Legend has it that during the Jiajing reign of the Ming Dynasty, Japanese pirates were rampant along my country's southeastern coast. To combat the pirates, Ming Dynasty general Qi Jiguang recruited soldiers in Lishui. As his troops marched to the front lines during the Dragon Boat Festival, the people of Lishui combined meat and vegetable dishes and wrapped them in dough to ensure ease of delivery. This is how the "rolled pancake" (jianbing) came about. Qi Jiguang later led his army to victory against the Japanese pirates, and the Lishui soldiers were widely praised for their bravery. Legend has it that Emperor Xuanyuan once set up a furnace at Dinghu Peak in Jinyun Mountain to refine elixir. He was so focused that when he was hungry, he would grab a piece of dough and stick it on the wall of the furnace to roast it. After Emperor Xuanyuan ascended to heaven on a dragon, local people used clay to make pottery furnaces, imitating the emperor's furnace, and roasted dough for consumption.

Legend has it that during the Ming Dynasty, a man named Liu, skilled at steaming and boiling meat, opened a butcher's stall in the city. He wanted to expand his business, but his family was short of money, and he couldn't afford it. Soon, he met a Fujianese man and invited him to his home for dinner. Liu cooked pork skin and minced meat together, then placed the skin on top of the dish. The Fujianese man raved about it, so the two of them decided to name the dish "Pu Ti" (Pu Ti) and promote it abroad.
Liu's signature dish became the famous "Qingtian Pu Pig's Trotter" today.
The base of the pot is made of white radish grown by farmers, with golden fried farmer's tofu and large chunks of fresh pig's blood spread in the middle, then covered with a layer of crispy and fragrant pork belly, and finally sprinkled with chopped green onions.
