A must-try Wakayama ramen dish, Wakayama ramen has three main broth styles: shoyu, tonkotsu, and innovative. They use a type of noodle known locally as "Chuka-sob." You can find it at Marumi Shoten, located in the food court on the B1 floor of the shopping mall connected to JR Wakayama Station.
Getting there: While the food court on the B1 floor of the Wakayama Mio shopping mall, which is connected to JR Wakayama Station, is small, Marumi Shoten is within walking distance.
Marumi Shoten has limited seating, with approximately 5 seats at the counter and 16 seats at tables for four. Marumi Shoten specializes in soy sauce tonkotsu broth. The broth is darker in color and has a strong soy sauce flavor. I expected it to be quite salty, but it turned out to be quite light. The noodles were thin, which surprisingly complemented the broth. The chashu (char siu) was tender and melt-in-your-mouth, but unfortunately, there were only two slices of thin pork belly. They were garnished with two pieces of fish maw, but it was a complete meal without any overwhelm. It's a great idea to try it when you're in Wakayama.
