Extremely Evil Cookie Ice Cream Sandwich

🇸🇬 The Ice Cream & Cookie Co., a famous ice cream shop in Singapore, has a store in Sheung Wan located diagonally opposite Kau Kee Beef Brisket. The $89 cookie ice cream sandwich lets you choose your ice cream flavor and two cookies to sandwich the ice cream, with the option for the two cookies to be different flavors. I chose pistachio ice cream, which is the richest and most flavorful pistachio ice cream I've tried in Hong Kong so far. It contains crushed pistachio nuts and intensely rich pistachio paste, with a slightly bitter nutty taste that is delicious. If you like pistachio, I recommend giving it a try. The chocolate cookie is also very rich, but I feel that the American-style soft cookie doesn’t pair well with the gelato-textured ice cream. Plus, eating a bite is really too sweet and heavy, so I ended up eating all the ice cream first and then the two cookies. The cookies get soggy from the ice cream, which makes the texture less enjoyable, so I suggest eating them separately. I also tried the pistachio cookie, which has a mild pistachio flavor and is crisper; this might be more suitable for the ice cream sandwich.
