Don't you crave gopchang?

There are days when you crave gopchang. Grilled gopchang, specifically. As I always say, the freshness of the gopchang itself is crucial. Like samgyeopsal (pork belly), it's simply grilled. Furthermore, because it's a special cut of intestine, not regular meat, management, hygiene, and freshness are especially important.

The taste of the gopchang can vary dramatically depending on its freshness. "Gopchang-go," located in Aemakgol, Chuncheon, had fresh makchang and gopchang. Honestly, I'm not sure about the daechang. Compared to the daechang restaurant I visited during my previous trip to Busan, the daechang felt lacking in flavor. But the makchang was delicious. In other words, it's a makchang restaurant, not a daechang restaurant.

The daechang's tripe was just okay, but there wasn't much of it, so it didn't have much of the characteristic oiliness. Isn't daechang supposed to be enjoyed for its fatty flavor? However, the remaining makchang and yeottong were chewy and delicious. While writing this, I researched and found out that Gopchanggo is a chain restaurant. I see. I thought it was only in Chuncheon, but I was wrong, lol. Still, for a chain restaurant, this was worth a visit. We ordered two assorted tripe platters, which cost 80,000 won. That's 20,000 won for each of the four of us. It's not a bad deal, considering the price.
