changed. I love that there is a sushi bar. It seems so much more casual then it used to be. I like how it’s more open in the entryway and all the engraved steak knives are a nice touch to the decor. Our server was friendly and provided us excellent sushi recommendations. It wasn’t terribly busy either so I was glad we didn’t need a reservation.

Stetson's is located I the Hyatt Regency and offers a modern twist on the steakhouse - sushi. My coworkers who ordered the sushi said it was very good. The also had a delicious chicken dish and a pork tenderloin that was wonderful. Great service and lots of dessert choices. The steaks were very good and side dishes are large enough to share.

Expensive but a great meal, great service also. i'd recommend steak as mine was cooked to perfection.

Had dinner here with colleagues. Loved the bread, sushi, and grilled octopus. And I AM NOT a fan of octopus, but I tasted it and it was delicious. Corn chowder was just okay.

The filets we had were tender and well seasoned. Perfectly cooked. We were happy with our meal. Baked potato with sides was generous and great presentation. Mushrooms were sooooo good but filling. I couldn’t finish them. Wine selection by glass is lacking, but we had a nice glass just the same.

I very recently had dinner at this place, the service was very good, but my dish was very disappointing. I should have ordered the steak, since I believe this is a steak house, but I ordered the special of the day. It was a blackened sea bass, and is was flavorless and very gelatinous. I'm just back from Greece where I had a lot of very good and tasty sea bass. Maybe I'm just not familiar with this variety of sea bass, but I did not like it at all.

Interesting steak an seafood restaurant. Great service and great food. Started with a potato bisque, which didn't sound too exciting but wow the taste was out of this world. The scallops and steak were also top notch. Would recommend.

Never underestimate restaurants in hotels. The presentation and food are impeccable. The staff is accomodating and knowledgable.

My husband and I enjoyed dinner here while staying at the Hyatt Regency Chicago. We ordered the dragon roll, tuna tuna, hamachi jalapenos rolls and just shared. We enjoyed the dragon roll the best. My husband also ordered an old fashioned to drink and he said it was very good!

There are good things to say about our meal - a graduation celebration. The sushi was tasty and well balanced. There is also room for improvement. The dessert selection was limited and disappointing. There was no cocktail menu. The waiter never came to pick up my credit card after leaving the check - I guess most of the diners charge the meal to their room.

Stayed at the Hyatt on a business trip was looking for a good meal with out having to go looking for one after a long day of sessions. The sushi was fantastic. Steak looked so good I wish I would have ordered it. Only thing was that I really would have loved some noodles to go with my sushi or steak but it's not that kind of place. Good wine great food a little pricey for being in a hotel.

Stetson's is easy to find whether you are staying at the Hyatt or nearby hotels. A cold, rainy night without any reservations at another steakhouse brought us to Stetson's. A comfortable setting with a roaring fire in a traditional dining room near the bar set the stage for a decent meal. A good start with a Caesar salad and freshly baked rolls led to a pretty good New York strip on one side of the table and a full rack of ribs on the other. Decent wine and beer list, although overpriced. Pretty good wait staff. The final tab highlighted just how expensive this place really is and raised the question of whether it was worth it. The answer -- much better places even on a cold night to enjoy an excellent meal in Chicago.

Dined there on a pretty quiet Friday evening. The burrata was ok, but could have used more balsamic vinaigrette on the plate. My rib eye was fattier than what I consider normal but was very tasty. My waiter was very friendly and helpful. My biggest complaint was where I was seated. Adjacent to a serving stand where waiters were constantly grabbing glasses and silverware, Given small number of diners at the restaurant it was unnecessary to seat people adjacent to the server stands. In addition, the waiters seemed indifferent to the noise they were making. They could have grabbed things in a much quieter manner.

I was a solo diner the night I was here and sat at the bar. The cocktails were poured well, and they were spot on. The bartenders, although busy, were extremely attentive. The food - man the food. I got the mixed grill, and honestly I didn't have high expectations. It had octopus, lobster, and sea bass (and a grilled oyster), and I figured the octopus and sea bass would fall prey to the typical letdowns - either under or overcooked, bad texture. etc. Was I wrong. The octopus that they got the tentacle from must have been on steroids - it was huge! And it was cooked literally perfectly. The sea bass had a beautiful crust on the outside and the flavor of the fish was outstanding. It was a huge surprise to have something this good, and for the price it was more than worth it. Overall, I would recommend this restaurant whether staying at the hotel or not. Great experience.

