Favorite Maui food trucks and casual food

Reading the recent favorite Maui snack thread gave me an idea. I am traveling solo to Maui in August for 9 days and when I travel alone I prefer to eat at low key places and food trucks. I will be staying in Wailea but I love to drive all over and plan an overnight trip to Hana, a day in upcountry and a day or two visiting west Maui.
