Tucked away in a quiet alley, under the wooden interior and soft lighting, each piece of Edomae sushi, prepared using the "Tsuhon-style aged" method, seemed to awaken all my senses. The Hanazono Course consists of seasonal fish sashimi, clam soup, grilled fish paired with chawanmushi, salt-smoked mackerel nigiri, and sea urchin and awabi. The seasoning is exquisite, and each bite of rice is infused with the flavor of the ocean. Sitting at the counter and watching the chef's skills up close was captivating, and finishing with a refreshing dessert and miso soup left a warm feeling inside.
