On the eve of the Spring Festival, I stepped into the Shuheng Hotel and started a Huaiyang food journey. The exquisite knife skills of the squirrel mandarin fish are amazing. The golden fried fish body is as agile as a squirrel. Pour the sweet and sour sauce on it. It is crispy on the outside and tender on the inside, and the sweet and sour taste is intertwined on the tip of the tongue. The salted duck has the gentleness of the Jiangnan water town, moderate saltiness and fragrance, and tender meat. Every bite can taste the elegance and exquisiteness of Huaiyang cuisine.
I thought that the food experience was unforgettable, but I didn't expect to hear the news of Shuheng Hotel again. It actually launched a new Yunnan cuisine. Yunnan, a land full of magic and charm, has nurtured unique cuisine.
Yunnan cuisine is famous for its rich and diverse ingredients. Wild mushrooms are a major feature of Yunnan cuisine, such as chicken mushrooms, matsutake, and porcini, each of which carries the aura of the mountains and forests. They are either stewed in soup, blending the mellow freshness into the soup; or fried, collide with chili, garlic, etc. to create a wonderful taste. There are also flowers in the dishes, rose sugar, jasmine fried eggs, etc. The fragrance of flowers and ingredients are perfectly integrated, so that the taste buds can also appreciate the romance of Yunnan.
Yunnan cuisine has a variety of flavors, and the sour and spicy flavors are particularly prominent. The unique sour taste of sour bamboo shoots soaked in the tender eel meat, paired with the hotness of millet peppers, stimulates the taste buds and makes people unable to stop. There is also a hand-held rice full of ethnic style, colorful, with a variety of ingredients gathered together, and every bite can feel the fusion of the food culture of different ethnic groups in Yunnan.
The transformation of Shuheng Hotel from Huaiyang cuisine to Yunnan cuisine this time is like a food migration across mountains and rivers. This time, I can't wait to walk into Shuheng Hotel again to explore the unique flavor from the south of the colorful clouds and complete a wonderful journey from Jiangnan to the southwest on the tip of my tongue.
