What do to on a Sunday Night Into Monday In Vegas

I have an unusual situation. I must be in Vegas for a noon event on Monday morning with the intention of leaving that same evening. I found some flights that get me into Vegas around 12:30 am that Monday (11ish hours before I have to be at the venue) and then fly me back out at 10 pm.

What is there to do in Vegas on a very late Sunday Night/Early Monday morning? If I can avoid getting a hotel room and just do something until I need to be at my event around 11:30, that would be awesome. I am more concerned about the 1 am to 8 am time period.

So, locals and those who should be, what would you do for seven hours in the wee hours of a Monday morning? I will be traveling with a single backpack, so there is not too much baggage to worry about.
