Tonight, I came to π Tsim Sha Tsui's hidden gem "Hua Chen Yue Xi," a high-end Japanese restaurant π―π΅ for dinner. They specialize in exquisite, high-quality Omakase. π€© I chose the "Omakase Moon" ($1580), where every dish from appetizer to dessert is crafted with the chef's heart and top-tier ingredients. It was so delicious it made my tongue dance π!
The appetizer of Matsuba crab leg meat π paired with abalone looked exquisite. π¦ The Matsuba crab leg meat was explosively fresh and sweet π₯, combined with the chewy abalone, π doubling the umami, instantly waking up my appetite π€€!
After the bubble burst π«§, the flounder sashimi appeared right before my eyes. Thinly sliced πͺ flounder wrapped around delicate white shrimp π¦, paired with a touch of bamboo charcoal salt π§ and precious caviar, plus fragrant flower spike shiso, π the texture and flavor layers were incredibly rich!
The Nagasaki Kaisen oyster π¦ͺ was plump, with a super intense seawater flavor π! The chef added lemon juice π to enhance the taste, fresh and creamy, sliding smoothly down my throat, π absolutely amazing!
The salmon roe and sea urchin cup π₯° was unbelievable, bursting with soy-marinated salmon roe π combined with ultra-creamy, rich Hokkaido π―π΅ Nemuro sea urchin, plus a hint of π yuzu peel fragrance, the fresh sweetness was off the charts π‘!
The ark shell sashimi π was crisp and sweet, and the ark shell liver sauce π was incredibly rich. Eating them together, π the umami was elevated even more.
Hokkaido π¦ hairy crab meat and crab roe paired with Hokkaido π―π΅ salted sea urchin fully expressed the ocean's π essence. The delicate hairy crab meat mixed with rich crab roe π, combined with the sweet salted sea urchin, wrapped in crispy βΊοΈ seaweed, delivered an ultimate fresh flavor that hit the soul in one bite π!
Today's π― main dish was A5-grade Hokkaido Tokachi Wagyu π₯© with Domyoji rice cake. The marbling of the A5 Wagyu was insanely beautiful, π₯ the chef's control of the heat was top-notch, slightly charred outside, melting instantly in the mouth π€€, the fat aroma filled the entire mouth! Paired with the soft and glutinous π Domyoji rice cake, soaked in beef juice, it was sinful but extremely satisfying!
The sushi set of ten pieces π£ was freshly hand-pressed by the chef, with perfect rice temperature, vinegar ratio, and fish thickness! Tonight's selection included:

Highlights:
Silver cod π with black truffle sauce: The silver cod was oily, and the π black truffle sauce was intensely aromatic, a perfect match!
Shizuoka Prefecture Mt. Fuji π» white salmon: Firm texture, π fresh and elegant flavor, very high-end feeling π.
Hokkaido π― Abashiri kichiji rockfish: The king of fish, π rich in fat, lightly seared π₯, the fish oil aroma was overflowing, melting in the mouth, π a masterpiece!
Shikoku tuna π lean soy-marinated with ginger flower strips: Well-marinated, π rich tuna flavor, ginger flower strips brought freshness πΌ, perfectly balanced.
Kochi Prefecture π€© big shiro: Thick and sweet meat, with a unique fresh aroma, π sweet and rich flavor, very luscious!
The grand finale, Hokkaido's π red sea urchin hand roll: Crispy seaweed wrapped around overflowing red sea urchin π , fresh and rich as if swimming in the sea π! With a touch of sea salt π§ to enhance the flavor, perfect!
After eating so many rich flavors, π₯£ this bowl of clam clear soup came just in time! π₯ The broth was clear but full of umami, the clams were plump, βΊοΈ warming and comforting.
Today's dessert was netted melon π with Kyoho grapes π. The melon was super sweet and juicy π¦, the grapes were large and refreshingly sweet, perfectly ending this ultimate feast π.
Every dish here is a work of art π¨, and the environment is comfortable. Although the price isn't cheap π°, the quality and experience are absolutely worth it! If you want to celebrate π a special day or treat yourself, this place is definitely a top choice in π Tsim Sha Tsui. Highly recommended π―!
