Finally checked in at the hidden gem noodle bar in Mandarin Oriental, Sanya, and it completely changed my perception of hotel dining! This noodle bar, tucked inside a glass house surrounded by coconut trees, lets the sea breeze intoxicate you. In the evening, you can enjoy noodles while watching the sunset over Coral Bay, and every snap is an Instagram-worthy shot 🌴
Highly recommend their signature fermented rice vinegar seafood noodles! When served, the sour, spicy aroma hits your nose immediately. The broth is bright red like little lanterns, piled with shrimp larger than your palm, plump clams, and fish slices as thin as cicada wings. Slurping the noodles, you get a tangy kick with a hint of spice, so fresh it’ll make your eyebrows drop. Especially the seaweed, cooked tender and soaked in the broth, every bite feels like drinking the whole ocean! I suggest adding an extra serving of instant noodles; soaked in the sour and spicy broth, these noodles are a carb bomb that’s so delicious you’ll want to stomp your feet!
The slow-cooked Wagyu beef rib noodles are even more exceptional! The beef ribs are slow-cooked at low temperature for 48 hours, and they melt with a gentle poke of chopsticks. The meat is so tender it feels like it’s dancing in your mouth. The sauce is a rich, savory, and sweet local-style blend that’s incredibly flavorful. Paired with a soft-boiled egg and crunchy vegetables, every bite is a richly layered delight. Here’s a tip: mix the onsen egg into the noodles—the yolk coating the noodles is absolutely divine!
