Today, we ordered live geoduck. The staff took us to the aquarium to pick our preferred geoduck, each one lively and energetic. After choosing, we decided on the cooking method. For live geoduck, sashimi is the way to go! The geoduck's innards are also edible, so we followed the restaurant's recommendation to cook them into congee. When the sashimi arrived, it was presented beautifully, with two geoduck shells placed beside the dish for decoration. The sashimi itself was incredibly elastic and chewy, reminiscent of jellyfish skin and konjac. The meat was exceptionally sweet, even sweeter than scallops—truly impressive!

The geoduck congee was served next. The light congee contained only geoduck innards, ginger shreds, and a vegetable similar to celery. The flavor was refreshing, with a subtle sweetness and a hint of geoduck aroma. Unlike the rich seafood taste of crab congee, this geoduck congee offered a 'light and fresh' profile. Its mild sweetness and geoduck fragrance made it easy to enjoy a whole pot without feeling overwhelmed.