Disappointed to say the least... I placed a reservation 2 weeks in advance which was confirmed. A few days prior Stetson staff called to cancel the reservation. The staff person stated that it's closed due to occupancy issues and the hotel worker's strike. This was supposed to be a convenient dinner after flying in from out of state for as part of the beginning of a planned vacation. When I spoke to Hyatt staff, they were surprised to hear about this.

Had dinner with my wife here this evening. She ordered an 8 oz filet and I had a 16 oz ribeye. We both had onion soup and salad as well. The onion soup was served in large, deep bowls, not the little crock type bowls commonly used. These were large servings. We followed our waiter’s recommendation and shared a salad. (you can trust your waiter as they are very knowledgeable and very professional) The steaks came out hot, seasoned to perfection, and cooked to the correct temperature we requested. This may have been the best steak I have had at any restaurant anywhere. My wife agreed that her filet was perfect. Yes, like most top steakhouses, the price is what some may consider high.... but aren’t you worth it? We are in Chicago all week and will probably return before we leave town.

Had dinner (3) nights in a row at the bar in Stetsons; the food was very good, service was exceptional. Deb was amazing to watch manage the room and make sure all possible clients were accommodated. VT

Was here for a conference it is in the Hyatt Regency ..reservations seems best but they were able to seat us immediately(party of 2) in the lounge area which is by the bar..customer service was good and the food was good.. atmosphere very low key dim lighting nice fire place ..typical steak house prices $45+

This place had a limited menu. Prime rib was tender, juicy and cooked perfectly. It was just way over salted. The shrimp tempura was not good. It smelled very fishy and I refused to eat it. No adjustments to bill. A friend ate it and she had dysentery all night. Would not teturn.

Had a great dinner here one night while in Chicago. I almost wish I had tried another dish but the sushi was fantastic as was the crab cake and shrimp cocktail. table bread was decent, skipped dessert since we were full but service was great. a bit expensive so if you are looking for something on a budget I would move along, but if that is not an issue for you enjoy!

It was 9.30 pm on a sunday evening in chicago and we found most restaurants either closing or closed for the day. We decided to head back to our hotel Hyatt Regency and on an impulse decided to check out Stetson's located in the hotel. Fortunately for us, they were still open. It was very quiet at that hour and we had just one other couple at another table. The choice was between steak and sushi and we opted for steaks. We tried the Ribeye Steak and the Cap Steak, one medium well done and the other medium rare. Both were excellent choices as it turned out and we thoroughly enjoyed our meal. The bread served on the side was absolutely delicious. Tried a champagne cocktail as well. The service was extremely friendly, we were offered great recommendations based on our preferences and the steaks were done exactly as we requested. Portion sized were very good and we had absolutely no room for dessert. Overall a great fine dining experience

The food was pretentious and awful. I deliberately avoided the steak because I was sure it would not be up to my standards = especially in Chicago. I settled for the prime rib and it was tough and had no flavor and I did not bother to finish it. My wife had French onion soup and was going to share the prime rib. She had about four spoonfuls of soup before discarding it, and ate a little of my prime rib without any enthusiasm and she is less particular about her beef than I am. Service was less than stellar and they were not busy. We should have gone out instead of staying in the hotel.

Anthony was our server and he was very knowledgeable about the menu and had excellent customer service. The food was amazing! The steak was cooked perfectly. Great atmosphere. Hidden gem in Chicago!

Easy access for those staying at Hyatt Grande Chicago. Service was pleasant. Steak - good but was over salted. Vegetables very fresh. Wedge salad was nice. One comment I didn't like about service was that chefs and preparation area was visible, normally I don't mind this, but at times chef seemed very distracted from their work and didn't seem to be putting in a great deal of effort into preparing the dishes. Waitress was very good, pleasant and professional. Setting was nice, clean, music was a little loud.

