Excruciatingly slow, anemic menu, tiny portions, poor execution

Waited an hour in nearly empty restaurant for undercooked pizza, overcooked risotto, one-note-samba salad, and fourth “main” so tiny it belonged on starters menu at half the price. An utter train wreck. Dine elsewhere.

A Very Good Kitchen and Bar to Complement an Exceptional Boutique Hotel

The Vaux Restaurant adds greatly to the Canopy by Hilton experience. Not only does it serve as the breakfast room, and a most creative buffet, and not your typical Hilton branded hotel buffet. The breakfast items and ingredients were all excellent, especially the delicious coffee and the bakery fresh bagels. The Vaux's wall of doors open to the sidewalk for outdoor dining during balmy and generally dry Portland August weather. I had a dinner at Vaux, and the kitchen is open in the bar area. I could see and talk to the chef as she prepared my broiled halibut served with wilted greens and a small amount of pasta in a light parsley pesto sauce. The Vaux also served as the guest reception area for tastings, which included Oregon white wines one evening and Oregon craft beers another.

Wonderful Gem in the Pearl

Wonderful Gem in the Pearl at Canopy Hotel. Great indoor space for Covid spacing. Food is awesome, from the simple, like wood fired pizza to the complex, Red Wine Mushroom Risotto and beer treated short ribs.

Disappointing

The breakfast selection was great and the breakfast food was spot on. On the other hand, dinner was disappointing. Went for dinner and hour and 1/2 before closing and they had a small menu with small portions. On top of that they informed me they were out of pasta and beef. Well, that didn't leave much left. Tried the second night and asked before we sat down if they had beef and or pasta. Pasta they had and only had 2 beef left so was told to hurry up and sit down and order if you want beef. Told them to hold the beef, the pasta and everything else. We are going somewhere else. Please keep in mind that the restaurant is not owned by the hotel so don't get mad at the hotel staff. We found other restaurants in walking distance that were actually excellent. If you decide to eat there, just ask them....."Where's The Beef"?

Convenient and comfortable

Usually I'm wary of hotel restaurants, but I was quickly put at ease by the comfortable atmosphere, fantastic service, and quality food. I ate both a breakfast and dinner at the restaurant and was pleased with my food. Allix was great and offered substitutions to meet my dietary restrictions and kept an eye on my coffee, which 6AM me was beyond grateful for. Though the menu is small, it seems like they focus on doing just a few things very well. The convenience absolutely can't be beat and is a great option for busy travellers.

Our stay included breakfast, which turns out to be $20/pp/day. Breakfast is served until 10am and you need to order at the counter. While we are not breakfast people, we did enjoy sharing the various dishes: omelette, open faced sandwich, bagel sandwich… The cappuccino and latte were legit.

OMG!! This place is awesome!

OMG!! This place is awesome! Stopped in for happy hour, ended up staying the evening. Bartenders Haley and Joe ROCK! Had the Pendleton Whisky Manhattan. LOVED it. Bar cheese plat: LOVED it! Made with some kind of croissant bread and melted in my mouth. Charcuterie plate: LOVED it! The Bleu cheese is made in Oregon and just became like the best in the world (some cheese award lol) but LOVED it! Atmosphere is great, food is wonderful and the service was second to none. Our gamble on an unknown place to us turned out to be stellar. Thank you especially Haley & Joe. You made our experience very memorable ❤️❤️

Fine for hotel credit and breakfast; skip for lunch.

This restaurant is attached to the Hilton Canopy Pearl District, and so we frequented it for breakfast and lunch during our stay with a daily $30 credit. Breakfast is definitely better than lunch, with a good selection of continental and hot food offerings along with a fully stocked espresso bar. The roasted potatoes that come with most of their hot breakfast items are delicious! The menu for lunch is anemic. There are a handful of small pizzas with uninspired toppings and then a couple sandwiches. It's kind of like what you might find at an airport heat-take-and-go kiosk. They do have some good options for cider and beer on tap, so maybe it would be better to stop by for happy hour or a quick drink, but the lunch options are all fairly disappointing.

Wonderful Restaurant

As a guest at the hotel, there by myself on Christmas Eve, I thought I would try the restaurant for dinner. Certainly glad I did. I sat at the bar, which was busy, only one seat available. The bartender is a friendly gent. I had a can of local hazy IPA. Then ordered the Short Ribs and Smashed Potatoes. The ribs did not need a knife, very tender and flavorful. The potatoes were equally delicious, being small potatoes smashed with skins still remaining. Nice way to end the Christmas day over a great meal.

Nice hotel restaurant that is adjacent to the bar. Nice decor but entrance not well marked if you enter from street side near the lobby. Limited menu but everything is very good and well presented.

Fine Pizza, Nice Vibe in Pearl District Hotel Restaurant

This casual, industrial chic restaurant/bar in the lobby area of the newish Canopy boutique hotel provides solid food and drink choices at good prices. We settled on two of the pizzas in the wood-fired style and each delivered deliciousness at reasonable prices ($17, $16). The better of the two was my companion's pizza with Oregon pears and blue cheese supplemented by roasted shallots -- utter yum. My fresh mushroom pizza featured three different kinds of 'shrooms, but they were over-powered by the red sauce which was fresh-tasting but on the strong side. Service was friendly, helpful and real. Vaux provided a welcome and relaxing respite after a 300-mile day on the interstate. It was a fine place for a Sunday night bite and sip for these two first-time Canopy guests. BTW, the restaurant's name is to honor Vaux's swift, a beloved bird in the Portland area.
