If you visit Ehime, you definitely want to try "taimeshi" (sea bream rice).
Did you know that even within the same prefecture, Ehime, the ways of eating it are completely different?
Uwajima taimeshi is a hearty style in which fresh sea bream sashimi is dipped in a soy sauce-based sauce mixed with raw egg, then placed on top of rice.
The rich, creamy flavor is addictive.
On the other hand, Matsuyama taimeshi is an elegant style in which sea bream fillets are placed on rice, poured over with hot dashi, and eaten like ochazuke.
The aroma of the dashi broth spreads throughout the dish, creating a comforting flavor.
The restaurant we visited this time, "Motoyama Honten," serves it Uwajima-style.
Dip sea bream sashimi in a special sauce made from a mixture of sauce and egg, then place it on top of piping hot rice! The luxurious flavor is irresistible.