Celebrated my wife's 37th birthday with friends at Stetsons last night. What a great time!!! We arrived at Stetsons and were quickly escorted to the private dining room I had reserved. It is a really modern decor with great look and feel. Very clean place. We had an iPad to look up speciality cocktails which were very good, the ones we had. We ordered 3 different sushi rolls for the table plus crab cake appetizers. Sushi looked wonderful tasted great and fresh. The crab cakes were just ok. I had the rib cap for my main course and my wife had the seabass. Both amazing. Sister in law had the braised beef rib and that thing was awesome. Felt bad for her because she was feeding everyone else bites because we all loved it. The pork ribs were also ordered and were delicious. This was my first time at Stetsons and I'm so happy that we tried something new. We will definitely go back.

I was staying at the Hyatt Regency, so this was an easy choice to make for dinner - steakhouse in the hotel that also serves sushi. The service and food are good, but for the same money, everything about the Stetson is better at a place like Ruth's Chris

Was in town for a convention at the Hyatt and decided we would try Stetson's which was on the first floor. It's an interesting restaurant with a wide range menu from steaks to seafood to sushi. My wife had the Cape Cod Scallops and I had the prime rib. Both were excellent! Scallops were cooked just right but they could've added one or two more on the plate. The prime rib was very tender and cooked perfectly medium well. Would go back if we are in the area again.

Stetsons is located in a hotel but it was top notch. 4 adults and 2 children ages 3 & 5. They took great care of us and made us very comfortable with the kids. Good experience. 3 of the 4 adults had the filet the fourth had another type of steak and appetizer of sushi. We shared 2 sides (which are large) and 2 of us had salads. The filet was one of the best my husband and I had in a very long time - cooked exactly as ordered. Would definitely go back - in fact the other couple have already made plans to go back.

I was Not impressed with the very limited selection of sushi (veggie Maki, California Maki, and spicy tuna Maki only) and drinks during happy hour. Half off overpriced sushi is still a lot of money. I’m just saying…. don’t recommend and will not be returning.

I've been here many times over the past two years, and I've never had a bad experience. The sea bass I had last night was excellent. But then, so was the bacon dashi soup and slow braised royal beef rib I'd had in the past. The popovers are decadent, but that never stops me... It's certainly not cheap; nor is it the best dinner I've ever had in Chicago. But it's all been excellent.

First of all, head to the bar and ask for Deb, who will serve you with the spirit of Chicago along with great skill and flair. For a restaurant attached to a hotel, this is an awesome spot for steak, for seafood or even sushi. It's lovely inside. The wines and drinks are quite nice. We ate there 3 days in a row -- because why go elsewhere when you have a wonderful spot inside your hotel. We were surprised at the quality of our experience here and would welcome it to anyone visiting Chicago. Excellent spot.

I was staying in the hotel and decided on my final night that I should try some of the in house food. The steak was superb. The barmen made great conversation and kept me occupied the entire hour I was there. I felt very welcome and was very pleased

The service was top notch and the food to match. The cap steak was one of the best cuts I’ve ever had. The shrimp pasta was so fresh and flavorful. The whole meal was amazing.

Real awesome steaks, expensive though but that’s Chicago. Beautiful architecture in the restaurant. Recommended!

After a trade show at McCormick Place we went to Stetson's .We had a business group of 11 we had Sushi appetizers and they were great. The filet appeared to be smaller than the 8 oz in the menu. Service was very good.

This steakhouse offered happy hour 5-7pm with half priced cocktails and sushi. We arrived before 7pm. We were served bread and water immediately. It took the waitress 30 minutes to take our orders. She went to 5 different tables taking orders. One had to wonder if they always wait til after 7 to take the orders. The New York strip ($78) was tough and fatty. The vegetables were severely over cooked. Mashed potatoes were the best part of the meal. Sad. We spent $175 for two and left ready to go find a real meal. Would not recommend

The food and service is awesome. From sushi to their steaks, they focus on ensuring you are happy with your meal. A bit pricey, even by Chicago standards but worth a try. Would love to see a prefix menu option, espically during the week.

Ok. I’ve been here before. A steal and sushi combo within a Hyatt property ain’t a bad idea. Decor? Fine. Service? Very good. Sushi fresh but uninspired nonetheless good. Steaks? Also good. My issue is pricing a mediocre 2 oz glass of wine at $17? A good... not great strip at $49? C’mon!

