The chips and guacamole were good. The salsa that came with it had an out of the jar taste and texture - not good. The service was pretty slow considering how few people were there. Very few vegetarian or seafood options. We both had the Hatch Chile Rellenos, which seemed like a good option since they had a person actually roasting green chiles right outside the restaurant. They were not good. The mound of rice had little flavor, the pinto beans tasted canned. There was a nice fresh salad on the plate - by far the best item we were served. The chile rellenos were not good. Small with little batter. There were two of them - which was more than enough. They were filled with something like a lumpy off-tastiing queso gravy rather than any identifiable cheese. Both the red and the green sauces served with it tasted canned. Very disappointing.

As a native New Mexican, I was absolutely thrilled to find a New Mexican restaurant in my new city. New Mexican cuisine is unique. Things New Mexican food is NOT: Tex-Mex, Mexican food, Southwest food, easy to find outside of New Mexico. Things New Mexico food IS: Rich, bold flavors; drenched in roasted green chile, red chile (we don't have a Chile Institute in NM for nothing folks), or both (Xmas!); representative of the unique mix of cultures that is the state of New Mexico; extremely tasty. While all of these food cultures use some similar ingredients, the flavors and the handling of the ingredients is not the same. As in Italy, one might find regional differences in the food even though similar ingredients are used (even in the US, think of all the different styles of pizza!), the experience of those ingredients is different, such is the case here. Back to my review....I was thrilled to walk in and smell the deep, smoky, spicy aroma of roasting green chiles. It instantly brought me back to the first 18 years of my life walking down the sidewalk, watching the roasters turn and getting hungry just smelling the air. I loved seeing the Ristras hanging on the wall and all the books lining the shelves, some showing their age. Everyone was extremely friendly and the servers attentive. Largely, the service was very fast, but for some dishes, you should not expect speed if you want perfection, which is exactly what they delivered. I also disagree with some reviewers who say the area is sketchy. The area may have an alt-culture vibe, but that is exactly what it is trying to be and I love it for that. Anyone who has been to any larger city/metro area knows that some of the coolest places in the city sometimes also have more grit. This adds to the character and vibrancy of the place in my opinion. The food was largely exactly as I would want and hope for a New Mexican meal to be. I had the stacked chicken enchiladas, Xmas style, served with rice and beans, and a small sampling of the pork-based green chile stew. My husband had the green chile burger and fries. The food was all excellent and exactly the kinds of flavors I would expect from a New Mexican meal. We were both very happy with our food selection. I was too stuffed for dessert, but next time it is on the list. It is hard to find any critique of the meal, but if I had any it would be that cilantro isn't a very common spice in traditional New Mexican food, so just embrace the NM flavors as they are. No need to try to appeal to the SW food crowd. Let them fall in love with NM food as it comes. Also, embrace the bold chiles. Go ahead and get some of those Sandia variety chiles and liberally apply to everything. There's always an on-the-side option or the Big Jim cultivar chiles for those who don't like it as spicy. Overall I loved my experience and will definitely go back. My advice to anyone who is hoping to experience this restaurant is to go there not as if you are going to it Tex Mex, Mexican food, or Southwestern food, but as if you are going to try something entirely new, because for many of you, you will be. Enjoy.

What an unexpected surprise in Seattle! Authentic New Mexican Cuisine that I loved. Not Mexican. Not Tex-Mex. New Mexican. I vacation a lot in New Mexico and love the food there. This restaurant was completely on point. Had the green chile cheeseburger (the official state food of New Mexico) and it was one of the best I’ve had. Service was excellent, in particular my server, Magic. My only disappointment is that I’m only in Seattle for 1 night. I would definitely eat here again!

