Hung Hom Edo Sushi Show recently invited the famous chef Liu Jinwei to join, and I came here because of his reputation🥰
Lunch OMAKASE, 14 dishes starting from $580

First, the Tokushima Prefecture red sea bream with lime and yuzu, and wild yellowtail sashimi. The former has firm and elastic meat, and the addition of lime juice, rock salt, and olive oil makes it taste fresher, while the latter can be eaten immediately after cutting, without seasoning, and the fat is sweet and melts in the mouth

The specialty of Aomori Prefecture, Yonezaki oysters, have a heavy metal taste. Chef Liu processed it in the traditional way, with a little sour vinegar jelly salmon roe to make it more refreshing and sweet

Then there is black truffle sauce with horn snails, the meat is refreshing and elastic, and the addition of black truffle sauce has a rich aroma

Followed by special cooking, including grilled mackerel, with fried scallion shreds, chopped shiso leaves and chrysanthemums, full of fragrance
; and red sea bream grilled and then smoked with apple wood, the fish flavor is more fragrant and the fat is rich.

The unforgettable secret sauce and wine-steamed Hokkaido abalone have a sea-flavored and elastic texture, and are paired with abalone liver paste for a rich flavor.

Finally, there is the fire-grilled left-mouthed fish skirt sushi, which is rich in fat, paired with secret sauce and crispy seaweed, and is full of fragrance.