The best meal we had was at Mike Jordan wonderful restaurant. The best steak ever all over the world! And also best fries too....

Had dinner after meeting in city after passing by restaurant a few times in summer. Only had 1 type of oysters so we took a pass on them even though we love oysters. I had french onion soup which was loaded w carmelized onions a crouton and a little bit of swiss cheese on top. Soup tasted sweet to me. I prefer a tangier version. Husband had roasted potato bisque with crispy leeks on top. He said it tasted good. Both soups were generously portioned. For dinner we had filet mignon that was ordered medium rare and was served slightly overdone. Overall good taste to this fine cut of meat. Mashed potatoes had a hint of butter which we appreciated instead of other steak places that have mashed potatoes w their butter! Sushi rolls (California and spicy tuna) were excellent. Fresh and nicely presented. Gratis chocolate covered strawberries was a nice ending to our meal. Will come back definitely for their sushi and maybe a steak. Environment was loud so it was difficult to hear a conversation at the table for 2. Service was good but not overly attentive. Water service was great but had to ask for other beverage refills. Convenient location to hotels and city activities.

Attended a company event and was invited to dinner. there were approximately 12 of us. The restaurant is accessed via the lobby of the Hyatt Regency Chicago. Great atmosphere, friendly and efficient service. Since we were a large party, a limited menue was offered that covered fish, steaks, chichen and vegan. For appetizers we were served platters of well prepared and colorfull sushi. I had the grilled salmon that was made to perfection, but all the plates looked very appetizing. A selection of miniature pasties on nicely presented platters were served for desserts. Desset presentation was great, I thought, though that they could have tasted a bit fresher. Service was impeccable despite the many special requests. All was responded to with friendly smiles. my only comment would be to suggest a different table configuration for larger groups. Networking between two oppoait sidea of the table was impossible. Certainly recommend a visit back

We selected Stetson’s Steak and Sushi for a wider range of dinning choices for our party. The steaks, fish, and sushi were prepared and served as ordered. The restaurant has a good wine list by glass or bottle. The service was excellent – friendly and accommodating. An added bonus is that the restaurant offers free parking for 4 hours. The restaurant is recommended.

What a great experience! The place is not only beautifully designed — a perfect mix of marble, leather, and wood — but it also feels warm and elegant. The food took a bit of time, but just enough to remind you that good things take time. Every dish was excellent and clearly prepared with care. Service wasn’t the absolute highlight, but it was still attentive and kind. Overall, Stetsons truly lives up to its reputation. For me, it’s a solid 5 out of 5 — a restaurant that takes its time to do things right. I loved it and will come back every chance I get.

New to the area . On a business trip . Needed a comfortable quiet place . Stetson modern steak and sushi was it . Unexpectedly pleasant , elegant , and delicious !!!!! As you enter it's quite an entrance due to it's famous visitors as you will see with the photos . The welcome is personal the host will ask " is this fine for your dining ? " And of course it was . Window seat to a sunset . The bathrooms are gracefully placed away from dining . Not anyone to feel placed would inadequately . Many servers , not to impede your dining experience . Bread is fresh warm , butter softened not heated to displaced liquids . Beautiful people willing to give a dining experience .

We went twice during our stay in the Hyatt and had a great experience. The meat is perfect prepared and so juicy. The aspergus was great. The crab cake was delicious so was the salad. The kids menue was okay. Staff was nice

Wanted to try this restaurant had a couple visiting from Puerto Rico and we made it. The first night was full so we try the second night had reservations for 7:00 pm and then changed for an earlier dinner 6:00 pm. Welcoming very warm restaurant ambience nice and noise levels too. Waiter was not so hospitable but the bus boy a great asset to the team order French onion soup good, California roll ok, had the recommended cap steak great option and good to share the other party order the prime rib was not a good option to much fat not a good options whipped potatoes ok over all Experince ok will give it another try if around for another dinner price fine for a steakhouse option.

I had the pleasure of eating at Stetsons a couple of years ago and it was wonderful. I was back in Chicago last week and made a point of going again to see if it was really as good as I remembered. It was better!! I had a ribeye, mushroom side, and rose wine. Everything including the service was impeccable. I highly recommend!

