Kyoto. A pickle shop's soft serve ice cream with a fermentation theme

The location is near Hankyu Kyoto Kawaramachi Station

On the first floor of "Rissei Garden Hulic Kyoto" (THE GATE HOTEL Kyoto Takasegawa).

This soft serve ice cream contains "sweet koji" made from rice and koji + "lactic acid fermented sweet koji" fermented with "Labré lactic acid bacteria".

To be honest, I didn't really understand it, but when I tried it, I noticed that the koji-like grains were kneaded into the soft serve ice cream and it had a fluffy flavor.

The fermentation techniques cultivated by the long-established pickle shop "Nishi-ri" are used in the soft serve ice cream.

The shop also sells bread and other ingredients, so if you're interested, why not stop by?
