"Hikiniku to Come" is a famous Japanese hamburger restaurant. Their main menu is a set of three hamburgers, served one at a time, with a "three-way-to-eat" guide.
The first piece is eaten plain (without sauce or garnish) to experience the "original" flavor of the hamburger—the juicy, sweet, and umami flavors of the meat.
The second piece is eaten with grated daikon radish and ponzu sauce (yuzu ponzu). The sour, salty flavors and the refreshing ponzu help cut through the richness.
The third piece is eaten with a raw egg yolk (either beaten with the egg white or topped with the yolk). The yolk's "richness" enhances the flavor of the meat.
We made a reservation in advance, and it didn't take long to get our food.
