[Tokyo Yoneshibaren] One-star sushi restaurant "Edomae" ❤️

There are always several times a week when I want to eat Omakase🍣🥢. This time I went to a well-known [Tokyo Michelin] one-star 🌟sushi restaurant on Canton Road ~ another star-picking journey. The main store in Tokyo Ginza 🗼 is a Michelin-starred restaurant 🌟, and you can taste Edomae cuisine ❤️ in Harbour City.
The restaurant uses only seasonal ingredients. The characteristic of "Edo-mae Omakase" is that the sushi is already seasoned, so there is no need to dip it in extra soy sauce. The overall atmosphere is grand. This private room can seat a total of 16 guests. It is not cramped and the pace is neither fast nor slow.
【Sumeragi Omakase】 $1,780 p.p
Pay three points first:
🔸Japanese sauce boiled eggplant (super sweet), firefly squid, conch (refreshing and sweet)
Sashimi two points:
🔸Hokkaido oysters (cooked with sesame oil) & golden eye snapper with basil flowers (sweet meat)
🔸Straw smoked baby tuna (with scallion mustard & scallion ginger oil, 2 flavors)
🔸Grilled saury (belly) with radish puree
Signature grilled food:
🔸Hokkaido Water Octopus (Signature Delicacy)
After slow cooking for 4 hours and soaking for 24 hours, it becomes soft and tasty.
(Simply served with wasabi sauce & yuzu pepper)
Eight pieces of nigiri sushi:
(Pickled ingredients: ginger, Chinese yam, burdock)
🔸Hamaribone (white fish with tender and sweet flesh)
🔸Pond fish with chopped green onion (fresh and tender with green onion flavor)
🔸Northern scallop with lime juice (sweet and fresh after roasting)
🔸Kagoshima shrimp (thick and sweet meat)
🔸Hi no Ci (after roasting, the oil will be squeezed out and it will be more fragrant)
🔸Aomori Oma Large Tow (Matured for 10 days for a more delicious fish flavor)
🔸Horse dung sea urchin (super sweet and melts in your mouth)
🔸Sea eel (cone) sauce made from eel bones & seasoned with sansho powder
🔸Tamago (egg, honey, shrimp, white fish)
The texture is as soft as a sponge cake, and it also exudes a light fish aroma.
Bowls:
Red miso soup with king clams warms the stomach.
Dessert:
Strawberry, raisins, plum wine jelly
