The omakase course at "Sushi Rindou" was a luxurious composition that made the most of seasonal ingredients. The raw oysters from Aioi, Hyogo Prefecture, had a rich umami flavor, and the first bonito with egg yolk vinegar offered a refreshing acidity that was exquisite. The salt-boiled isotsubu shellfish had a pleasantly crunchy texture, and the firefly squid from Toyama was a dish bursting with sweetness and the scent of the sea. The blackthroat seaperch baked with nanohana and cheese harmonized the slight bitterness of the rapeseed blossoms with the savory aroma of cheese, evoking the feeling of the season.
Each piece of nigiri was a masterpiece showcasing the chef’s skill. The otoro stood out with its rich, sweet fat, the sea urchin was creamy with a deep flavor, and the simmered anago was fluffy with a melt-in-your-mouth texture that left a strong impression. The thick roll with cherry salmon had a moist texture and an excellent balance of acidity, and the final red miso soup with freshwater clams enriched the lingering taste of the meal.
The interior features a calm space with a white wood L-shaped counter and a relaxed layout with only 9 seats. The luxurious atmosphere allows you to enjoy the craftsmanship of the chefs up close.
