🏭 History and Background:
Founded in 2006 by Takashi Kondo, who left his corporate job to start the business. His son, Hiroshi Kondo, now leads production as the second-generation cheesemaker. Their high-quality cheese has won numerous awards at international cheese competitions.

Using fresh milk from local dairy farmers and spring water from the foothills of Mount Yotei, this small-scale atelier-style factory is run by the father-son duo, crafting cheese by hand.

🧀 Main Product Lineup
Blue Cheese "Niseko Ku": Semi-hard texture with mild bitterness and flavors reminiscent of nuts and broth. Multiple awards won both domestically and internationally.
Yeast Cheese "Konayuki" Series: Sweet-style cheeses with rich aromas like clove & orange or mixed fruits. Awarded at the Hokkaido Cheese Expo and other cheese contests.
Semi-Hard & Hard Types: "Momiji" and "Kaede" offer a balance of aging and deep flavors. Many have won gold medals in domestic and international competitions.
Other varieties include fresh types (e.g., string cheese "Shirakaba"), white mold, and washed rind cheeses.
