Its signature broth, "Chicken Paitan," is made by simmering Japanese rice duck, organically raised Kyoto Tanba chicken, and nearly forty types of miso from across Japan, resulting in a rich yet non-greasy flavor. Recommended by Master Hayashi Takashi, this extra-rich chicken broth is paired with low-temperature slow-cooked chashu and a soft-boiled egg. The soup is rich and flavorful beyond words, the noodles are springy and hold the broth well, the slow-cooked chashu is tender with alternating lean and fatty layers but never greasy, and the soft-boiled egg is perfectly done with a hint of sweetness. A truly delicious bowl of ramen.
