During my recent visit to a charming restaurant near Yang Cheng Lake in Suzhou, I had the privilege of savoring the renowned hairy crabs that are a local delicacy. These crabs are celebrated not only for their exquisite flavor but also for their unique breeding process right in the fresh waters of Yang Cheng Lake.
At the restaurant, the crabs were served steamed, showcasing the freshest catch possible. The preparation was simple yet perfect—steamed to preserve their delicate sweetness and rich roe.
