"At the counter, everything looked simple, yet it was filled with meticulous care. The chef handed me the third hand roll in the set: 'Amaebi (sweet shrimp) with salmon roe.' The seaweed was still crisp, with a slight 'creak' sound before it entered my mouth.
As soon as I bit into it, my first impression was the salty, rich flavor of the ikura roe that popped in my mouth. This was followed by the sweet, mellow, and chewy texture of the fresh, sea-fresh amaebi shrimp, contrasting with the slightly sour flavor of the perfectly seasoned sushi rice.
In that moment, everything around me seemed to disappear. It was just me and the roll in my hand. I ate quickly to achieve the best crispness of the seaweed, but at the same time, I had to meticulously absorb the flavors of the premium ingredients the chef had carefully crafted.
