Established in 1873, Atsuta Horaiken Main Branch is known as the birthplace of Hitsumabushi, a representative eel dish of Nagoya. Since its founding, the restaurant has used a secret sauce that enhances the flavor of the eel, grilling fresh eel over binchotan charcoal to achieve a perfect balance of crispy skin and tender flesh.
Special Way to Enjoy Hitsumabushi
Hitsumabushi is a unique dish that can be enjoyed in three different ways:
1. First: Savor the flavor of the eel and rice as it is.
2. Second: Add the provided condiments such as green onions and wasabi for a new taste.
3. Third: Finally, pour tea or dashi broth over it to enjoy it in an ochazuke style.
