Passing Down Intangible Cultural Heritage Through Taste

Royal Hotels Hong Kong presents the "Heritage Banquet: A Culinary Legacy" designed by chefs Kong Chiu-Kei and Lee Ka-Ting. Inspired by Hong Kong's intangible cultural heritage, this banquet integrates traditional craftsmanship into exquisite Cantonese cuisine, offering diners a profound cultural journey through taste.

🔸️Three Marinated Delicacies Showcasing Heritage Essence
- Peppery Ink: Squid prepared with Chaozhou marination techniques, accented with Sichuan pepper for a tender and fresh taste.
- Amber Ginger: Pickled ginger paired with century egg, offering a tangy and appetizing flavor.
- Saucy Treasure: Local shrimp paste braised sea cucumber, rich in umami.

🔸️Two Smoked Delights Highlighting Culinary Tools
- Bamboo Fragrance Dumpling: Duck meat dumplings steamed in traditional bamboo baskets to lock in the original flavors.
- Golden Crispy Char Siu: Barbecued pork infused with fermented bean curd, paired with crispy rice crackers for a layered texture.

🔸️Main Courses: Emerald Delights
- Wonton Perfection: Fish maw wontons prepared through 27 meticulous steps, simmered in a clay pot for a rich broth and flavorful filling.
- Harbor Elegance: Salted fish and black bean stir-fried with marinated threadfin and typhoon shelter-style ingredients, bursting with wok hei. This is my favorite dish.
- Aged Marinated Chicken: Chicken and porcini mushrooms slow-cooked in aged tangerine peel marinade, offering a rich and mellow taste.

🔸️Coastal Scenery
- Dried Seafood Harmony: Sun-dried shrimp and fish maw cooked with young choy sum, delivering a fresh and elegant flavor.
- Golden Fried Rice: Crab meat and crispy taro strips stir-fried with preserved meats, resulting in a fragrant and dry texture.

🔸️Desserts
- Tea & Coffee Duo: A creative dessert transforming Hong Kong-style "Yuenyeung" into tea and coffee jelly.
- Traditional Treats: Sparrow-shaped Malay sponge cake, soft and fluffy, alongside walnut cookies, crispy and sweet, leaving a delightful aftertaste to the feast.

This banquet skillfully connects intangible cultural heritage techniques, with each dish showcasing exquisite presentation and delicate flavors, reflecting the culinary team's contemporary interpretation of traditional culture.
