Advance Bookings Necessary?

We are thinking about a last minute trip to Kauai at the end of this month. Is it necessary to have restaurants, kayak and boat tours, etc. pre-booked and would they probably be full already?

Four years ago we went to Maui and Ohau and it was critical to make reservations several months in advance for dinner, luau, certain beaches and parks, etc. Is Kauai like that in January? Can we just go and wing it or would it be better to hold off and book the trip when we have more time to plan? We are coming from the east coast so it's not just a quick trip for us. Thanks!
