Every dish strongly conveyed the quality of the ingredients and the savory aroma of the wood fire, with sauces and seasonings that were truly outstanding✨️

✔3 Amuse-bouches
All bite-sized but impactful!
The umami of crab and the acidity of grapefruit were refreshing. The biscuit had a crumbly texture, and the saltiness of the caviar was the perfect accent.
The foie gras had a melting texture and the sweetness of the apple was exquisite💕

✔Spring Highland
A refreshing and fragrant dish that reflected the spring scenery.
The smoothness of the cheese and the floral notes of rose water blended perfectly, making it feel like eating spring itself🌸
The plate was also beautiful✨️

✔Forest Morning Mist
Large scallops wrapped in shiso leaf with salmon roe, accompanied by a cold smoke effect that was beautiful and moving✨️

✔Gleanings
The sole was fluffy and tender, perfectly matching the sauce.
I enjoyed every bit with freshly baked bread☺️

✔Snow-white Land
The savory aroma and natural sweetness of the wood-fired vegetables stood out.
The cauliflower sauce and fermented butter created a snowy landscape-like visual that was also lovely✨️
A dish where vegetables like cauliflower, asparagus, and turnip took center stage.

✔Drops of Life
The berry granite was perfect as a palate cleanser💗
Breaking the matcha tuile while eating was also a wonderful touch.

✔Wabi-sabi
Nara Prefecture’s Yamato pork grilled over wood fire appeared.
The combination of mustard and fermentation powder was interesting, the fat was light, and it was surprisingly juicy✨️
The sauce made with wine was also an excellent match.

✔Nordic Winter Scenery
The white chocolate mousse frozen with liquid nitrogen looked like snow and was truly a work of art!
The rum raisin ice cream inside melted smoothly, creating the perfect balance.
I enjoyed it deliciously until the very end☺️

And every plate and dishware was simply wonderful!
The dishes and tableware were integrated, and the plating was impressively beautiful🙌
From the moment I saw it, I thought, "It's too beautiful to eat...!"💗

The scent of wood fire gently wafted from the open kitchen.
The entire space offers an atmosphere where you can feel “nature.”
It’s a wonderful restaurant recommended for dates, celebrations, or as a treat for yourself✨