It is our first time in Seattle! We are staying at the #BelltownInn and we were searching for something close by!! What a great place this is!!!!! We did an order to go for our friends & we forgot our chips & salsa, the owner brought them to us at the hotel!!! We had a wonderful meal & such a great environment!!! So if you are in #Seattle, they are in the Belltown District!!!! #NCLJoy

Cute Mexican restaurant in the Belltown neighborhood. Went on a Sunday night around 6pm and the restaurant was not very busy. The menu offers traditional Mexican fare with a little twist. We got a taco entree and a burrito entree, but started with an order of green chili cornbread. The cornbread was pretty good. The rest of the food was ok to good, with the Chili Colorado beef as a standout, not as much the taste but the quality. The burrito was served warm not hot as the sauce was starting to congeal. Here are some other items to note that made out experience not as enjoyable as it could have been. The restaurant temperature was very warm. While it is really nice to have a restaurant that can open up doors/windows to get the great Seattle weather into the restaurant, this was not adequate this particular evening. Seattle was experiencing warm temps and the restaurant did not pivot to shut some of their windows and kick up the A/C. We mentioned how warm it was to the server and he just mentioned that they A/C could not keep up. We mentioned that one of us had food allergies and the server said that he did as well. When we received our food, it contained the item that the person was allergic to. We did not mention this to the server as it became obvious that the restaurant does not train their staff to know what ingredients are in their foods. We did fall in love with their chili crunch oil that they had with their condiments. It was mentioned that it is house-made and we thoroughly enjoyed it so much, we actually bought a bottle. Lastly, the restaurant charges a 20% service charge on all bills in lieu of asking customers to add gratuity to the bill. While we understand this, in concept, when the server or restaurant fails to live up to expectations (or goes above expectations), the restaurant has removed a lever that the customer has to communicate their experience. In our case, we had to essentially pay a 20% tip for inadequate service.

We liked this place so much after one dinner, we went back the next night. It’s in the middle of a bunch of restaurants and it really is great. Both nights we got an appetizer and two dinners. Both of us loved each one. I especially liked the pork chile stew. And, definitely get the jicama slaw. That was great. Both nights we had terrific servers. Overall, a winning place to eat.

Hatch Cantina is a Belltown favorite. We came in on a very busy afternoon and the staff were still attentive and gracious — everything ran smoothly despite the crowd. The food is consistently delicious, full of flavor, and clearly made with care. The owner has also been a strong, positive presence in the neighborhood through Belltown’s post-COVID challenges. We’re grateful to have Hatch here. Highly recommend.

Lively place with great service and pretty good Mexican cuisine. They do spicy if you like it. If you don’t make sure you tell them.

Had a few drinks. And some yummy eats. Guac and chips were great with lots of Guac. My margarita could have packed a bit more of a punch :p but all in all we had a great time

This is an excellent Mexican fusion restaurant, located in Downtown Seattle. The vibe and atmosphere of this restaurant is very hip, and the staff are very outgoing, courteous and attentive. We tried several dishes and were pleased with all dishes; they were Mexican inspired with a unique flare. I highly recommend this restaurant, if you’re in downtown Seattle.

We went for brunch and thought it was really good. Service was really good and they had a good selection of brunch drinks, but also regular drinks too, and food was plentiful and very good. Our only downside was when a person came in with his dog and put the dog on a bar stool. The dog proceeded to put its paws on the bar and servers kept petting it and going back to work. Dogs don't belong in a restaurant unless they're a service animal and definitely don't belong on a bar stool with paws on the bar. We've gone too far.

We had a group for a work dinner. The service was great and fast. That was a plus for sure. The cocktails were decent. The food was just average. We had a chips and queso appetizer. The chips were normal but the cheese had the consistency of humus this was a little odd. I had the three hard shell beef tacos. They were good not great, they were dusted like the Taco Bell Doritos tacos. Overall good service the food is typical Mexican nothing special.

First bar/restaurant we came to after checking in to our hotel. After a long day flying from the UK we received a warm and friendly welcome from Geordie. Great food, fab drinks and good banter with him. Thanks girl looking after us. Would come back for food and drinks
Hatch Cantina
The service started out good. The food was OK. There were 10 of us. When we got the bill we were told they could on split it four ways. That’s not ideal but tolerable. Our bill was $275 including tip. Not a bad price. But we were overcharged on several things. We were advised that the paper menus were old and the online menu had the correct price. They adjusted the hamburger price to match the paper menu. But not thee other items. Bottom line they never apologized and they said most people scan the menu. If that’s the case then discard the paper menu. We won’t be back.
