Backstory|Four Seasons of Taichung in a Glass House

Isagi is run by a Japanese team, with different chefs specializing in raw dishes, hot dishes, and desserts. The core culinary tradition is rooted in Fukuoka cuisine, utilizing abundant local Taiwanese ingredients (such as Chiayi white rice and seasonal fish from the fishing port). The resulting flavors are crisp and clean, unassuming yet memorable. The dining space retains the tranquility of an old alleyway, with large floor-to-ceiling windows bringing in the courtyard view. My Real Dining Route

① Opening: Bread, Oil, and Pickles Trio

A small appetizer lands on the table: a refreshing olive oil dip, a sweet chili sauce, and delicate pickles. The palate is gently awakened, and the tongue is already in the "clean channel."

② Appetizer: A Proportion of Mountain and Sea

The white plate resembles a miniature garden: seared seafood with a slightly charred surface and a springy center, bordered by tomatoes, herbs, and a light creamy cream. The balance of salt, acid, and fat is perfect, and the visual white space is very Japanese.

③ Sashimi/Nigiri: The Quiet Role of Cutting Skills

The fish laid out in a row on the table are handled with restrained control of fat, fiber, and temperature. The nigiri rice's warmth doesn't overshadow the scene, and the sour and sweet notes of the sushi vinegar are subtle, leaving only layers of depth. As soon as the lid of the small earthenware pot was opened, the aroma of rice hit the table first. Thick-cut fish belly and salmon roe were layered on top.
