Yok Keng, Surat Thani, the city of good people

This long-established restaurant in Surat Thani is always crowded. The friendly and amiable vendors explain the menu well. They offer "Long Tong" (stir-fried noodles with rice vermicelli), "Kuay Jap" (stir-fried noodles with preserved mustard greens), and "Pak Bung Tai Rao" (morning glory).

"Long Tong" is the restaurant's signature dish. It's a clear noodle soup made with white rice vermicelli and a variety of side dishes. The flavor is clean, true to its name, but a bit bland for me. I recommend adding chili and lime juice.

"Pak Bung Tai Rao" is a dry noodle dish with a thick broth and served with a red dipping sauce and fried shrimp. It's sweet and sour, but not spicy.