This was absolutely delicious!! I had the seafood grill and highly recommend you spend the money if you are a seafood lover. Service was good, food was good, atmosphere was good. Best meal we had in Chicago this trip. Never had octopus before and it was quite good. If you like lobster and shrimp you will enjoy some grilled octopus.

Background: we went 10 years ago when Stetson's was a Big Beef Chicago style steakhouse. We noticed the menu changed to add Sushi and shellfish and we wanted to give it a try. Here is what we found: Steaks still delicious and the grilled octopus and chilled crab and shellfish plate wonderful. Our server Jesse very knowledgeable and the attendant Jorge also very attentive. We were surprised and pleased with the combination of Big Beef and the lighter seafood. Highly recommend the asparagus with melted cheese as a side. We had a wonderful dinner and a great time.

We're not here. Really unwelcoming place , staff ( table service ) not adequate . I would not recommend anyone to go to this very expensive restaurant. The food, the meat has PROHIBITIVE prices, $70 for a fillet. I don't know what meat they can use. I was with my wife we ate as an appetizer two salads that were DROWNED in vinegar. INEDIBLES. Then I continued with sushi and sashimi, prepared very, very well and at a fair price. The quality of the fish was excellent. The service really as mentioned is not adequate with waiters very unsuitable for contact with the public , grumpy and unprofessional .

Every staff member was welcoming, professional, & highly customer focused.The food was amazingly tasty & well prepared/presented. The value for our money was stellar.

When in chicago and wish to eat steak and sushi, come to stetsons modern steak, it will not go wrong, the also have good and fresh sashimi and sushi or angle fine hair spageti with seafood

We had an interesting experience tonight. We ordered one salmon dish and one ribeye. The ribeye was cold and cook was medium/medium well (ordered medium rare. The server offered to do another cook. Unfortunately the veggies were still cold and meat on the level of Ponserosa. The sad part is $150 of meat was sent back and barely edible. We attached before and after pics of our $75+ plates. The good news is that Molly (asst manager) took care of our meal.

Don't worry about braving the cold to discover a cozy and inviting atmosphere at a trendy restaurant. The prices may be a bit high, but the service is top-notch. I treated myself to sushi topped with steak, and it was absolutely divine.

I love prime rib and they have a great one here at Stetson’s (14oz cut). Modern decor. Service was good and friendly. Sushi rice was really nice with a good amount of rice wine vinegar. Desserts also were tasty. Really liked the cherry pie.

The prime rib is to die for! The most tender prime rib I have ever had! Very good food and good service. Great for couples or business groups but not for children.

This restaurant is located within the Hyatt hotel, which always makes me feel tourist-y for trying... But it had good reviews and we didn't make reservations for any other sushi/steakhouses downtown until too late, so we decided to give it a try. Tip: You have to use the Hyatts valet if you need to park, since the restaurant doesn't have their own designated valet. Ambience: The decor is very modern and they have one of those fancy, crystal fireplaces in the dining room, which gives it a warm atmosphere. Even the bar menu is modernized with the use of an iPad. The kitchen and sushi bar are visible from the dining room and with the great plating and food presentation, it was a treat to watch everything come out. Sushi: Our table started with sushi and I ordered sushi for my entree. Unfortunately, I've had grocery store sushi that was fresher and more inventive than what I was given here. It is grossly overpriced for the quality. The rice tasted stale and their options were spicy tuna, rainbow, etc.. Nothing exciting. If you want sushi, I would not recommend coming here Steaks: The steaks were delicious! They were cooked to perfection. I had a few bites of my boyfriends and immediately regretted the sushi choice. There are some great sauces that you can choose from to accompany your steak, including an amazing Bearnaise or a Foie gras cream sauce. Other food: Another person at our table ordered the Seafood Mixed Grill, which she entirely did not care for. It wasn't seasoned very well and was extremely greasy.. Not yummy and buttery, but just greasy. It had a good variety of seafood, but not the best quality. All in all, I would recommend for the steaks and nothing else. It's pricey and the only food seeming worthy of these prices was the steaks!

