A one-of-a-kind "sushi x Italian" course delicately prepared by a former Italian chef using seasonal ingredients from Setouchi and Hokuriku ☺️

[Course contents]

・Appetizer: Pureed spring cabbage
・Three kinds of sashimi: Red sea bream, amberjack, and mozuku seaweed from Setouchi in vinegar
・Clam and bamboo shoot chawanmushi with tea oil
・Cold pasta with boiled whitebait and karasumi breadcrumbs
・10 pieces of sushi:
Medium fatty tuna from Nagasaki
Flounder from Kagoshima (with fin on top)
Salmon from Hiroshima
Nodoguro from Ishikawa (with Noto salt)
Whelk
Red meat
Horse mackerel from Setouchi
Salmon roe
Raw sea urchin
Stewed conger eel

The appetizer of pureed spring cabbage is a dish that spreads gentle sweetness and flavor✨
All of the sashimi is fresh, and the amberjack in particular has a great texture☺️

The chawanmushi has an exquisite taste of clams and the texture of bamboo shoots, and the aroma of tea oil spreads softly💗
The cold pasta is a dish with the saltiness of boiled whitebait and the richness of karasumi, and it was so delicious that I couldn't stop eating it🥢

The sushi made with red vinegar was delicious, and the flavor of the rice was also great, and the combination with the topping was amazing💕
The combination of blackthroat seaperch and Noto salt was particularly impressive, and the fat was amazing✨️
The flounder was topped with fin fin, raw sea urchin, boiled conger eel, etc. All the toppings were main-level💗

The roasted Spanish mackerel was fluffy and went great with the cauliflower sauce! The green laver miso soup was also luxurious, fragrant and hearty💭

The cheesecake dessert was a combination of cherry blossoms and matcha, and looked spring-like, making it the perfect way to end the meal🌸

The ocean of Miyajima spreads out in front of you, and you can also see Itsukushima Shrine.

We enjoyed our food at our leisure in a calm atmosphere.
