Separate boat tour from snorkeling (or not) in May?

Hi all. I have been studying this forum to find out the best boat tours. Now I am wondering if it is best to snorkel only off-shore and see the coast from a boat tour that does not include snorkeling. I have read that people enjoy a sunset sail to see the coast. Is that better than taking one that is during the day and includes snorkeling?

For boat tours with snorkeling, do you get to see more sea life and coral than just going alone off a beach?

Any recommendations for best off-shore snorkeling during the end of May?
