From 12 March to late May 2025, step into a wood-fire celebration of the season where the freshest ingredients are transformed into vibrant, island-inspired creations.
Savour the ocean in a bite with Bluefin Tuna Poke tartlets topped with ocean water froth, then explore bold reimaginings like Wagyu Beef Pipikaula paired with potato rosti and French white asparagus, or the earthy delight of Kalua Pork Dumplings served with taro leaf and fermented red cabbage.