Food here is great. The crab cakes were delicious and the salmon, mashed potatoes, and mushrooms are excellent as well. Waitress was very attentive and polite. Beautiful decor as well.

Modern restaurant with an open kitchen and fresh food. We had a 'healthy' meal with sashimi to start and the filet with some spinach as main dish. I would say not a lot of calories and fat, but more than enough protein! Every thing was very good and especially the filet was cooked to perfection and tasted very good. Certainly it is not cheap but for what you get the price is ok. Also the service was very good, we never had to wait. Will come again during the next week.

This place was excellent! There are so many steak houses in Chicago and the fact that this one is located in the Hyatt might make you pass it up. Don't! We had our best meal in Chicago here. One member of our party started with sushi and the Ceasar salad with anchovies and said it was great. We ordered the filet and the sea bass. The filet was tender and cooked to perfection. It was truly one of the best steaks I have ever had. The sea bass was also cooked perfectly. Our sides were baked potatoes, seasonal vegetables and whipped potatoes. All were very good. We finished with the chocolate cake and the apple pie. Our waiter, Dan, was attentive and offered wine suggestions that were spot on. This was our splurge meal and well worth the money.

Over pricy! There are very few items to choose from! I don't think the mix if sushi and steak on the menu works! The sushi was not fresh! The rice was dry!

Went on a trip with my business staff. Delicious food. Excellent service. One even said "now this is what a steakhouse should be". I go here every year when I am on convention.

Very disappointing & over priced. My husband had the scallops and a baked potato. The scallops he said were ok but nothing special- but the baked potato looked like it had been around all day & was very hard. I had the spicy tuna sushi & it was extremely spicy. The waitstaff was good but the food was slow coming out. All in all a very disappointing meal.

Everything was excellent! 100% satisfaction. I had appetizers that included lobster, crab, and other great assortment items like oyster. One of the best appetizer platters I have ever seen in my whole, long life. Great work on that! I had the Sea Bass and then an Apple Pie type of dessert. Both were excellent preparations, and somewhat unique. I love when dishes I love are prepared with a different, and awesome interpretation like this. If you are staying at the Hyatt, this is right off the lobby. Do not think that because it is a hotel restaurant that something will be less in quality. Everything here is top-notch.

Very surprised and even disappointed by so many positive reviews. What did they see or eat that we haven't noticed. Stetson's is inside major huge Hyatt, so apparently they are always busy and don't care about customers or provided value. First of all, the setting and decor are mediocre and less than attractive. We had the server that was abrupt and less than pleasant. Then they have the word "sushi" in the name, so you would think that they serve variety of sushi, sashimi, nigiri, and rolls. In fact, their sushi menu is so limited, I would call the name misleading. We ordered rainbow roll for whopping $23, and it was adequate, with fresh fish, but certainly we ate much much better rainbow in the range of $16-17. And what is with prices?! We had Travelzoo $85 voucher for 2, otherwise, we would spend a fortune. Sea bass was actually pretty good, but overpriced at $40. As for Colorado lamb chops, they were ok, but nothing special and vastly overpriced at $69. What really killed it for me is side dish of baked potato. It was just stale and not edible. How can you claim any good food ratings for making horrible baked potato? If not for Travelzoo voucher, I would request my money back, seriously!

Stetsons is located inside the Hyatt hotel on Wacker Drive. It is a first rate steakhouse. I was part of a rather large party and we are perfect meal. The service was outstanding. The highlights of the meal where the seafood tower, the octopus, and the fillet mignon. The filet was a 12 ounce center cut, repaired rare and perfectly cooked. This was a wonderful meal.

We were dropped off by Uber a block away for the Hyatt was in the middle of construction work. As we entered Stetson's the hostess took our coats, sat us at our table, pulled out my chair - very classy. Our server was Hussain. He was excited to tell us about the menu. Their wine list was not over priced...we had a bottle of Sonoma Cutrer for $50. We ordered sushi rolls, crab cakes, I ordered the filet and my husband ordered the seabass. Hussain was so passionate about the steaks he convinced my husband to get the "Cap" steak. The cheddar "pop overs" was a great substitute instead of the reheated frozen bread roll. The fish in the rolls was mouth watering. Where Hussain stated that the fish is bought fresh and is flown from Japan. My filet was cooked PERFECT. The only reason why this is review is 4 instead of 5 stars is the bartender took my husband's steak. It is an open kitchen, she obliviously can't read her tickets, and a food runner dropped our plates at the table. Hussain did come back to check on the meals and we told him what happened. He said that he would have another steak on the grille quickly for us but, we didn't want another steak. Thank you Stetsons for a memorable experience!

