In the bustling Liuhe Night Market in Kaohsiung, I found a really good little soup shop! I ordered a bowl of warm soup, which was smooth, nourishing, and filled my mouth with a refreshing sweetness. 😋😋😋

I also paired it with a braised pork rice dish. The perfectly balanced braised pork was salty and fragrant, complementing the rice; a plate of crispy blanched vegetables, simply drizzled with soy sauce, was delicious; and a perfectly seasoned herbal fish head, braised in a savory broth. Sitting on a small stool in front of the stall, watching the people come and go, enjoying these simple yet soulful dishes, I was instantly filled with a strong sense of local authenticity. This is the most charming flavor of a Taiwanese night market!
