Fury, Sebago, or Sunset Watersports?

I was looking into these companies for activities for me and my older mother to enjoy. I just wanted to get a feel for their reputation and reliability as I see a lot of positive reviews on all of them. Could be concerned some of those may not be legit though and why I ask. Not sure what we would be set on excursion type yet. Sunset cruise sounds nice, but also the snorkeling and sandbar tours sound like they can be fun too. Ruling out Danger Charters because I am concerned about a smaller boat like that and her balance.

One of the reasons I ask too is because we had a company in Hawaii cancel on us because they didn't "have enough people" to warrant it. We almost lost out on the money I paid if I hadn't firmly convinced them to book us on a different trip on that day. Experiences like that is why I want to do more research and get feedback from locals/travelers who've been there.
