My first visit to the Michelin-starred Lao Zheng Xing restaurant captivated me with its classic Shanghainese cuisine. The fried eel paste was bursting with aroma upon arrival, the eel shreds were smooth and tender, and the rich sauce, layered with the aroma of garlic and scallions, was irresistible. The newly introduced large wontons with preserved mustard greens and fresh pork were even more fragrant and delicious, with a savory broth and tender meat. The mapo tofu had a distinct spicy kick, and the Kung Pao chicken was crispy and chewy. Each dish showcased the exquisite mastery of ingredients and cooking time. It not only delighted my taste buds but also evoked a deep connection to Shanghainese cuisine and culture.
