Jangdokdae is the traditional Korean fermentation platform—a cornerstone of Korea’s culinary heritage. A jangdokdae is an outdoor raised platform—typically stone or concrete—used to store large earthenware jars (jangdok or onggi) for fermenting and preserving foods like kimchi, doenjang (soybean paste), gochujang (red chili paste), ganjang (soy sauce), grains, and salted seafood. The term combines jangdok (“crock”) and dae (“place” or “stand”)—literally, the “place for jars” .
