I am a bit confused by what means of currency to use in India. Our credit cards do not have foreign transaction fees, but I wonder about the currency exchange rate. I have heard people from Australia and New Zealand recommend the WISE card. The Wise card is not available in the US, but the app is available. It can be added to the Apple wallet, but...can we pay most places in India using the Apple wallet wise pay method. We will exchange cash up front, but do like to use credit cards when we can.

Just use your credit card and have cash and one back up option (like Apple Pay or second card). Check which exchange rate your bank uses, and be sure to always select to pay in Rupees (which means the merchant vendor isn't charging their rate).

I expect many of your transactions to be low value and not best use of your card. Much better simply to withdraw INR from local automatic teller machines.
You need to research the best option available to you - one which does not charge fees for international transactions as a start, nor for currency conversion.

Best to bring cash and exchange it at money changers in Delhi, I got +10% over official rate for CAD. USD also good.