Needed a local venue for business meeting for eight people. I found the sushi and steaks to be amazing here. I highly recommend this restaurant. In addition I found the staff to be highly attentive. Look forward To going back in June.

Nestled in a corner of Theo Hyatt Regency Chicago, Stetson Modern Steak and Sushi rocked our world with an eclectic menu, great service and truly, the best food we had all week in Chicago. We did eat a several highly regarded, famous restaurants and none compared to Stetson's. The char-grilled octopus appetizer was delicious, the Chilean Sea Bass was the best I ever had and my associates rave all week about the "cap steak." Truly this crazy named restaurant is one of Chicago's finest.

Arrived early for reservations, so went to the bar for a cocktail. We were greeted by an awesome staff, who truly love there jobs, most employees have been employed there for a minimum of 16 years! We were seated for dinner to receive first class treatment. Our food was delicious. The sushi was very good and my husband had a filet, which was great. I had Chilean Sea Bass which basically melted in my mouth. Our waiter has been working there for 36 years! Chicago has so many great places to eat and we put this on our list to go back to!

Service is very good. My steak was also very good and it should be at that price! Seating was a little to close together.

We had dinner in this restaurant and we had a really good experience! The Chief Combo was our choice and was good! The desert and wine was just right!

Best food I've ever had. Wonderful place to eat. A must if you like steak my wife loved it too. We will be back when we're in Chicago that's for sure.

All that can be said is ask for anthony the server and u will be so satisfied with the service u wont regret it and the food is spectacular from sushi, steak and the desserts are to die for

Wouldn't go out of my way to come here. Came because of a Travel Zoo. If I didn't have it I would say it's a little overpriced. But I imagine is great for convenience of conventioneers staying at hotel. I often stay downtown with the family just for city life for the weekend...I would say if I was staying in hotel it would be a good place for dinner. We are in the lounge and it had a nice atmosphere - better than I expected. We ordered the ribeye / sea bass / octopus and Brussel sprouts - all good. Nothing outstanding and decent service.

We wanted a casual, moderate dinner so we went to Stetsons in the Hyatt. The wine list was modest. The first two half bottles of wine had to be sent back. This was done cheerfully. The sushi was good, fresh and satisfactory. The octopus was specially cooked to order with a good presentation. The service was good. We were satisfied with our dinner.

Traveling for business, I am fine with dining alone in nice restaurants. I made a reservation for one, took a seat at the bar to sip a cocktail, and was made to feel so welcomed by bartender, Rock Star Deb, that I decided to dine at the bar. She had many customers besides me, many of whom appeared to be 'regulars' and well known to her. The thing is, I felt well known to her, too, after the pour of my first martini. She delivered great customer service, seamlessly engaged me in light conversation she was having with others, and pretty soon, I felt included just like Norm on Cheers. Sidekick Juan also delivered well and their teamwork, all for the experience of the customer, was everything that my earlier experiences in the Palm Bar, were not. I'll book the Hyatt next time just to visit Stetsons. I should share that the food was delicious. The presentation was nice, kudos for the experience of the luscious shrimp cocktail and the presentation of a wedge salad. So while writing this, think I'll return tonight for a ribeye. Pretty certain it will be wonderful.

I have had dinner while I was staying at the hotel. If you are tired and want to eat something and don't want to walk in the cold weather this is the place that you can sit and eat. Drinks cocktails were really good. Food was also really good. I could not finish my plate because it was huge.

Excellent service. Sushi was fresh and well done. Good variety of choices. From Hawaii so fresh sushi is a favorite option.
Best ever lamb
The beef and sushi looked really attractive but who can pass up porterhouse lamb chops 2 inches thick. Perfectly seasoned and grilled. Wine pairing good. Waiter very professional.
