Prelia's famous cheese topping

Let me start by saying that "cheese on top" isn't the official name...I was thinking about what to call it, so I just came up with it. Anyway, name aside, at the very back of the buffet area, you can pick as many potatoes and eggplant as you want and hand them to the staff, who will pour a generous amount of hot Hokkaido cheese over them. I'm at a loss for words, and all I can say is that it was delicious.
