The taste of Tengchong cuisine is unique in Yunnan. It is completely different from Dian cuisine. It is oily but not greasy, moderately sour and spicy, fragrant and refreshing. Earthen pots and Dajiujia are famous local specialties that must be tried.
"Three Drops of Water" is the highest-ranking banquet for locals, especially those in Heshun Township. It's a form of entertaining important guests. It encompasses nearly every flavor of Tengchong. The first drop is composed of snacks and appetizers, such as dried fruits and cold dishes. The second drop is the "Eight Big Bowls," featuring Tengchong's signature dishes, such as fire-baked bread and pocket-shaped tofu. The third drop is composed of desserts, including sweet white wine and fruit. Authentic "Three Drops of Water" is rare these days, and even those that are available are often modified.
Heshun Tounao is a typical medicinal food with strong nourishing properties. In Heshun, a hometown of overseas Chinese in Tengchong, the local custom of eating "Tounao" (rice cake) is on the second day of the first lunar month. When a son-in-law visits his mother-in-law's home to pay New Year's greetings, his mother-in-law prepares a special bowl of Tounao for him, symbolizing a year of intelligence, respectability, and wisdom, and a happy and prosperous life for the couple. This dish is now also available in some local restaurants in Heshun Town.
Earthenware pots are unique to Tengchong. In addition to being served in local people's homes, authentic pots can also be found in many Tengchong restaurants. Currently, there are three types of earthenware pots: large, medium, and small. The small one serves 4 people, while the large one can serve 10 people.
It is one of the most famous foods in Tengchong. Tengchong's rice noodles have a delicate and tough taste and will not become mushy even if cooked for a long time. It is the most common food on the streets of Tengchong.
A type of stir-fried bait, the bait is cut into triangular pieces and stir-fried in a high-heat wok with ham, pork, eggs, carrots, tomatoes, and pea tips. Spices are added before removing from the wok. Dajiujia is a delicious dish available in many restaurants and is a local favorite.
This dish tests the chef's knife skills. Cooked and cooled pork is sliced into transparent, window-paper-thin slices and then dipped in the seasoning. The crispness of the thin slices and the flavor of the seasoning blend in your mouth, whetting your appetite.
Songhua cake is not expensive and tastes very good, so many people like to eat it.
