Shaxian snacks have been famous throughout the country for many years for their affordable prices and simple taste. Stores have been opened everywhere and even abroad.
When you first see it, it looks like wonton as usual, but locally, it is called "flat meat". The skin is thin and smooth, sticking to the meat, and has a chewy texture.
Different from the meat-filled and glutinous rice-filled siomai in other places, Shaxian's siomai is made of a mixture of vermicelli, diced meat and diced bamboo shoots. It was even recognized as a "Famous Chinese Snack" in 2009. The skin is clear and breaks when poked.
The most famous Shaxian siu mai is in Jialan, a 30-year-old establishment where locals queue for food. At first glance, these plump siu mai don't seem particularly special, but dip them in the shop's fermented black bean oil and they're incredibly satisfying and delicious!
The glutinous taro dumplings are probably a favorite of many friends.
The dumpling wrappers are made of taro and glutinous rice flour, and then filled with bamboo shoots, vegetables, and minced meat... The dumpling is chewy and smooth, and especially appetizing!
Different from the cold noodles in northern Shaanxi, the key feature of rice jelly noodles is the smoothness. The appropriate ratio of rice milk creates its smooth and easy-to-break fluidity.
Some people prefer to soak the rice jelly skin in a soup made from wine lees and loach, while others prefer to pour fermented black bean oil on it. Each has its own flavor. Choose the one you like. It’s hard not to love the light rice aroma.
