Diamond Hill | A Fujian Cuisine Worth Trying

Needless to say, this is a restaurant I make sure to eat at once every month.
First, it’s close to home.
Second, the food quality is pretty good.
Recently, they’ve added a lot of new dishes.

**Teppanyaki Salt-Baked Octopus**
I’ve had this several times, and every time the quality is consistent. The octopus is salt-baked on a teppanyaki grill,
baked to absorb the flavors, with a slightly crispy and fragrant outer layer, and the meat is very tender.

**Putian Swallow Skin Wonton Soup**
A great appetizer that really whets the appetite. It already has a bit of vinegar inside.
The wonton skin is silky, the broth is light, fresh, and slightly briny—really excellent!

**Xinghua Fried Rice Noodles**
Xinghua is famous for fried rice noodles. The noodles are fried until very dry,
fragrant and smooth, paired with pork, shrimp, and more.
Simple and delicious.

**Fresh Scallops with Loofah**
After eating so much meat, you need some vegetables.
Fresh shellfish paired with loofah, very sweet and tender, the loofah is soft and easy to eat, with just a little seasoning—healthy and tasty.

**Satay Seafood Hotpot**
A dish I’ve been enjoying a lot lately.
It’s a new dish, with satay sauce as the soul of the pot,
loaded with seafood like shrimp, crab, and shellfish,
cooked into a rich seafood hotpot, mildly spicy, perfect with rice.
