Things to do in Livingston before the Rodeo

We are a family of 6 (two parents, 3 teens and a 12 year old) travelling to Yellowstone and GTNP the end of June-beginning of July. We are spending 2 of our nights in Gardiner including the 1st. My husband really wants to see a rodeo and I've heard the Livingston one is more real and less touristy than the others in the region. But I'm trying to decide what else to do that day. We have 4 days before that in Yellowstone so I'm thinking about exploring Paradise Valley or maybe even going as far as Bozeman for the Grizzly Center and Museum of the Rockies. Another idea would be hiking or rafting. Any suggestions? How busy does the Pine Creek trail get?
