[Sinchon/Seoul] Excellent service and delicious kalbi jjim

A restaurant I've always wanted to try has apparently moved and been renovated, so I went there to try their kalbi jjim!
There are about four levels of spiciness to choose from, and I was given a verbal explanation in Korean!
(Sorry, I didn't ask if they offer Japanese. 😭)
They asked me if I could eat Shin Ramyun and if it was okay if it was spicy, so I went for that! 🤣
What Koreans consider Shin Ramyun is probably too spicy for Japanese people. 🔥
Mild Spicy → Slightly Spicy → Spicy
Apparently, there's also a non-spicy soy sauce-based version.
Kalbi jjim is a home-cooked dish eaten on special occasions like New Year's,
and the seasoning, ingredients, and presentation vary greatly from restaurant to restaurant!
The basic style is to simmer bone-in pork ribs like spare ribs until they're tender and then add vegetables.
The flavors vary from soy sauce-based to gochujang-based, and the appearance varies from red to black, with lots of broth and little to no broth.
Here it was bean sprouts and king oyster mushrooms!
You can add as many bean sprouts as you like! They go around asking questions like you're baking at a wedding.☺️
They cook right in front of you, so all you have to do is wait.
They even provide tongs so you can eat! But they're so tender you don't even need them!🤤
I also ordered tteok, which was incredibly delicious.
It was spicy, but delicious!
I also got gonduraebap (mixed rice with wild vegetables) (special order) and memiljeong (buckwheat pancake)!
Memiljeong comes with your kalbi jjim!
It's also absolutely delicious! The simple flavor is so good you can't stop eating it.🤣🤤
All the staff were incredibly kind!
More than just energetic, they were all bright and kind, and the service was impeccable!
Everyone was wearing red overalls like Paper Korea House and caps with letters on them.
I wanted to ask them what they chose the letters for, lol.
Anyway, it was so delicious, I'd love to go back again!
If you don't like spicy food, I'd like to try the soy sauce base version too. ☺️
However, it's a minimum order of two servings, so be careful if you're dining alone! (The portions are crazy, lol)
