After passing through rows of old residential buildings and climbing a hundred steps, you’ll find yourself at "Non-White OR BLACK," a hidden gem tucked away in Chongqing’s alleys. This private Sichuan cuisine restaurant, named "Non-White," defies expectations with bold and vibrant flavors that challenge stereotypes about Sichuan food.
The restaurant features a deep gray and natural wood theme, with dim lighting and walls adorned with reprinted illustrations from ancient Sichuan culinary texts, exuding a subtle scholarly vibe. In the open kitchen, the chefs’ focused stir-frying and the aroma of Sichuan pepper instantly awaken your appetite.
From small plates to main dishes, every offering is a collision of tradition and rebellion:
🍊 "Pomelo and Water Chestnut": A refreshing appetizer with a sweet and tangy flavor.
🍵 "Tea-Infused Pork": Unlike the rich sweetness of Huaiyang tea dishes, this features diced pork paired with crisp and elegant tea slices, offering a layered umami taste that’s sweet but not overwhelming.
🥩 "Salted Bamboo Shoots and Pork": Seasonal bamboo shoots from April paired with specially marinated salted pork slices, delivering a crunchy and sweet freshness.
🦐 "Shrimp and Vermicelli": Vermicelli steamed over low heat to fully absorb the shrimp’s juices, resulting in a delicate and harmonious dish.
🫑 "Wild Chili Frog": A pot covered with densely packed wild chili peppers and tender frog meat seasoned with a secret recipe and cooked with oil to enhance the texture, making it a playful twist on traditional Sichuan cuisine.
The rest of the menu is equally impressive. "Non-White OR BLACK" feels like a poetic chef deeply versed in traditional techniques, using bold creativity to deconstruct Sichuan cuisine. It retains the rustic charm of Bayu while adding a touch of modern culinary flair, perfect for diners tired of the usual spicy fare and seeking a taste of "unconventional" old flavors.
